THE HEART HEALTHIEST CHOCOLATE CHIP COOKIES

This recipe is from The Vegetarian Times magazine, I love them, this is the recipe that I found for my cookie monster husband who has cholesterol problems, and these cookies are excellent for him, no butter, no eggs and the omegas from the nuts, and of course they are delicious . Don't forget to wait until dough is cool to add the chocolate chips or they will melt.

3 tablespoons canola oil
2 cups walnuts
1 cup light brown sugar
2 teaspoons vanilla extract
1 1/2 cups oat flour
1 teaspoon baking soda
1 teaspoon salt
1/4 teaspoon ground cinnamon
2 cups rolled oats
1 1/2 cups semisweet vegan chocolate chips (I use only 3/4 cup chocolate chips, to cut calories)

Steps:

  • 1. Preheat oven to 350°F Coat 2 baking sheets with cooking spray, or line with parchment paper.
  • 2. Blend walnuts in food processor 30 seconds, or until ground into a fine meal. Add canola oil, and blend 2 to 3 minutes more, or until mixture has the consistency of natural peanut butter, scraping down sides of food processor occasionally. Transfer to bowl.
  • 3. Whisk together brown sugar and ½ cup water in small saucepan, and bring mixture to a boil. Pour brown sugar mixture over ground walnut butter, add vanilla extract, and stir until no lumps remain.
  • 4. Whisk together oat flour, baking soda, salt, and cinnamon in separate bowl. Stir oat flour mixture into walnut mixture. Cool 10 minutes. Fold in oats, then chocolate chips.
  • 5. Shape cookie dough into 2-inch balls, and place 2 inches apart on prepared baking sheets. Flatten cookies with bottom of drinking glass dipped in water. Bake 8 to 10 minutes, or until cookies begin to brown and tops look dry. Cool 3 minutes on baking sheets, then transfer to wire rack to cool completely.

6 tablespoons unsalted butter
3/4 cup packed light brown sugar
1/3 cup all-purpose flour
1/3 cup whole wheat flour
3/4 teaspoon baking soda
1 1/2 cups oats
1/2 teaspoon salt
1 lightly beaten egg
1 teaspoon vanilla extract
1 cup chopped pitted dates
3 ounces coarsely chopped bittersweet chocolate

Steps:

  • Preheat oven to 350º.
  • Melt butter in a small saucepan over low heat.
  • Remove from heat and add brown sugar.
  • Stir until smooth.
  • In a medium bowl, combine all-purpose flour, whole-wheat flour, baking soda, oats, and salt.
  • Combine the butter mixture with the dry ingredients, and add egg, vanilla, and chopped dates.
  • Fold in bittersweet chocolate.
  • Mix well and spoon mixture by tablespoon-fulls out onto lightly greased (or silicone baking mat-covered) baking sheets.
  • Bake for 12 minutes, until tops are dry to the touch.

We all have heard that Oatmeal and flax seed are good for your heart. These combine both in a chewy, yummy cookie that even your picky eater will love!

1/2 lb butter, softened
1 cup firmly packed brown sugar
1/2 cup white sugar
2 eggs
1 teaspoon vanilla
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon kosher salt
3 cups old fashioned uncooked oats
1/2 cup ground flax seeds
1 cup raisins (optional)

Steps:

  • Heat oven to 350 degrees.
  • Beat together butter and sugars until creamy.
  • Add eggs and vanilla; beat well.
  • Add flour, flax, soda, cinnamon, salt and mix well.
  • stir in oats and raisins; mix well.
  • Drop by rounded tablespoonfulls onto ungreased cookie sheet.
  • Bake 10-12 minutes or until golden brown.
  • Cool 1 minute on cookie sheet; remove to a wire rack.

Got this from a friend in Atlanta! So, so good and good for you, too! Try this...substitute dried cranberries for the dates and waluts instead of the chocolate. I did and it was awesome!

1 c dates, chopped and pitted
3 oz coarsely chopped bittersweet chocolate

Steps:

  • 1. Preheat oven to 350* Melt butter in saucepan over low heat. Remove from heat, add brown sugar, Stir until smooth.
  • 2. In a medium bowl, combine both flours, baking soda, oats, and salt.
  • 3. Combine butter mixture with dry ingredients, and add egg, vanilla, and dates. Fold in chocolate. Batter will be stiff.
  • 4. Mix well, spoon by tablespoon onto lightly greased baking sheets.
  • 5. Bake for 12 minutes or until tops are dry to touch. Makes 32 cookies.
