Whole wheat banana chia muffins are light and fluffy without butter, oil, or refined sugars. These healthy muffins feature chia seeds for added nutrition and make a great breakfast or snack! Under 150 calories per muffin.

2 cups white whole wheat flour
2 tsp baking powder
1 tsp salt
1 tsp ground cinnamon
1/4 tsp baking soda
1/8 tsp ground nutmeg
2 overripe bananas
2/3 cup milk, (any variety (I used almond))
1 5.3-oz container Greek yogurt ((about 1/2 cup))
1/3 cup maple syrup
2 eggs
1/4 cup chia seeds

Steps:

  • Preheat oven to 350°F. Spray a 12-cup muffin tin with cooking spray and set aside.
  • Add flour, baking powder, salt, cinnamon, baking soda, and ground nutmeg to a bowl and whisk to combine.
  • Add bananas, milk, yogurt, maple syrup, and eggs to a separate bowl and mix until light and creamy.
  • Add dry ingredients to the bowl with the wet and mix until just combined.
  • Stir in chia seeds.
  • Divide muffin batter equally between the twelve muffin cups and bake for 18-21 minutes, or until the tops spring back when lightly pressed and a tester inserted into the tallest part of the muffin comes out clean. Let muffins cool in the tin for 10 minutes, and then remove to cool completely on a wire rack.

5 ripe bananas (mashed)
2 large eggs
1 cup cinnamon applesauce
1/4 cup pure maple syrup
3 Tablespoons olive oil
1 Tablespoon vanilla extract
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 3/4 cups whole wheat flour

Steps:

  • Preheat oven to 375 degrees F.
  • Line a muffin tin with cupcake liners or spray with nonstick cooking spray.
  • In a large bowl, mash bananas.
  • Beat together eggs and mix with bananas.
  • Add applesauce, maple syrup, olive oil and vanilla and mix until well combined.
  • Add baking powder, baking soda, salt and flour and mix until combined.
  • Fill each cupcake liner 2/3 of the way full or use a large cookie scoop to place batter in cups.
  • Bake for 20-22 minutes, or until set on the inside and golden brown on top.

These muffins are a healthy option because of the wheat flour and flax seed. The sugar could probably be reduced further, if desired, but I haven't tried to do that yet. If you don't want to use the wheat flour, just use 1 1/2 cups all-purpose flour. I add some quick oats to the topping, for presentation. Also good in a mini-muffin pan!

1/2 cup all-purpose flour
1/4 cup ground flax seeds
1 teaspoon baking soda

1/2 cup brown sugar
1 egg, beaten (vegan egg replacer works too)

1 tablespoon butter, cold, cubed
1/4 teaspoon cinnamon
2 tablespoons quick oats, uncooked (optional)
1 tablespoon ground flax seeds (optional)

Steps:

  • Preheat oven to 375 degrees. Grease muffin pan or use muffin papers.
  • Mix up the flours, flax, baking soda, baking powder, salt and cinnamon in a large bowl.
  • In a smaller bowl, mash bananas. Add sugar, egg and melted butter to bananas.
  • Add banana mixture to flour mixture and stir.
  • Divide mixture evenly into muffin cups, filling each about 3/4 full.
  • Prepare streusel topping. Sprinkle onto tops of muffins and lightly press struesel into batter (so it will stay in place as muffin rises).
  • Bake at 375 degrees for about 20 minutes. They should pass the toothpick (or knife) test.

We have a big family, so this recipe makes a lot of muffins, but it is easily halved for a smaller group. To make the muffins lower in fat, replace half of the oil with unsweetened applesauce. I also use "white whole-wheat" flour, which is softer than that made with red wheat (but has the exact same nutritional value).

1 1/2 cups whole wheat flour
1/4 cup oat bran
1/4 cup tbsps granulated sugar
2 tablespoons granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
2 large bananas, mashed (about 1 cup)
1 egg
1/4 cup low-fat milk
1/4 cup water
1 teaspoon vanilla extract
1 teaspoon lemon juice
3/4 cup cranberries
1/2 cup walnuts, chopped

Steps:

  • Preheat oven to 350 deg F/180 deg Celsius.
  • Prep a muffin tray with muffin liners or grease well, and set aside.
  • In a medium bowl, sift in the whole wheat flour. Add in oat bran, sugar, baking powder and salt. Whisk well and set aside.
  • In a large bowl, add in your bananas and mash them up if you have not already done so with your whisk or the back of a fork. Add in one egg and mix well. Add the milk, water, vanilla extract and lemon juice and beat the mixture well.
  • Add the dry ingredients to the wet, first using a whisk to incorporate the batter. Switch to a spatula or a wooden spoon and mix the batter. DO NOT OVERMIX.
  • At this point, you can fold in your add-ins. I added in cranberries and walnuts, but you could probably do any other combination of fruits/nuts.
  • Spoon the mixture into your greased/lined muffin tins. Bake in your preheated oven until a toothpick to the center comes out clean, or the tops are golden brown (but not burnt!), approximately 20 minutes.
  • Allow muffins to cool before serving.

  • Whisk the flour, oats, cinnamon, baking soda, baking powder, and salt together in a large bowl until combined. Set aside. In a medium bowl or in the bowl of your stand mixer, mash the bananas. Then whisk in the eggs, oil, maple syrup, milk, and vanilla together until combined. Pour the wet ingredients into the dry ingredients, stir a few times, then add the nuts. Fold everything together gently just until combined and no flour pockets remain.
  • Spoon the batter into liners, filling them all the way to the top. Top with oats and a light sprinkle of coconut sugar, if desired. Bake for 5 minutes at 425 then, keeping the muffins in the oven, reduce the oven temperature to 350°F (177°C). Bake for an additional 16-17 minutes or until a toothpick inserted in the center comes out clean. The total time these muffins take in the oven is about 22-23 minutes, give or take. (For mini muffins, bake 11-13 minutes at 350°F (177°C) the whole time.) Allow the muffins to cool for 5 minutes in the muffin pan, then transfer to a wire rack to continue cooling.
  • Muffins stay fresh covered at room temperature for a few days, then transfer to the fridge for up to 1 week.
