Ranch Chicken Salad image

This light and easy chicken salad recipe made with leftover rotisserie chicken breast meat and my homemade ranch dressing. Great for lunch and meal prep!

1/2 cup 1% buttermilk
3 tablespoons mayonnaise
2 tablespoon fresh finely chopped chives
1/2 teaspoon kosher salt
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon dried parsley
1/4 teaspoon dried basil
fresh black pepper (to taste)
2 cups shredded boneless chicken breast (from rotisserie chicken or leftover)

Steps:

  • In a medium bowl combine the buttermilk, mayo, chives, salt, garlic powder, onion powder, parsley, basil and black pepper and mix.
  • Add the shredded chicken and mix well. Refrigerate until ready to eat.

1 whole wheat tortilla (6 inch), cut in half, then into 1/4-inch-wide strips
1/4 cup KRAFT Lite Ranch Dressing
dash ground cumin
1 pkg. (10 oz.) salad greens
1 pkg. (6 oz.) OSCAR MAYER CARVING BOARD Southwestern Seasoned Chicken Breast Strips
1/2 cup chopped tomato es
1/4 cup KRAFT Mexican Style 2% Milk Finely Shredded Four Cheese

Steps:

  • Place tortilla strips on microwaveable plate sprayed with cooking spray. Microwave on HIGH 1 min. Meanwhile, mix dressing and cumin.
  • Toss greens with chicken, tomatoes, cheese and dressing mixture in large bowl; top with tortilla strips.

1 red, yellow or green pepper, cut into strips
1 cup cherry tomatoes

Steps:

  • Toss chicken with 1/4 cup of the dressing; coat with grated topping.
  • Spray large skillet with cooking spray. Add chicken; cook and stir on medium heat 10 minutes or until cooked through.
  • Toss chicken and remaining ingredients lightly with remaining dressing.
