Steps:
- Cook pasta according to package directions; drain. Meanwhile, in a Dutch oven, heat oil over medium-high heat. Add celery, onions, broccoli and carrots; cook and stir 10-12 minutes or until onions are tender. Add garlic, parsley, tarragon and seasonings; cook 1 minute longer., Add mushrooms and peas; cook and stir 3-5 minutes or until mushrooms are tender. Stir in turkey, broth, soup, yogurt, cream cheese and Worcestershire sauce. Bring to a boil. Reduce heat; simmer, uncovered, 10-15 minutes or until slightly thickened, stirring occasionally. Add pasta; toss to combine and heat through. Freeze option: Freeze cooled pasta mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little broth or milk if necessary.

ONE-POT PASTA WITH GROUND TURKEY AND SPINACH

Steps:
- Heat the oil in a large, high-sided skillet or Dutch oven over medium high heat until it shimmers and then add the ground turkey with 1 teaspoon kosher salt, 1 teaspoon 1 teaspoon ground cumin, the oregano, 1/2 teaspoon black pepper and the crushed red pepper. Break up the turkey with the spices and cook for about 5 minutes.
- Add the onion, red bell pepper, and pressed garlic and cook for another 5 minutes or until the turkey is browned and the veggies soften.
- Add the canned tomatoes with green chiles to the skillet or pot with the rest of the kosher salt, cumin, black pepper, chili powder and stir.
- Add the penne pasta and cover with the chicken broth, bring to a boil, turn down to a simmer, cover and cook until the pasta is just tender, about 8 minutes, stirring occasionally.
- Stir in the cream and fold in the spinach and cook until the spinach wilts, taste for seasoning and top with the shredded cheese.
- Garnish with the chopped cilantro, sit back and watch the forks fly!

Steps:
- In a large skillet, brown turkey.
- Add celery, carrots, garlic & oil; cook until tender.
- Remove turkey and vegetables, keep warm.
- Add broth to the pan; bring to a boil.
- Add pasta; cook 10min or until tender.
- Reduce heat; stir in vinegar, sugar, paprika, cumin, oregano, onion and turkey mixture.
- Simmer 10min or until heated through.

- Drizzle the oil in a 5 QT Dutch oven or large pot and bring to medium heat. Add the turkey to the hot oil and cook, breaking up with a wooden spoon, until broken into bite-sized pieces and mostly browned. Add the onion, carrot, zucchini and garlic and stir to combine. Cook for another 4-5 minutes, stirring occasionally, until the veggies are softened.
- Add the broth, tomato sauce, pasta sauce, Italian seasoning and basil and stir to combine. Add the broken spaghetti pieces and stir until pasta is covered. Increase the heat to med-high and bring the mixture to a boil. When the mixture is boiling, reduce the heat to medium-low and simmer for 10-12 minutes, stirring occasionally, until the pasta is cooked and the sauce has thickened.
- Remove from heat and allow to sit for 5 minutes to allow sauce to thicken further before serving.
