The BEST oatmeal pancakes! Healthy and easy oatmeal pancakes with yogurt and oat flour made right in your blender. Gluten free!

Number Of Ingredients 12

2 tablespoons canola oil (or melted, cooled unsalted butter or melted, cooled coconut oil)
3/4 cup nonfat plain Greek yogurt
1/2 cup nonfat milk
2 cups old-fashioned oats (, divided (or quick oats; do not use steel cut or instant))
2 large eggs
3 tablespoons pure maple syrup
1 teaspoon pure vanilla extract
1/2 teaspoon ground cinnamon
1 tablespoon baking powder
1/2 teaspoon kosher salt
1/2 cup mix-ins of choice: toasted chopped nuts (, chocolate chips, blueberries, or diced fresh or dried fruit (optional))
For serving: pure maple syrup (, butter, or any of your favorite pancake toppings)

Steps:

  • If you'd like to keep the pancakes warm between batches, place a rack in the center of your oven and preheat the oven to 200 degrees F.
  • Place the oil, Greek yogurt, milk, 1 1/4 cups oats, eggs, maple syrup, vanilla, cinnamon, baking powder, and salt in a blender.
  • Blend until the batter is smooth, stopping to scrape down the sides of the blender as needed. Continue blending until you don't see any remaining bits of oats.
  • Stop the blender, stirring the remaining 3/4 cup oats and any desired mix-ins. Do not blend again. Let the batter sit for 10 minutes while you heat the skillet/griddle and prep any toppings.
  • Heat a large nonstick skillet or griddle over medium-low heat. Lightly butter or oil the pan if needed (some nonstick pans do not need this).
  • Once the skillet is hot, drop the batter by 1/4 cupful into the pan. Let cook gently for 3 to 4 minutes on the first side, until the pancakes look dry at the edges and small bubbles form on top.
  • Gently flip, then cook on the other side for 1 to 2 minutes. They should look golden on both sides. If desired, transfer the pancakes to a baking sheet and keep them warm in the oven between batches. Repeat with the remaining batter.
  • Serve hot with desired toppings.

These wholesomely delicious pancakes are my very favorite. I've been making them for years since finding this keeper recipe in The Low Cholesterol Olive Oil Cookbook (Schlesinger & Ernest) 1990.

1 1/2 cups skim milk
1/4 cup canola oil
1 egg
2 egg whites
3/4 cup white flour
3/4 cup whole wheat flour
1/2 cup oatmeal
1 tablespoon baking powder
1/2 teaspoon allspice or 1/2 teaspoon cinnamon
1/4 teaspoon salt

Steps:

  • Lightly oil an electric frypan or pancake griddle with no-stick cooking spray and heat.
  • Whisk (wet ingredients) milk, oil, and eggs together; combine remaining (dry) ingredients and add them to the wet ingredients; stir to combine all.
  • Pour 1/4 cup of batter at a time onto hot griddle to form 5-6" pancakes; cook until surface of pancakes is bubbled; flip pancakes over and cook until both sides are light golden brown.
  • NOTES: The ratio of white flour to whole wheat flour can easily be varied (example: 1 cup white with 1/2 cup wheat flour) to suit your family's preference. Also, you may opt to use two whole eggs instead of fussing with egg whites. And for this recipe, your choice of either quick-cooking or regular old-fashioned oatmeal will work just fine.

1 1/2 cups old fashioned oats (original called for half oats, half oat flour)
1 cup nonfat milk (I used water) or 1 cup water (I used water)
1 teaspoon baking powder (optional(but I used it!)
4 large egg whites (I used 1/2 cup Eggbeaters)
1/2 teaspoon cinnamon (I used more)

Steps:

  • Heat milk or water until hot (if using water-I just used hot tap water). Add oats & set aside
  • Mix remaining dry ingredients & add to oatmeal mixture
  • Fold in egg whites and mix until well blended. I use my stick blender for a smoother batter; but that is optional! The batter is thick; depending on how long the oats have soaked you may want to add a little water to thin it out.
  • Cook on a nice hot griddle!
  • There are variations listed on the link provided above--you can add nuts, blueberries or protein powder! I am a "topper-" I spread natural peanut butter on top, sliced bananas & sugar free syrup!

1 cup buttermilk (1 cup milk Tbsp white vinegar)
1 tablespoon white vinegar
1 cup rolled oats
1 egg
1/8 cup oil
4 tablespoons brown sugar
1 1/2 teaspoons vanilla extract
1/2 cup flour
1 1/4 teaspoons baking powder (can substitute no sodium baking powder)
1/2 teaspoon baking soda
1/4 teaspoon salt

Steps:

  • Pour buttermilk over oats and soak 15 minutes or up to overnight.
  • Beat in egg, oil, brown sugar and vanilla.
  • Mix in dry ingredients.
  • Fry on a hot, greased griddle until bubbles form on top. Flip over and cook another minute or two until cooked through.
  • Serve smeared with butter, maple syrup or jam.

3/4 cup buttermilk
1/4 cup fat-free (skim) milk
1/4 cup fat-free cholesterol-free egg product, thawed or 2 egg whites
2 tablespoons canola or soybean oil

Steps:

  • Beat all ingredients with hand beater or whisk just until smooth. (For thinner pancakes, stir in additional 2 to 4 tablespoons milk.)
  • Spray griddle or 10-inch nonstick skillet with cooking spray; heat griddle to 375° or skillet over medium heat. (To test griddle, sprinkle with a few drops of water. If bubbles skitter around, heat is just right.)
  • For each pancake, pour 3 tablespoons batter onto hot griddle. Cook pancakes until puffed and dry around edges. Turn; cook other sides until golden brown.

1 cup whole wheat flour (I use freshly ground hard wheat)
1 cup rolled oats
1/4 cup flax seed, freshly ground (optional)
2 teaspoons cinnamon
1 tablespoon sucanat or 1 tablespoon brown sugar
1 teaspoon baking soda
2 eggs
2 -2 1/4 cups buttermilk
1/4 cup olive oil

Steps:

  • In a large bowl, combine dry ingredients.
  • Add buttermilk, eggs, and oil. Stir into dry ingredients just until blended - do not overmix.

This is what I threw together for breakfast this morning and my kids and husband loved them. If you have picky eaters just don't tell them there is squash, they will never know! Canned pumpkin puree can be substituted for the squash. I made them about 3-4 inches across and came up with 16 pancakes.

1 small banana, diced
3/4 cup squash, pureed
2 cups whole wheat flour
1/2 teaspoon nutmeg
1/4 teaspoon ginger
1 tablespoon cinnamon

1 teaspoon baking soda
1 egg
2 cups skim milk

Steps:

  • Mix all ingredients together in a medium bowl.
  • Preheat skillet to med-high heat. As long as your skillet is preheated properly you should not need to add any fat to the pan.
  • Using a small ladle, ladle mix into skillet and let cook 4-5 minutes per side, until golden brown.
  • Enjoy topped with maple syrup, or for a healthier version, you can top with warmed cinnamon applesauce.
