CHEESEBURGER PIZZA
As in a classic diner cheeseburger, mustard tops the ground beef in this pizza, which bubbles with melted American cheese, fresh red onion and dill pickles. Serve it with shredded lettuce on the side to complete the burger experience and make this a "one-crust" meal that comes to the table in an hour flat.

- Place a baking stone or inverted large baking sheet on the lowest rack of the oven and preheat to 450 degrees F.
- Cook the beef in a medium skillet over medium heat just until no longer pink, about 4 minutes. Using a slotted spoon, transfer the beef to paper towels to drain and let cool 5 minutes. Put the cooled beef in a bowl, stir in the mustard to coat and sprinkle with some salt and pepper.
- Dust a sheet of parchment paper set on a pizza peel or inverted baking sheet with some flour. Stretch the pizza dough into a round (12 inches for thick or 14 inches for thinner) on the parchment and brush the edge of the round with the oil, then sprinkle it with the sesame seeds. Sprinkle 1 1/2 cups cheese evenly over the dough, leaving a 1/2-inch border. Top with the beef, then sprinkle the remaining 1/2 cup cheese over the beef.
- Slide the pizza off the parchment onto the hot stone or baking sheet and bake until the crust is golden and the cheese is bubbling, about 15 minutes. Transfer to a cutting board, arrange the pickle slices evenly over the pizza then sprinkle with the onions. Drizzle mustard and ketchup over the pizza and serve while hot with shredded lettuce on the side.

- In a large skillet, cook beef and onion over medium heat until the meat is no longer pink, 3-5 minutes, breaking into crumbles. Drain. From the Food section of the Kansas City Star (though they say they adapted it from Woman's Day magazine.) It would make 8 patties, but 7 fit in my cast-iron skillet.

- Combine the ground turkey, parmesan cheese, and bread crumbs and shape into 7-8 patties.
- Fry in a little canola oil, turning occasionally, for about 6 minutes. (I think it takes longer, but that's what their's says.).
- Top patties with pizza sauce and mozzarella cheese. Cover and cook for 1 minute to melt the cheese.
- Serve on hamburger buns.
THREE-CHEESE WHITE PIZZA

- Make the dough: Combine the yeast, 1 cup warm water (about 100 degrees F) and the sugar in a food processor and pulse once to combine. Let sit until foamy, 5 to 10 minutes. Add the olive oil; pulse to combine. Mix the flour and 2 teaspoons salt in a medium bowl; add to the food processor and pulse until the dough pulls away from the side and gathers around the blade.
- Turn the dough out onto a lightly floured surface and form into 2 even balls. Transfer to 2 lightly oiled bowls; cover with plastic wrap and let rise in a warm place until doubled in size, 2 to 4 hours. (You can make the dough ahead; wrap in plastic and refrigerate up to 1 week or freeze up to 2 months. Bring to room temperature before using.)
- Set a pizza stone or large baking sheet on the lowest oven rack and preheat to 500 degrees F. Meanwhile, make the topping: Combine the ricotta, parmesan, olive oil, garlic, oregano and red pepper flakes in a bowl; season with salt and set aside.
- Stretch 1 ball of dough into a 12-inch round on a lightly floured pizza peel or inverted baking sheet. Spread half of the ricotta mixture on top, leaving a 1/2-inch border. Top with half of the mozzarella, then brush the edge lightly with olive oil.
- Slide the pizza onto the hot stone or baking sheet and bake until the crust is golden and the cheese is bubbling, 7 to 10 minutes. Transfer to a cutting board and let cool 2 minutes before slicing. Repeat to make the second pizza.
THREE-CHEESE PIZZA
Two kinds of mozzarella plus creamy fontina and a little fresh parsley top this cheesy grilled pizza. No grill? no problem. Cook this dough in a cast-iron skillet over high heat, or on a preheated sheet pan or pizza stone in a 500-degree oven.

- Heat it up:Set up a grill with heat source, coals or gas, on one side over medium-high. Clean and lightly oil hot grill.
- Stretch it:On a lightly floured work surface, stretch or roll 1 piece Basic Grilled Pizza Dough or 4 ounces store-bought dough into a 10-inch-long oval or other desired shape. Brush one side lightly with Herb Oil or olive oil and season with salt and pepper.
- Grill it:Using your hands, place dough, oiled side down, directly over heat source. Brush dough with herb oil or olive oil and cook until underside is lightly charred and bubbles form all over top, 1 to 2 minutes. With tongs, flip dough and cook until lightly charred, 1 to 2 minutes. Slide dough to cooler side of grill.
- Top it:Top with cheeses, parsley, and red-pepper flakes; cover grill. Cook until cheese melts and toppings are heated through, 2 to 5 minutes.
THREE-CHEESE PIZZA BURGERS
This is one of my mother's recipes. She is legendary cook who doesn't really follow recipes. I've recently sat her down and had her make her great meals into recipes so that I can have them and share them with others.

- Brown the hamburger and drain of excess grease.
- Add the can of spaghetti sauce and bring to a really hard simmer.
- Add the American cheese slices.
- You can use more than 4 if you are really into cheese (like me).
- Let cheese melt while stirring.
- Turn heat down to low simmer for about 10 to 15 minutes, until it thickens a bit.
- While its doing that take your hamburger buns and pull them apart and lay them insides up on a cookie sheet (you will probably need more than one cookie sheet).
- When meat mixture is done simmering start spooning the mixture onto the hamburger buns and spreading it over the entire surface.
- You should have now what looks like a bunch of open-faced sandwiches.
- Sprinkle each one with a little bit of cheddar and a little bit of the mozzarella.
- Again, you can add more cheese, or use less depending on your preference.
- Place in a 375°F oven for 15 to 20 minutes until cheese has melted and slightly browned and hamburger bun should be pretty crispy.
