HEALTHY CHOCOLATE PUDDING
This creamy healthy chocolate pudding recipe is surprisingly easy to make at home!

- Healthy Chocolate Pudding Recipe: Heat the 2 cups milk of choice in a saucepan with the salt, cocoa powder, and sweetener. Meanwhile, whisk the cornstarch and 1/2 cup milk in a small bowl until dissolved. When the 2 cups milk are warm, add the cornstarch mixture and bring to a boil. Once boiling, stir constantly for 2 minutes. Lower to a simmer for an additional minute, then turn off the heat. Once the heat is off, stir in the vanilla and broken-up chocolate pieces until the chocolate melts. Transfer the pudding to the refrigerator to thicken. It gets thicker the longer it sits and will be ready to consume after a few hours or overnight. *Note: I've not tried arrowroot and have only tried this recipe with Dutch cocoa powder so can't vouch for the taste if regular unsweetened cocoa powder is used in its place. CHOCOLATE FUDGE PUDDING
This was a recipe we were taught at primary school in New Zealand and it has served me well for over 20 years. I used to make this in a small enamel dish if it was just for the 3 of us. For the whole family I used to double the recipe and use a decent sized dish.

Steps:
- Sift the flour, cocoa and baking powder into a bowl and then add the sugar and nuts.
- Melt the butter in another pan or bowl then add milk and vanilla.
- Stir the wet ingredients into the dry ingredients.
- Spread into a small pudding dish.
- Sprinkle the sauce ingredients[brown sugar and cocoa] over the top and carefully pour the boiling water over the top of everything.
- Bake at 180 deg C for 45 minutes.

- Mix sugar, cocoa and cornstarch, whisk in milk until smooth.
- Whisk over medium to medium-high heat and bring to a boil. Boil for 2 minutes.

- In medium saucepan place sugar, cocoa powder and cornstarch over medium-high heat.
- Add in milk gradually, while stirring constantly until the pudding starts to thicken up (apprx 5 min).
- Lower heat to medium-low and add chocolate and stir until it is melted and mixed in well.
- Continue heating for another 5 minutes and then remove from heat and cool for another 5 minutes.
- Then add vanilla in and put into bowls.
- Eat now, or put into fridge until ready to eat.

- Chop the chocolate into small pieces.
- Combine chocolate, 2 cups milk, cream, sugar/splenda, instant espresso granules, cocoa, and salt in a large saucepan.
- Stir vigourously using a whisk over medium heat and it is smooth and thick.
- Stir the remailning milk and cornstarch together and whisk into the chocolate mixture.
- Simmer for a minute whisking and scraping down the sides with a spatula until thick.
- Add the butter and vanilla and cook one more minute.
- Take it off the heat and chill in the fridge for a minimum of 3 hours until set firm.
- Use plastic wrap pressed onto surface of the pudding to avoid forming a skin.

- Lightly beat egg whites in a small bowl.
- In a large bowl, mix together cocoa and cornstarch.
- Add 3/4 cups of the milk and whisk mixture until it's smooth.
- In a large saucepan, mix together the rest of the milk, the Splenda and the salt.
- Bring to a boil over high heat, whisking continuously.
- Remove from heat.
- Whisk the cocoa mixture into the milk mixture.
- Bring to a boil over medium-high heat.
- Boil for 2 minutes while whisking continuously.
- Remove from heat.
- Slowly whisk 1 cup of the hot cocoa mixture into the egg whites.
- Pour this mixture back into the pan and cook over medium-high heat, whisking continuously.
- and being careful not to allow the mixture to boil.
- Remove from heat.
- Add vanilla.
- Mix well.
- Pour into 4 serving dishes.
- Cool to room temperature.
- Cover with waxed paper that has been cut to fit the serving dishes (this prevents the pudding from getting a skin).
- Refrigerate for 1 hour.
- Garnish with berries, mint leaves and cocoa.

Steps:
- Mix First 5 Ingredients in large bowl.
- Add skim milk, apple sauce, vanilla and mix till it looks like a nice thick cake batter Pour into 8x8 shallow casserole dish.
- Dissolve cocoa& brown sugar into water, stir.
- Pour Evenly over batter.
- Microwave on HIGH for 5 minutes.
- Evaluate if need more cooking, I do 2 minutes more on MEDIUM-HIGH.
- It should still be wet on surface, let it rest before eating.
- The more water you add, the saucier it will be.
