This is a recipe I created out of a need for a healthy low fat, high fiber breakfast option. This "cookie" is not very sweet. You can add more sugar if desired. Makes a great breakfast with a piece of fruit.

1 1/2 cups rolled oats (not quick)
1 cup nonfat plain yogurt or 1 cup vanilla yogurt
1 whole egg
1 egg white
1 cup applesauce
1/4 cup light brown sugar
1/4 cup honey
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt
1 1/2 cups whole wheat flour
1/2 cup wheat bran
1/2 cup white flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 cup crushed pineapple, drained
2 carrots, grated
1/2 cup raisins

Steps:

  • Preheat oven to 400.
  • In a bowl, combine oats and yogurt and set aside.
  • In a large bowl beat eggs, sugar, honey and applesauce.
  • Add flours, wheat bran, baking powder and baking soda. Mix until combined.
  • Add oatmeal and yogurt mixture and beat gently.
  • Fold in carrots, raisins and pineapple.
  • On a parchment paper lined cookie sheet, scoop 1/4 cup of batter and flatten.
  • Bake at 400 for 25-30 mins until lightly browned.
  • Cool on wire rack.

1/4 cup honey

2 medium ripe bananas, mashed
1/2 teaspoon salt

2/3 cup chopped nuts, such as almonds, walnuts or pistachios

Steps:

  • Preheat the oven to 325°F. Line a baking sheet with parchment paper or a Silpat.
  • In the bowl of a stand mixer fitted with the paddle attachment, beat together the peanut butter, honey, vanilla extract, mashed bananas, salt and cinnamon.
  • Add the oats, dried cranberries and nuts and mix until combined. Scoop about 1/4-cup mounds of the cookie dough onto the baking sheet, flattening each cookie slightly. (The cookies will not spread while baking, so you can space them relatively close together.)
  • Bake the cookies for 14 to 16 minutes until they're golden brown but still soft. Remove the cookies from the oven then allow them to cool for 5 minutes on the baking sheet before transferring them to a rack to cool completely.

Steps:

  • Preheat the oven to 180C/350F. Line a large baking tray with parchment paper and set aside. Alternatively, use two baking trays, to avoid cookies from overspreading.
  • In a large mixing bowl, add your coconut sugar, white sugar, coconut oil, applesauce and vanilla extract, and mix until fully combined. Then, add your flour, baking soda, and salt, and mix well. Finally, fold through your oats and chocolate chips, until just combined. Do not overmix. Refrigerate the dough for 30 minutes.

1/3 cup / 85 ml boiling water
1 egg
3 tbsp maple syrup or honey ((Note 1))

1 1/4 cups rolled oats
1/2 cup flaked almonds ((Note 3))

1/2 cup dry-roasted peanuts
1/2 cup dried strawberries, chopped (see Cook's Note)

1/4 cup whole wheat flour
1 teaspoon baking soda
1 teaspoon kosher salt
1 cup smooth peanut butter
1/2 cup granulated sugar
2 large eggs
1 teaspoon pure vanilla extract
6 tablespoons strawberry preserves, preferably low sugar

Steps:

  • Position the racks in the upper and lower third of the oven. Preheat the oven to 375 degrees F. Line two large baking sheets with parchment paper.
