These oatmeal muffins are so moist and fluffy, you won't believe they are healthy! No flour, no butter, and no oil are needed, all you need is one bowl or blender.

2 cups rolled oats (gluten free, if needed)
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 large bananas
1 cup vanilla yogurt (Greek or plain)
2 large eggs
3 tablespoon maple syrup (can use honey or agave )
1 teaspoon vanilla extract
1 cup blueberries (optional)

Steps:

  • Preheat the oven to 180C/350F. Line a 12-count muffin tin with muffin liners and set aside.
  • In a high speed blender or food processor, add all your ingredients and blend until a smooth batter remains.
  • Distribute the batter evenly amongst the 12 muffin liners. Bake the muffins for 18-20 minutes, or until a skewer comes out mostly clean.
  • Let the muffins cool in the tin for 10 minutes, before carefully transferring to a wire rack to cool completely.

1 cup whole wheat flour
1/4 cup all-purpose flour
1 cup old fashioned oats or 1 cup quick oats
1/4 cup brown sugar
3 teaspoons baking powder
1/4 teaspoon cinnamon
1 egg
2 tablespoons molasses
3 tablespoons peanut oil
1 tablespoon water
1 cup skim milk
1 teaspoon vanilla
2/3 cup raisins

Steps:

  • Mix flours, oats, sugar, baking powder, and cinnamon, set aside.
  • In a large bowl, beat egg, molasses, oil, milk, and vanilla.
  • Add flour mixture to egg mixture; mix until almost combined; add in raisins and continue to mix until just combined.
  • Place an even amount of batter in to 12 medium muffin cups.
  • Bake at 400F for 20-25 minutes or until done.
  • Let stand in tins for 5 minutes, then remove and place muffins on a rack to cool.
  • Serve warm.

Number Of Ingredients 12

2 1/2 cups old fashioned oats (1.5 cups ground)
2 tablespoons oats (for muffin tops)
2 -3 large bananas, very ripe (1 cup mashed or 1 cup applesauce)
2 large eggs (lightly beaten)
1/3 cup honey
3/4 cup milk
2 teaspoons vanilla
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3 -4 tablespoons cocoa powder
1 cup chocolate chips

Steps:

  • 1. Preheat oven to 325. Place oats on a baking sheet and toast until lightly browned, stirring once (about 4 to 6 minutes). Let cool to room temperature. (If you are in a hurry you can skip this step and use plain old fashioned oats, however the toasting adds flavor!).
  • 2. Place 1.5 cups of oats in a food processor and blend/pulse until they reach a rough, flour like consistency.
  • 3. Mash bananas well, they should have no lumps. I use my mixer to mash them before adding the other wet ingredients.
  • 4. Add eggs, honey, milk and vanilla. Mix to combine.
  • 5. Add dry ingredients (including both ground and unground oats) to wet ingredients and mix until just incorporated. Allow these to sit for 10 minutes to soak the oats.
  • 6. 7. Fold in approximately 1/2 cup chocolate chips, if using.
  • 8. Scoop into muffin tin, lined with muffin wrappers (makes 14 muffins). You can spray the bottom of the liners lightly with spray oil to make the muffins easier to remove from the wrappers.
  • 9. Sprinkle muffin tops with reserved oats and remaining 1/2 cup chocolate chips, press down lightly.
  • 10, Bake at 350 for about 20 -23 minutes, a toothpick inserted in the center of a muffin should come out clean.

1 1/2 cups quick-cooking rolled oats
1/3 cup firmly packed brown sugar
2 teaspoons baking soda
1/2 teaspoon cinnamon
1/4 teaspoon salt
3/4 cup water
1/4 cup skim milk
1/4 cup oil
1 egg
1/2 cup raisins

Steps:

  • Heat oven to 400 degrees. Grease 12 muffin cups.
  • In mixing bowl, combine all dry ingredients; mix well.
  • In large bowl, combine all wet ingredients; blend well.
  • Stir in dry ingredients, just until moistened. Stir in raisins.
  • Spoon batter into prepared muffin cups, filling 2/3 full.
  • Bake for 15-20 minutes or until toothpick inserted in center comes out clean.
  • Immediately remove from pans.

Muffins store great in a covered container in the refrigerator - just warm in the microwave. I have been experimenting with cooking low fat and low cholesterol recipes for my husband. Bake in a pre-heated 400 degree oven.

1 cup quick oats
1 cup sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1 cup raisins
1/2 cup egg substitute, like Eggbeaters
1 cup applesauce
1 cup milk

Steps:

  • Pre-heat oven to 400 degrees Fahrenheit.
  • Prepare standard sized muffin tins by spraying with a low fat cooking spray or line with muffin cups.
  • In one large bowl, combine first five ingredients, mixing all dry ingredients well.
  • Stir in raisins.
  • In a separate bowl combine the following wet ingredients: egg substitute, applesauce, milk. Stir well.
  • Pour wet ingredients into dry ingredients and stir until moistened. Do not over-mix muffin dough.
  • Spoon into prepared muffin tins.
  • Bake in a pre-heated 400 degree oven for 18-20 minutes or until muffins are lightly browned on top and a toothpick inserted into the center of a muffin is dry when removed.

A moist, very tender muffin that we all enjoy. I eat mine plain but they are also good with butter or jam. It is surprising how tasty they are without any spices, flavorings or zest but the buttermilk and oats really give this muffin its flavor. Please note that the oats need to soak for 1 hour before preparing the muffins so I've included that in the prep time.

1 cup buttermilk ((or sour milk)
1 egg
1/2 cup brown sugar
1/2 cup shortening, melted ((do not use oil)
1 cup flour
1/2 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon baking soda

Steps:

  • Soak oatmeal in buttermilk 1 hour; add egg and beat well.
  • Add sugar and mix.
  • Add cooled shortening.
  • Add flour sifted with salt, baking powder and soda.
  • Bake in greased muffin pans in hot oven (400 degrees) 15 to 20 minutes.
