CALF'S LIVER WITH BACON, CARAMELIZED ONIONS AND SHERRY
Steps:
- In a large glass baking dish, add liver and milk and let soak for 20 minutes.
- In a large skillet over medium heat, add bacon and butter and cook until fat has rendered, about 6 minutes. Transfer bacon to paper towels to drain and reserve 3 tablespoons fat in skillet. Reserve remaining fat.
- Cook onions with salt and pepper, to taste, in bacon fat in skillet over moderate heat for 10 minutes or until caramelized. Transfer onions to a bowl and add bacon. Set aside.
- Pat liver dry and discard milk. In a large zip-top bag, add flour, Essence, salt and pepper. Working in batches, add liver and shake to coat. Set aside on baking sheet until ready to cook.
- Add 2 tablespoons reserved bacon fat to skillet over high heat and add liver; cook for 2 to 3 minutes on each side. Turn liver over, remove pan from heat, add sherry and beef broth, return pan to heat and shake and flambe. Cook on second side for about 2 minutes or until cooked through. Serve liver with pan sauce, topped with onions and bacon.

CALVES LIVER WITH BACON, SAUTEED ONIONS, AND MUSTARD SAUCE
Steps:
- Fry bacon until crisp. Drain on paper towels and reserve.
- Melt 4 tablespoons butter in a medium skillet over moderate heat. Cook shallots with salt until soft and nearly golden, about 3 minutes. Add cooked bacon, stirring briefly to rewarm. Add vinegar, turn the heat to high and reduce by half. Add stock and reduce again by half. Break remaining butter into small pieces and whisk into sauce until smooth. Whisk in mustard and remove from heat.
- Preheat grill or a dry skillet. Season liver with salt and pepper. Grill or saute in melted butter over high heat, about 3 minutes per side.
- Arrange liver over a bed of Sauteed Onions on individual serving plates and spoon on sauce. Serve immediately.
- Melt butter in a large skillet over high heat. Reduce heat. Saute onions with salt, stirring occasionally, until golden brown, about 15 minutes.
CALVES LIVER AND ONIONS
I think this dish has an undeserved reputation. When it's cooked up nice and crisp it's really wonderful. I had kids eating this like crazy, because I didn't tell them what it was!

Steps:
- Cut liver in small serving size pieces.
- Salt and pepper pieces.
- In a 12 inch skillet heat vegetable oil.
- Make sure it is good and hot (I use medium high).
- Lightly roll pieces in flour.
- Saute in hot oil till brown on one side, turn and brown the other side.
- About 4 minutes per side.
- Remove from skillet and keep warm.
- Add onions to skillet and fry about 5 minutes till crisp tender.
- Put onions over liver and serve.
SAUTEED CALF'S LIVER

- Place liver in a nonreactive (ceramic or glass) bowl and pour milk over. Refrigerate, covered, 5 to 6 hours.
- In a large skillet, heat 2 tablespoons butter over medium-high heat. When butter is shimmering, add onions. Cook, stirring occasionally, until softened and translucent, 5 to 10 minutes. Reduce heat to medium-low and continue to cook, stirring more frequently until onions are very soft and brown, 30 to 40 minutes more.
- Drain liver and discard milk. Pat liver dry with paper towels.
- Spread flour on a plate and season with salt and pepper. Thoroughly coat liver with the flour mixture, shaking off excess.
- Heat a large (13-inch) saute pan over medium heat and add remaining 2 tablespoons butter and the oil and heat until shimmering. Cook (in batches, if necessary, to avoid crowding pan) until liver is firm (but not hard) and browned on the outside but still slightly pink in the center, 1 to 2 minutes per side. Repeat with remaining liver, adding more oil to the pan as necessary. Add sage and cook for 1 minute more.
- Divide liver among plates and top with onions.
CALF LIVER AND ONIONS WITH BACON
Two or three spashes of red wine vinegar give a fresh kick to this old standby. Cooking with bacon also "lightens" the liver taste. When my children were small, I called this "Cowboy Steak." It was inspiration born of desperation. They ate it with enthusiasm.

- Cook bacon in large skillet. Set cooked bacon aside, leaving as much grease as possible in skillet.
- Tear bacon in bite sized pieces.
- Cook sliced onions in grease, with a little salt and pepper, for about 15 minutes, or until limp.
- Remove onions, set aside, leaving as much grease as possible in skillet.
- Lightly salt and pepper liver slices (I cut long slices in half) and dredge heavily in flour.
- Place liver in hot grease, cooking until brown on both sides, over medium heat.
- When liver is browned, add onions, bacon pieces, and 2-3 splashes red wine vinegar.
- Salt and pepper to taste (remember, you have already used some, so go easy until you can taste it).
- Add enough water to make a gravy, barely covering the meat. Stir water to combine with other ingredients evenly.
- Cover, cook on low for 15-20 minutes. It should look like you have gravy.

SHITAKE MUSHROOMS & CALVES LIVER TAGLIERINI
A quick mid-week meal that is must for anyone keen to experiment with Italian food. Shitake mushrooms, calves liver and taglierini recipe by What Dad Cooked.

Steps:
- Put a large pan of water on for the pasta. Add a large pinch of salt, and heat to a boil whilst making the sauce.
- Clean the celery, peel it and chop finely. Chop the onion and garlic finely. Slice the mushrooms thinly.
- Remove any sinews and connective tissue from the liver and slice the liver into thin strips. Slice the spec, if using, into thin short strips.
- Add 25g butter and a tsp of olive oil to a large sauté pan and sweat the onion, celery and garlic on a medium heat for 15 minutes until the onions are starting to turn transparent and golden. Add the mushrooms and continue to cook until the mushrooms let off their moisture and begin to fry - about 8 minutes. Add the chicken stock, bay leaf, half the tarragon and parsley and bring back to a boil, simmer for a few minutes to reduce slightly. Set aside and keep warm.
- Put the pasta into boiling water and cook according to instructions or until al dente.
- In a separate pan, fry the speck and calves liver in a little butter on a relatively high heat. They do not take long to cook, but do not move them about - spread evenly on the pan and let them get a little colour on one side. Quickly stir in the vinegar and let it cook to reduce slightly. When the liver is just done, add to the mushroom pan and stir in the Crème fraîche, heating gently.
- Drain the pasta - reserving a cup of pasta water - and add to the sauce. Shake and toss the pan to combine and mix the pasta with the sauce. Let this rest for a minute or two to meld flavours and for the pasta to absorb the sauce. Add pasta water to thin if needed.
- Serve, with green vegetables and carrots or spinach.
SLICED CALF'S LIVER WITH GOLDEN ONIONS
Steps:
- Rinse liver to remove any traces of blood and discard membrane and any tough veins. Cut crosswise into 1/8-inch-thick slices.
- Cook onions in 2 tablespoons butter in a 12-inch heavy skillet over moderate heat, stirring, 1 minute. Cover skillet and continue to cook, stirring occasionally, until softened and golden brown, about 10 minutes. Transfer to a bowl and keep warm, covered.
- Pat half of liver slices dry and toss with salt and pepper to taste. Heat 1 tablespoon butter in skillet over moderately high heat until foam subsides, then sauté seasoned liver, shaking skillet and turning liver, until browned on both sides but still pink inside, about 2 minutes. Put cooked liver on top of onions and cover.
- Add water to skillet and deglaze, scraping up brown bits and boiling until liquid is slightly reduced. Pour sauce over cooked liver and wipe skillet clean. Sauté remaining liver as above, then add rest of liver with onions and parsley, tossing briefly.
CALF'S LIVER WITH SCALLIONS SHERRY, AND PANCETTA

- Soak liver in milk 15 minutes.
- Cook pancetta in 1 teaspoon oil in a 12-inch nonstick skillet over medium heat, stirring occasionally, until crisp, 2 to 3 minutes. Transfer with a slotted spoon to paper towels to drain, leaving fat in skillet.
- Discard milk and pat liver dry. Stir together flour, 1/2 teaspoon salt, and 1/4 teaspoon pepper on a piece of wax paper or a plate and dredge liver in mixture, knocking off excess.
- Add remaining 2 teaspoons oil to fat in skillet and heat over medium-high heat until hot. Cook liver, turning once, until browned but still pink in center, about 4 minutes total. Transfer to plates.
- Melt 1 tablespoon butter in skillet over medium-high heat, then sauté scallions until softened, about 1 minute. Add Sherry, water, 1/2 teaspoon salt, and 1/8 teaspoon pepper and boil until reduced slightly, about 1 minute. Remove from heat and stir in remaining tablespoon butter until incorporated. Spoon over liver and sprinkle with pancetta.

- In a large skillet heat oil over medium high heat. Add onion and saute until translucent. Add thyme, basil, parsley and season with salt and pepper to taste. Add sherry, reduce heat to medium low and let all simmer.
- Meanwhile, cut liver into small pieces, about the size of large sugar lumps, and add liver pieces to skillet mixture. Cook all together, shaking skillet well, for 6 to 7 minutes. Add more sherry if mixture gets dry. Garnish with fresh chopped parsley and fried croutons and serve.
- To make croutons, drizzle olive oil over cubes of bread, toss to coat all sides. Cook croutons in a heavy skillet over medium heat until golden brown.
