Steps:
- In two Dutch ovens, brown beef and onions in butter in batches; drain. Add the water, vegetables and seasonings; bring to a boil. Reduce heat; cover and simmer for 20 minutes. , Add tomato juice; cover and simmer 10 minutes longer or until the beef and vegetables are tender. Discard bay leaves.

HEARTY BEEF AND VEGETABLE SOUP
Steps:
- In a large stockpot, heat 1 tablespoon oil over medium heat. Brown beef in batches, adding additional oil as necessary. Remove with a slotted spoon. Add onions to drippings; cook and stir until tender. Discard drippings; return beef to pot. Stir in water, tomatoes, tomato sauce, Worcestershire sauce and bouillon. Bring to a boil. Reduce heat; simmer, covered, 45 minutes., Stir in potatoes, cabbage, carrots, celery, corn, peas, green beans, lima beans and seasonings. Return to a boil. Reduce heat; simmer, covered, 35 minutes. Stir in okra; cook 15-20 minutes longer or until beef and vegetables are tender. Discard bay leaf.

- 1. Put everything except beans, pasta and cheese into a 6-quart slow cooker and stir, making sure to break up the ground beef. 2. Cook on low 7-8 hours or high 3-4 hours. 3. 30 minutes before the end, stir in beans (drained and rinsed) and pasta. Add more salt and pepper if desired. 4. Remove bay leaves before serving. Sprinkle grated parmesan on top.

Steps:
- Heat oil in a pan. Fry the carrots and onion for 5 mins until starting to soften. Add the stock and tomatoes, then simmer for 10 mins. Add the peas and beans with 5 mins to go.
- Once veg is tender, stir in the pasta. Return to the boil and simmer for 2 mins until the pasta is just cooked. Stir in the basil, if using. Season, then serve in bowls topped with a sprinkling of Parmesan and slices of garlic bread.

Steps:
- In a 4-quart soup pan cook beef and onion, over medium heat, until beef is brown; drain.
- Stir in sauce mix from chicken broth, Hamburger Helper, basil, pepper, and garlic.
- Heat to boiling, reduce heat.
- Cover and simmer 10 minutes.
- Stir in past, peas and mushrooms.
- Cover and simmer 10 minutes.
- Sprinkle with parsley.
- Serve.

- In heavy skillet, brown meat in butter. DO this in one pound batches for better browning. Deglaze with stock between batches if necessary.
- Place all ingredients except the frozen vegetables and 4 oz of the pearl barley in 4 1/2 gallon counter top roaster.
- Heat on high covered until boiling, remove cover and reduce heat to 250°.
- Simmer for 2 hours or until beef is tender.
- Add frozen vegetables and remainder of barley and simmer for another hour.

- Preheat oven to 375. Chop green onions, using all of the white parts, and some of the green for color. In a large skillet, brown the ground beef, along with the onions and garlic, until cooked through, drain off any drippings. Add garbanzo beans, drained and rinsed, to the skillet, along with the diced tomatoes and corn, and the rest of the ingredients. Stir and cook over medium heat until simmering. Pour into a covered casserole, and cook in the oven for approximately 40 minutes.
- Serve with sour cream, shredded cheese and tortilla chips for a hearty soup. Or, mix in an additional 1 cup shredded cheese for in addition to the garnish for a flavorful appetizer dip for a crowd.
