6 slices OSCAR MAYER Bacon, cut into 1-inch-thick slices
2 lb. boneless beef chuck roast, cut into 2-inch pieces
1 lb. fresh mushrooms
1 yellow onion, chopped
4 cloves garlic, minced
1 can (14.5 oz.) fat-free reduced-sodium chicken broth
1 jar (12 oz.) HEINZ HomeStyle Savory Beef Gravy
2 bay leaves
4 carrots, chopped
1 cup frozen pearl onions
1 Tbsp. each cornstarch and water
1 Tbsp. LEA & PERRINS Worcestershire Sauce
1/4 tsp. freshly ground black pepper

Steps:

  • Heat oven to 325°F.
  • Cook and stir bacon in ovenproof Dutch oven on medium heat until crisp. Remove bacon with slotted spoon; drain on paper towels. Discard all but 2 Tbsp. drippings from pan. Reserve bacon for later use.
  • Add half the beef to reserved drippings in pan; cook 6 min. or until evenly browned, stirring occasionally. Spoon browned beef into large bowl; cover to keep warm. Repeat with remaining beef, reserving meat drippings in pan after removing second batch of browned beef from pan.
  • Add mushrooms, yellow onions and garlic to reserved drippings; cook 8 min. or until onions are softened, stirring occasionally. Add broth. Bring to boil, stirring constantly to scrape browned bits from bottom of pan. Cook and stir 2 min. Return beef to Dutch oven along with the gravy and bay leaves; stir. Bring to boil, stirring occasionally; cover. Place in oven.
  • Bake 2 hours until beef is very tender, stirring in carrots and pearl onions after 1 hour.
  • Transfer Dutch oven to stove top. Mix cornstarch and water until blended; stir into stew. Bring to boil, stirring constantly. Cook and stir 1 min. or until thickened. Add Worcestershire sauce, black pepper and reserved bacon; mix well. Cook 1 min., stirring constantly. Remove and discard bay leaves before serving.

2 tsps (10 ml) vegetable oil
1 pound (500 g) boneless beef chuck trimmed and cut into 1/2-inch (1 cm) cubes
1 medium onion chopped (250 ml)
1 can (248 ml) beef broth
1 can (398 ml) diced tomatoes undrained
8 oz (227 g) sliced mushrooms
2 medium carrots sliced (1 cup/250 ml)
1/2 cup (125 ml) water
1 tsp (5 ml) oregano leaves (club house)
1/2 tsp (2 ml) garlic powder (club house)
1/2 tsp (2 ml) organic thyme leaves (club house)
1/4 tsp (1 ml) pepper ground black (club house)
1 bay leaves (club house)
2 tsps (10 ml) cornstarch
4 tsps (20 ml) cold water
3/4 cup (175 ml) instant rice

Steps:

  • Heat oil in large saucepan or Dutch oven on medium-high heat. Add 1/2 of the meat. Brown on all sides. Remove with slotted spoon. Repeat with remaining meat and the onion.
  • Return all meat to saucepan. Stir in beef broth, tomatoes, mushrooms, carrots, 1/2 cup (125 ml) water, oregano, garlic powder, thyme, pepper and bay leaf. Bring to boil. Reduce heat to low; cover and simmer 1 hour or until meat is tender.
  • Mix cornstarch and 4 teaspoons (20 ml) cold water in small bowl. Add to saucepan along with rice. Bring to boil on medium-high heat. Reduce heat to low; cook and stir 4 minutes or until slightly thick and rice is tender. Discard bay leaf.

1 tablespoon unsalted butter
1 tablespoon olive oil
2 slices bacon, finely chopped
1 onion, peeled and chopped
2 cloves garlic, minced
1 carrot, peeled and sliced into thick coins
1 stalk celery, thickly sliced
1 teaspoon Worcestershire sauce
1 bay leaf
2 teaspoons dried thyme
1/2 teaspoon freshly ground black pepper
1/2 teaspoon salt
1/4 teaspoon cayenne pepper (you can use less, if you wish)
1/4 cup all-purpose flour
2 lbs stewing beef, in large cubes
1/2 cup red wine
2 cups chicken stock
1 1/2 cups peeled white pearl onions (optional)
1/2 lb button mushroom, cleaned and left whole
1 cup sour cream (lowfat is fine)
2 tablespoons chopped fresh flat-leaf Italian parsley

Steps:

  • In a Dutch oven over medium heat, melt butter and add oil.
  • Add bacon pieces to fat and cook, stirring often, until bacon starts to brown.
  • Add onion, garlic, carrots, celery, worcestershire, and herbs and spices.
  • Cook, stirring often, until onion is softened (it takes about 5 minutes).
  • Pat beef cubes dry with a paper towel, if necessary, then dredge in flour until cubes are evenly coated.
  • Increase heat under Dutch oven to medium-high and cook beef, adding a few pieces at a time to pan; let pieces brown before adding new ones.
  • When all beef cubes have browned, add wine to pan and cook for 1 minute, stirring and scraping up any brown bits on bottom of pan.
  • Add chicken stock and bring to a boil.
  • Reduce heat to low, partially cover pot, and let simmer for one hour.
  • Stir in pearl onions; if you don't want to be bothered peeling the pearl onions, substitute 1-1/2 cups of cubed yellow onion.
  • Continue to cook on low heat, partially covered, for another hour.
  • Remove pot lid and add mushrooms; simmer for 30 additional minutes; beef should be very tender.
  • Just before serving, remove pot from heat and stir in sour cream and parsley; return to heat to heat through; DO NOT ALLOW TO BOIL.
  • Taste, add more salt and pepper if necessary, fish out bay leaf (if you can find it) and discard, and serve.
  • I serve it with rice (personal preference) but mashed potatoes or egg noodles also work well.

½ pound beef stew meat
1 (32 ounce) carton beef stock
3 tablespoons salted butter
2 (8 ounce) packages sliced white mushrooms
2 (8 ounce) packages sliced baby bella mushrooms
6 ounces dried porcini mushrooms
1 (4 ounce) can sliced mushrooms, drained
1 small onion, chopped
2 medium carrots, grated
1 stalk celery, finely chopped, or more to taste
2 cloves garlic, pressed, or more to taste

Steps:

  • Combine beef, beef stock, and porcini mushrooms into a large saucepan and bring to a simmering boil. Leave on a low simmer until meat is tender, about 1 hour.
  • Heat butter in a large stockpot over medium-high heat and add white, bella, porcini, and canned mushrooms, onion, carrots, celery, and garlic. Saute until mushrooms shrink and onions are translucent, 5 to 7 minutes.
  • Transfer beef mixture to the stockpot. Continue to simmer for 1 hour more. Remove pieces of beef and shred with 2 forks. Return shredded beef to the stew and serve immediately.

Old-Fashioned Beef Stew with Mushrooms image

6 tablespoons grapeseed or olive oil, plus more as needed
3 pounds beef chuck, cut into 1-inch pieces
Kosher salt and freshly ground pepper
4 carrots (1 roughly chopped, 3 cut into 1/2-inch rounds)
4 stalks celery (1 roughly chopped, 3 cut into 1/2-inch pieces)
1 onion, roughly chopped
1 tablespoon tomato paste
1 cup hearty red wine, such as shiraz
2 quarts beef stock or reduced-sodium beef broth
2 sprigs thyme
1 1/4 pounds russet potatoes, peeled and cut into 1-inch chunks
1 pound mixed mushrooms (such as cremini, chanterelle, oyster and/or stemmed shiitake), sliced or quartered if large
4 tablespoons unsalted butter
1/2 cup all-purpose flour
Chopped fresh parsley, for topping

Steps:

  • Heat 2 tablespoons oil in a Dutch oven over medium-high heat. Season the beef with 2 teaspoons salt and 1 teaspoon pepper. Add to the pot in batches and cook, turning and adding more oil as needed, until browned all over, about 5 minutes. Transfer to a bowl with a slotted spoon.
  • Add 2 more tablespoons oil to the pot and reduce the heat to medium. Add the roughly chopped carrot, celery and onion and cook, occasionally stirring with a wooden spoon and scraping up the browned bits on the bottom of the pot, until the vegetables soften, about 5 minutes. Move the vegetables to one side and add the tomato paste to the empty side. Cook until it darkens around the edge, about 2 minutes; stir into the vegetables. Add the wine and bring to a boil.
  • Return the beef and any juices to the pot; add the stock. Bring to a boil, skimming any foam off the top. Add the thyme. Reduce the heat to low, cover and simmer until the beef is tender, about 2 hours.
  • Strain the beef and vegetables in a colander set over a large bowl, reserving the cooking liquid. Tent the beef mixture with foil. Let the cooking liquid stand for 5 minutes and then skim off the fat on the surface. Return the liquid to the pot. Add the remaining carrots and celery and the potatoes and bring to a simmer over high heat. Reduce the heat to medium and simmer until the vegetables are just tender, about 20 minutes.
  • Meanwhile, heat the remaining 2 tablespoons oil in a large skillet over medium-high heat. Add the mushrooms; cook, stirring occasionally, until they release their juices and brown, 10 minutes. (Pour off any extra liquid, if necessary.) Season with salt and pepper. Remove from the heat and set aside.
  • Melt the butter in a saucepan over medium-low heat. Whisk in the flour to make a roux, then let it bubble (do not brown), 2 minutes. Whisk in 2 cups of the reserved cooking liquid. Stir this sauce into the pot with the vegetables; bring to a simmer. Reduce the heat to medium low and simmer, stirring often, until thickened, 5 minutes.
  • Return the beef to the pot, discarding the roughly chopped carrot, celery, onion and thyme. Add the mushrooms and simmer until heated through, 5 minutes. Season with salt and pepper; sprinkle with parsley.

2 carrots, peeled and sliced 1/4-inch thick
3 garlic cloves, mashed
2 stalks celery, sliced
1/4 cup chopped fresh parsley
3 -4 russet potatoes, peeled and cut into 1-inch chunks
2 lbs boneless beef stew meat, any cut, trimmed and cut in 1-inch cubes
1 (14 ounce) can diced tomatoes, undrained
1 (14 1/2 ounce) can beef broth
1 (12 ounce) bottle dark beer
1/2 lb fresh spinach
1/2 lb sliced fresh mushrooms
2 teaspoons Worcestershire sauce
1 teaspoon salt
1/2 teaspoon pepper

Steps:

  • In a 6-quart or larger pressure cooker mix together onion, carrots, garlic, celery, parsley, potatoes, beef, and tomatoes with their liquid and broth.
  • Close lid and lock.
  • Place over high heat and bring to high pressure (about 15 minutes, depending upon altitude). Adjust heat to maintain high pressure and cook 20 minutes.
  • Reduce pressure with quick release method by placing cooker in sink under cold running water.
  • Remove lid after pressure dissipates, tilting lid away from you to avoid a steam burn.
  • Stir in beer, Swiss chard, mushrooms, Worcestershire sauce, salt, and pepper.
  • Return to pot and bring to a simmer, covered (no pressure) over medium heat for approx 10-15 minutes.

2 cups baby carrots
1 (10 ounce) package fresh mushrooms, sliced (I use 1 lb. (or more)
1 1/2 lbs boneless beef chuck steaks, cut into 1-inch cubes
1 (1 ounce) envelope Lipton Recipe Secrets onion soup mix
2 tablespoons Worcestershire sauce
2 (4 1/2 ounce) cans beef broth
1 (14 1/2 ounce) can tomatoes, diced and undrained
2 cups water
3/4 cup green peas, frozen
3/4 cup pearl barley, uncooked
salt and pepper

Steps:

  • In crock pot layer carrots, mushrooms, and beef.
  • Combine soup mix, broth, Worcestershire, tomatoes, water, and barley, pour over beef.
  • Cover and cook on LOW for 8 to 10 hours or on HIGH for 4 to 6 hours.
  • Stir in peas and cook, covered 5 minutes or until heated through.
  • Season if desired with salt and pepper.
  • I serve this with a crusty bread.

1 tablespoon olive oil, divided
1 lb cremini mushroom, cut in 1-inch pieces
cooking spray
2 cups onions, chopped
5 garlic cloves, minced (more or less to taste)
1/3 cup flour
2 lbs lean stewing beef, cut into 1-inch pieces
3/4 teaspoon salt, divided
1 cup dry red wine
1 tablespoon chopped fresh thyme (1/2 tsp. dried)
2 (14 ounce) cans low sodium beef broth
1 bay leaf
2 cups white potatoes, peeled, cubed in 1-inch pieces
1 1/2 cups carrots, sliced in 1-inch slices
1/2 teaspoon black pepper
fresh thyme sprig (optional)

Steps:

  • Heat 1 teaspoons olive oil in a large skillet over medium high heat. Add mushrooms, and sauté for 5 minutes or until mushrooms begin to brown. Spoon the mushrooms into a large bowl. Lightly coat the skillet with cooking spray. Add onion; sauté 10 minutes or until tender and golden brown. Add the garlic; sauté 1 minute. Add the onion mixture to the mushroom mixture.
  • Put flour in a shallow bowl or pie plate. Dredge the beef pieces in flour, shaking off excess. Heat remaining 2 teaspoons of oil in skillet over medium high heat. Add half of the beef mixture; sprinkle with 1/8 teaspoons salt. Cook 6 minutes, browning on all sides. Add browned beef to mushroom mixture. Repeat procedure with remaining beef mixture and 1/8 teaspoons salt.
  • Add 1 cup wine to pan, scraping pan to loosen browned bits. Add thyme, broth, and bay leaf. Bring to a boil. Stir in beef mixture. Cover, reduce heat to medium low, and simmer for 1 hour or until beef is just tender.
  • Stir in potatoes and carrots. Simmer, uncovered, 1 hour and 15 minutes or until beef and vegetables are really tender and sauce is thick, stirring occasionally. Stir in remaining 1/2 teaspoons salt and pepper. Discard bay leaf. Garnish with thyme sprigs, if you are using. Enjoy!
