Steps:

  • Preheat oven to 350 and butter a 9x9 baking dish.
  • Layer peaches on the bottom of the dish.
  • Mix the rest of the ingredients in a bowl, forming a crumble topping.
  • Sprinkle on top of peaches and bake for 40 minutes.
  • Let cool for at least 10 minutes before serving.

1/3 cup sugar
2 tablespoons all-purpose flour
1/8 teaspoon ground nutmeg
2 tablespoons fresh lemon juice
6 medium fresh peaches, peeled, pitted and sliced (about 3 pounds)
2 tablespoons unsalted butter, cut into pieces
1 1/2 cups all-purpose flour (see Cook's Note)
1/4 cup sugar, plus more for sprinkling, optional
2 teaspoons baking powder
Fine salt
4 tablespoons cold unsalted butter
3/4 cup plus 2 tablespoons milk
1 teaspoon pure vanilla extract
1 teaspoon finely grated lemon zest

Steps:

  • For the filling: Position a rack in the center of the oven and preheat the oven to 375 degrees F.
  • Stir together the sugar, flour and nutmeg in a medium saucepan. Gradually whisk in 1/4 cup water and the lemon juice to make a smooth mixture. Add the fruit and toss gently to coat evenly.
  • Put the saucepan on the stovetop over medium-low heat and stir the fruit mixture gently until it simmers. Reduce the heat to low and cook until thickened, about 2 minutes. Remove from the heat. Transfer to a shallow 2-quart baking or gratin dish and dot with the butter. Set aside.
  • For the biscuits: Stir together the flour, sugar, baking powder and 1/2 teaspoon salt in a large bowl. Work in the butter with your fingertips until the texture resembles coarse meal. Add the milk, vanilla and lemon zest to the dry ingredients and stir just until moistened to make a wet, slightly lumpy dough. Do not over mix.
  • Drop large spoonfuls of dough onto the top of the peaches, randomly spacing mounds of dough and leaving some uncovered areas to give a "cobbled" look. Spread the dough to an even thickness and sprinkle dough with sugar if desired.
  • Bake the cobbler until the biscuits are lightly browned, about 45 minutes. Let the cobbler set up at room temperature for 20 to 30 minutes before serving. Serve warm or at room temperature.

2 bags (16 ounces each) frozen sliced peaches, thawed
1/2 cup sugar
3 tablespoons fresh lemon juice
2 tablespoons all-purpose flour
4 slices sandwich bread
2 tablespoons unsalted butter
Whipped cream, for serving (optional)

Steps:

  • Preheat oven to 375 degrees. In a large bowl, toss peaches, sugar, lemon juice, and flour to combine. Transfer to an 8-inch square (or other shallow 2-quart) baking dish.
  • In a food processor, pulse bread until coarse crumbs form; sprinkle over fruit mixture, and dot with butter. Cover tightly with aluminum foil.
  • Bake until fruit mixture is bubbling, 25 to 30 minutes. Remove foil, and continue baking until topping is golden, 10 to 15 minutes more. Let sit at least 10 minutes. Serve with whipped cream, if desired.

Steps:

  • Preheat the oven to 400 degrees and make sure an oven rack is in the middle position. In a food processor, pulse the bread and butter until it is coarsely ground. Set aside. Combine the sugar and cinnamon together in a small bowl.
  • In a large nonstick ovensafe skillet over medium heat, melt the butter and add the peaches, cooking them until they begin to caramelize, 8 to 12 minutes. I didn’t see massive signs of caramelizing but cooked them for about 11-ish minutes until they were starting to soften up and become juicy and tender. Take the skillet off the heat and stir in 1 cup of the bread/butter crumb mixture, the sugars, lemon juice, vanilla and salt.
  • Top the peach mixture with the remaining bread crumbs and sprinkle with the cinnamon and sugar mixture. Bake in the preheated oven until the topping is golden brown and the juices are bubbling, about 20 minutes. Cool for 10 minutes. Serve warm with vanilla ice cream.
