TEXAS BUTTERMILK SHEET CAKE-ANNETTE'S



Texas Buttermilk Sheet Cake-Annette's image

Always a family favorite. Pour you a nice big glass of milk and enjoy! Recipe is my grandma's and mama's. Picture is mine.

2 c all purpose flour
2 c sugar
1 tsp baking soda
1/4 tsp salt
1 1/2 tsp vanilla extract
1 c butter
1/3 c unsweetened cocoa
1 c water
2 eggs
1/2 c buttermilk or sour cream
CHOCOLATE FROSTING
3 1/2 c confectioners' sugar
1 c chopped pecans, optional
1/2 c butter
1/4 c unsweetened cocoa
7 Tbsp buttermilk
1 tsp vanilla extract

Steps:

  • 1. Preheat oven to 350°F. Grease a 15X10X1-inch jelly roll pan; set aside. In a large bowl, combine flour, sugar, baking soda, and salt; set aside.
  • 2. In a medium saucepan combine 1 cup butter, 1/3 cup cocoa, and 1 cup of water. Bring mixture to a boil, stirring constantly. Remove from heat. With an electric hand-held mixer on medium speed, beat chocolate mixture into the dry mixture until thoroughly blended. Add eggs, buttermilk, and vanilla. Beat for 1 minute (batter will be thin). Pour batter into the prepared pan.
  • 3. Bake in a 350° oven about 25 minutes or until a wooden pick or cake tester inserted in center comes out clean.
  • 4. Pour warm chocolate frosting over the warm cake, spreading evenly. Place cake in pan on a wire rack; cool thoroughly before cutting.
  • 5. ***Frosting***In a medium saucepan combine 1/2 cup butter or margarine, 1/4 cup unsweetened cocoa powder, and 7 tablespoons buttermilk. Bring to a boil. Remove from heat; add 3 1/2 cups sifted confectioners' sugar and 1 teaspoon vanilla. Beat until smooth. If desired, stir in 1 cup coarsely chopped pecans. Enjoy!

1/2 cup vegetable oil or 1/2 cup canola oil
1 cup water
2 eggs
2 teaspoons vanilla
1 teaspoon cinnamon (can use more if desired)
1 1/2 teaspoons baking soda
2/3 cup buttermilk
1/2 cup butter, softened
1 teaspoon vanilla
1 (8 ounce) package cream cheese, softened
2 cups sifted powdered sugar (icing)

Steps:

  • Set oven to 350 degrees F.
  • Grease a 17" x 11" baking sheet.
  • In a bowl mix together the flour and sugar.
  • In a saucepan, combine 1/2 cup butter, oil and water; bring to a boil, then pour over flour mixture; beat thoroughly.
  • Beat in eggs, vanilla, cinnamon, baking soda and buttermilk.
  • Pour into prepared baking pan.
  • Bake for about 20 minutes or until cake tests done.
  • For frosting;: Cream together 1/2 cup butter, 1 tsp vanilla and the cream cheese; beat in icing sugar, adding more, if necessary to reach the desired consistency.
  • Beat until light and fluffy.
  • Spread over warm cake.

This is from "Better Homes and Gardens Complete Book of Baking". There is another BH&G recipe posted but it is different. I haven't made that one but LOVE this one. It's very light & moist. I'd prefer it to brownies or chocolate cake any day. I very strongly recommend that you add the cinnamon. I think that is what makes it so special. This also freezes well, unfrosted. Then thaw several hours at room temperature and frost it.

1 cup water
1/3 cup unsweetened cocoa powder
2 cups all-purpose flour
2 cups granulated sugar
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon (optional)
2 eggs, slightly beaten
1/2 cup buttermilk
1 1/2 teaspoons vanilla
1/4 cup butter or 1/4 cup margarine
3 tablespoons unsweetened cocoa powder
3 tablespoons buttermilk
2 1/4 cups powdered sugar, sifted
1/2 teaspoon vanilla
1/2 cup chopped walnuts (optional)

Steps:

  • Preheat oven to 375.
  • Grease a 15x10x1 (I use a 13x9x2) baking pan and set aside.
  • In a medium saucepan combine butter, water, and cocoa powder. Bring to a boil, stirring constantly. Remove from heat.
  • In a large mixing bowl combine flour, sugar, soda, salt, and cinnamon. Add eggs, buttermilk, and vanilla. Beat with electric mixer on low to medium speed to combine. Add cocoa mixture and beat until blended.
  • Pour batter into prepared pan. Bake in a 375 oven 20 minutes or until cake springs back when lightly touched. Adjust cooking time for 13x9x2 pan.
  • Immediately pour hot chocolate frosting over warm cake; spread evenly. Completely cool cake in pan on wire rack. Cut into squares.
  • Chocolate Frosting directions:.
  • In a medium saucepan stir together butter, cocoa powder and buttermilk. Cook and stir until boiling; remove from heat. Beat in powdered sugar and vanilla with an electric mixer on low speed until blended. Stir in walnuts in desired.

  • Remove from heat and stir in confectioners' sugar and nuts.
  • Add vanilla.
  • Pour on cake as soon as it comes out of the oven.

Bake in preheated 350 degree oven for 20 to 25 minutes testing for doneness at 20 minutes. If you use a 9 x 13 it may take a little longer to cook. Frost.
  • Bring milk, butter and cocoa to a boil on top of the stove. Remove from heat and stir in sugar, vanilla and nuts. Spread over cake.
