SWEET POTATO OAT BARS



Sweet Potato Oat Bars image

These sweet potato bars made with oats are the perfect healthy snack. Add your favorite mix-ins like dried fruit, nuts or even chocolate chips.

1 cup cooked sweet potato (about 200g)
1 egg
3/4 cup unsweetened almond milk (or milk of choice)
2 tablespoons maple syrup
1 1/2 teaspoons vanilla extract
1 cup oat flour (*see note)
1/4 cup coconut flour
2 scoops/1 serving whey protein powder (**see note)
1 teaspoon baking soda
2 tablespoons flax seed
1 teaspoon cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
optional add-ins: 1/4 cup dried cranberries/any dried chopped fruit, chopped nuts, coconut flakes, chocolate chips

Steps:

  • Preheat oven to 375°F and line an 8x8 baking dish with parchment paper.
  • Add all the ingredients in the order listed (except any add-ins you're using) to a food processor.
  • Process until smooth, scraping down the sides as needed.
  • Add any add-ins you're using to the mixture and stir in by hand with a spatula until combined.
  • Pour the mixture into the baking dish making sure to spread evenly into the corners and smooth out the top.
  • Bake for about 22-25 minutes until center is set.
  • Remove from the oven. Using the overhang of the parchment paper, lift the bake out of the dish and place on a cooling rack. Let rest until completely cooled.
  • Cut into 12 even sized bars.

You will not miss the sugar and fat I took out of this dessert bar. It would also work well with carrots or pumpkin. I like to cook the sweet potatoes in the microwave ahead of time for easy peeling later.

3 cups sweet potatoes (4-5 whole)
1 cup whole wheat flour
1 cup oatmeal
1/4 cup sugar
1/2 teaspoon cinnamon
1/2 cup oil
2 egg yolks
1/2 teaspoon vanilla
1 cup sugar
1/4 cup molasses
1 tablespoon pumpkin pie spice
2/3 cup low-fat milk
2 egg whites
2 eggs

Steps:

  • Put sweet potatoes in a microwave safe dish and add some water to the bottom. Cover with saran wrap.
  • Microwave on high for about 7 minutes or until knife inserts easily. Let cool.
  • Preheat oven to 350 degrees.
  • Put dry ingredients in food processor and pulse until oatmeal is ground.
  • Combine dry ingredients in a medium bowl with egg whites and oil.
  • Press into greased 13x9 pan. (I like to line it with foil and then grease it for easy cleanup).
  • Bake for 10 minutes.
  • Peel sweet potatoes and put in large bowl. Add remaining ingredients and mix with a hand blender until smooth.
  • Pour over crust.
  • Bake for 45 minutes or until set.
  • Cool before cutting.
  • Store in refrigerator.

1 1/2 lbs medium sweet potatoes
1 tablespoon vegetable oil
3/4 cup firmly packed light brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon freshly grated nutmeg
1 pinch salt
1 teaspoon pure vanilla extract
3 large eggs
3 cups milk
2 1/2 cups graham cracker crumbs
2 cups pecan pieces
3/4 cup unsalted butter, melted
8 ounces semisweet chocolate morsels

Steps:

  • Preheat the oven to 375°F.
  • Rub the sweet potatoes with the vegetable oil and place on a baking sheet lined with parchment paper. Bake until fork-tender, 1 to 1 1/2 hours. Remove from the oven and let cool, then peel and mash in a large bowl.
  • Add to the mashed potatoes the brown sugar, cinnamon, nutmeg, salt, vanilla, eggs, and 2 1/2 cups of the milk and mix well. Set aside.
  • Lower the oven temperature to 350 degrees F.
  • Combine the graham cracker crumbs and pecan pieces in a food processor and process for about 1 minute, to make a fine meal. With the motor running, gradually pour the melted butter through the feed tube and process for 1 minute. Transfer the crumb mixture to a 13 X 18-inch baking pan and, using your fingers, firmly press the crumbs evenly onto the bottom and up the sides of the pan.
  • Pour the sweet potato mixture into the crust and spread evenly with a rubber spatula.
  • Put the chocolate morsels and the remaining 1/2 cup milk in a medium-size saucepan over medium heat and stir constantly until the chocolate melts and the mixture is smooth. Spoon the chocolate in three rows, about 2 inches apart, lengthwise over the sweet potato mixture. Then, with a knife, make a zigzag pattern to marbleize the chocolate and the sweet potato mixture.
  • Bake until the edges are browned and the filling is set, 20 to 25 minutes. Remove from the oven and let cool completely. To serve, cut into bars.

1/4 cup sunflower seeds
1/4 cup almonds or 1/4 cup pecans

1/2 cup butter
3 tablespoons honey

Steps:

  • Toast the nuts and seeds in a 350°F oven. The sunflower seeds will toast in about 3 -5 minutes and the almonds in about 8 to 10 minutes.
  • In a food processor or blender, grind the almonds or pecans until finely minced.
  • Melt butter and honey together; add vanilla extract.
  • Combine all ingredients and mix well.
  • Press firmly and evenly into bottom and sides of a 9 or 10 inch pie pan.
  • Bake 10 to 12 minutes until barely golden brown.

These bars have a gooey, cheese cake-like top layer and a buttery cookie bottom layer. I adapted the recipe from one that called for pumpkin. I made these for Thanksgiving and they were gone before the meal was even served. We enjoyed them warm from the oven, topped with a dollop of whipped cream, heaven! We'll be haveing these every year from now on.

1 (18 ounce) box yellow cake mix
8 tablespoons of melted butter
1 egg
2 1/2 cups peeled mashed sweet potato
8 ounces cream cheese, softened
4 tablespoons of softened butter
2 cups confectioners' sugar
2 teaspoons vanilla extract
2 teaspoons ground cinnamon
1 teaspoon pumpkin pie spice
3 eggs

Steps:

  • Preheat the oven to 350 degrees.
  • Mix melted butter, cake mix and the egg with a mixer.
  • Spread into a greased 13x9 baking dish and pack it down to form an even crust layer. Set it aside.
  • Cream together the sweet potato, cream cheese and butter with an electric mixer until smooth.
  • Add the vanilla, sugar and spices and continue blending.
  • Beat the eggs, add to the mixture and blend until fully incoptorated.
  • Spread the sweet potato mixture evenly over the cookie layer.
  • Bake for 50-60 minutes until the center is set but still soft.
  • Cool and cut into squares.

  • Filling.
  • In a small bowl combine flour, spices, and brown sugar. Place apple slices in a large bowl. sprinkle flour mixture over the apples; toss until well mixed.
  • Transfer filling to unbaked pie crust, sprinkle the reserved crust mix over the top and pat into place. Bake in center of oven tor about 50 minutess or until apples are soft and crust is golden.
