HEALTHY BLUEBERRY PIE JARS MADE WITH STEVIA

Healthy Blueberry Pie Jars Made with Stevia image

Berry desserts made with stevia, as pies, tarts, cobblers

Provided by Angela Roberts

Categories     Dessert

Time 45m

Number Of Ingredients 7

6 wide mouth half pint jars or 6 ramekins
1 12 ounce bag frozen berries (or fresh)
handful strawberries (optional)
1/4 cup stevia in the raw
1/8 teaspoon cinnamon
1 tablespoon tapioca or cornstarch (optional)
1/4 recipe pie crust (skip the sugar)

Steps:

  • Marinate berries for at least one hour in stevia and cinnamon.
  • Roll out pie crust, cut out to your liking and refrigerate.
  • Before baking add in tapioca for thickening
  • You could put a bottom crust in, but I recommend not doing that. Fill berries in jars leaving one inch at least at the top.
  • Bake for 20-25 minutes at 400 degrees.

BLACKBERRY COBBLER

Blackberry Cobbler image

While berry cobbler is often thought of as a summer-only dessert, frozen berries can also be used so this is easy to pull off anytime of the year. Eliminating sugar makes this antioxidant-packed dessert practically guilt-free.

Provided by Splenda

Categories     Splenda® Stevia Sweetener

Time 1h5m

Number Of Ingredients 12

4 cups fresh blackberries
½ teaspoon ground ginger
½ cup Splenda® Stevia Sweetener Jar plus 1 tablespoon, divided
¼ cup water
Juice of ½ lime
1 ⅓ cups all-purpose flour
2½ teaspoons baking powder
Pinch of salt
¼ cup canola oil
¼ cup plain nonfat Greek yogurt
1 teaspoon vanilla extract
1¼ cups fat free skim milk

Steps:

  • Preheat oven to 350°F. Spray a 9" x 13" baking pan with cooking spray.
  • In a bowl, gently toss berries with ginger, 4 tablespoons of Splenda Stevia Sweetener, , water, and lime juice. Let berries sit for at least 15 minutes for juices to accumulate.
  • In another bowl, 5 tablespoons of sweetener, flour, baking powder, and salt.
  • In a large bowl combine canola oil, yogurt, vanilla extract, and milk. Add the dry ingredients; stir just until batter comes together (do not overmix).
  • Pour batter into the baking pan, using a spatula to spread batter as best you can (it's OK if it doesn't completely fill the pan). Top with the berries and juice.
  • Bake until a toothpick inserted in the center of the cobbler comes out clean, about 50 minutes. Serve warm.

  • Preheat the oven to 400F and place your coconut butter in the fridge to chill if you have not done so already. Add the berries, lemon juice, coconut sugar, vanilla, and 2 tablespoons of water to a 8” (23-cm) oven-safe skillet (I used cast iron) and bring to a simmer over medium high heat. Simmer the berries for 10 minutes, stirring occasionally, then turn the heat off. Add additional coconut sugar to taste, if necessary.
  • While the berries cook, prepare the cobbler topping. Add the oats, coconut sugar, baking powder, salt, and cinnamon to a medium bowl and whisk together. Add the chilled coconut butter (or oil) to the bowl and use two knives to “cut” it into the dough, until fine “crumbs” of butter are evenly distributed throughout. Add the milk to the bowl and stir until just combined. Allow the batter to sit for at least 5 minutes, to allow the oat flour to absorb some liquid and thicken.
  • Use a large spoon to dollop 2 to 3 sized tablespoons of the cobbler batter onto the berries. Place the skillet into the middle rack of the oven and bake for 23 to 25 minutes, until the top of the cobbler turns golden brown.
  • Remove from the oven and allow to cool slightly before serving as desired. Leftovers will keep at room temperature for up to 3 days.
