HEALTHY SWEET POTATO DANGO (SWEET RICE BALLS)



Healthy Sweet Potato Dango (Sweet Rice Balls) image

Number Of Ingredients 3

7 oz (200 g) cooked sweet potatoes (use white or Asian sweet potatoes for best results)
2/3 cup (80 g) tapioca, potato or arrowroot starch
food coloring or powders, such as matcha (optional)

Steps:

  • Peel the cooked sweet potatoes while still warm and mash until no chunks remain.
  • In a bowl, knead mashed sweet potatoes and the tapioca starch together until smooth and pliable, and no longer sticky.* Add food coloring or flavoring powders such as matcha, turmeric, cinnamon powder, etc.
  • Roll the sweet potato dough into Tablespoon sized balls
  • Meanwhile, boil a quart or two of water in a large pot. Also, get a ice bath ready (such as a bowl of ice water)
  • Carefully drop the dango balls into the boiling water. If using a smaller pot, work in batches.
  • Once the dango balls are done cooking they'll float towards the top. Once all of the dango balls are floating, use a sieve or tea strainer to pull them out of the water
  • Let the dango cool fully (about 5 minutes) in the ice water.
  • Remove from the ice water and serve with honey. You can also skewer them in long wooden toothpicks.

3 lbs sweet potatoes, cooked and drained
2 tablespoons butter
1/2 teaspoon salt
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1 whole egg
1/2 cup miniature marshmallow
1/2 cup gingersnap crumbs

Steps:

  • Mash the sweet potatoes while they are still hot and add the butter, salt and spices.
  • Add the egg and continue to whip until thoroughly combined.
  • Chill until firm and then form into golf ball sized piece, stuffing 2 to 3 marshmallows in center of each ball.
  • Roll in the ginger snap crumbs and place on a non-stick or lightly greased baking sheet.
  • Bake at 400°F for 10 to 15 minutes.

A delicious main course that is full of flavor, but minus the cheese, egg and frying pan! It is a bit messy to make, but you can make ahead and freeze. Sweet potato is enhanced with cashews and nutritional yeast to make a super savory (almost cheesy) flavor. Then it's wrapped in risotto and rolled in bread crumbs before baking. Yum!

1/2 cup raw cashews
1 tablespoon nutritional yeast
1 tablespoon Braggs liquid aminos or 1 tablespoon soy sauce
1 teaspoon olive oil
1 teaspoon onion powder
1/2 teaspoon garlic powder
1 large sweet potato (12-16 oz)
1/4 chopped onion
2 garlic cloves
2 cups arborio rice (dry)
1 cup white wine
6 cups vegetable broth
1 cup seasoned bread crumbs

Steps:

  • Filling:.
  • Peel, chop and cook sweet potato in microwave until soft. About 6 minutes. Mash until creamy.
  • Meanwhile, combine all other filling ingredients in a food processor until smooth.
  • Stir together well.
  • Using your hands, form into 24 1-inch sized balls and place on cookie sheet lined with parchment paper.
  • Place in freezer to cool to make them easier to handle.
  • Risotto:.
  • Saute onion in large saucepan until tender. Add garlic.
  • Add the dry rice and stir constantly for 2 minutes.
  • Add the white wine stir until absorbed.
  • Add the broth 1/2 cup at a time. Waiting until fully absorbed between each addition. The entire process takes about 15-20 minutes. Season as desired.
  • Assembly:.
  • Take a frozen filling ball and wrap the risotto around it by rolling in your hands. Then roll in breadcrumbs and place on parchment lined cookie sheet.
  • Can be frozen at this point.
  • Otherwise spritz with olive oil and bake at 400F for about 30 minutes.
  • Serve with marinara sauce.

Dango, my favorite Anime food... Sailor Moon, Clannad, they all have it. I looked around the net and aggregated all the best bits i had tried into this recipe. A lot of it is similar to http://www.recipezaar.com/120390 , but i think this is better from experience. Dango are great for a party at your house, or bringing to peoples houses as a thoughtful gift, but i find they taste all the sweeter when you devour them yourself just after cooking :D Try to get Mochiko, it's the best! Alternatives for Katakuriko are listed in order of preference after it in the ingredients section. All of the ingredients are available at an Asian food store.

1 1/3 cups mochiko sweet rice flour
3/4 cup warm water
potato starch or cornstarch
3/4-1 cup water
1/2 cup sugar
2 tablespoons soy sauce
1 1/2 tablespoons katakuriko
1 1/2 tablespoons water

Steps:

  • Combine the Mochiko slowly and gradually with the water in the mixing bowl, trying to get a solid-but-squishy dough.
  • Knead the dough well.
  • Make small round dumplings (or Dango) with the dough, roughly 1 inch in diameter at the most.
  • Steam the dango for 10-15 mins in the steamer on medium or high heat, depending on your steamer.
  • When they are done (brownled slightly) take them off and let the cool on a wire rack.
  • Mix the sugar, water (Larger mesurement) and soysauce in the small pan over a medium heat.
  • Combine the Katakuriko with the small tablespoon and a half of water.
  • When the sauce starts to boil, add the mixture in the cup to it, mix and remove from heat.
  • Grill the dango slightly and add the sauce to taste.
  • YUM! Anime-licous!
