Gotta Be the Best Low Fat Mushroom Sauce Ever!! image

This sauce is so simple and tastes absolutely divine! It can be used in so many ways! I stumbled over it when I didn't have the ingredients I wanted in the kitchen and thought I would be adventurous. Well good on me!!! This is a definite regular in our house over a big fat T-bone with chips and salad but we also have it with chicken and mashed potatoes. I truly love making this sauce because you really can't go wrong! The only wrong thing you can do...is not try it!!! It is LOW FAT too!!!

500 g portabella mushrooms (these have a much stronger flavour and colour)
1 tablespoon balsamic vinegar
1 teaspoon cornflour
1 (375 ml) can creamy evaporated low-fat milk
salt & pepper
1 dash oil or 1 dash butter

Steps:

  • This sauce is really quick and only takes about 5 minutes to make once everything is prepared!
  • White mushrooms are fine to use if you don't have Portabelo and you can chop them or slice them - whatever you prefer.
  • Put the oil or butter in a medium sized fry pan with the mushrooms and cook them on a medium heat until they start to soften slightly. Add 3/4 can of evaporated milk and the tablespoon of balsamic vinegar and keep it at a medium heat.
  • While the mushrooms are cooking in the milk (this won't take long!) quickly mix a little of the milk with the cornflour to form a paste. Add this to the sauce and keep stirring and it will start to thicken. Don't be afraid to bring it to the boil, it won't go funny.
  • This is where it is up to you how thick you want the sauce! If it becomes too thick just add more Evaporated Milk till you get the desired consistency. If it is not thick enough just make up some more cornflour paste and add it a little at a time until it is just right. You really can't fail to get it the way you want. The best advice I can give is don't have the pan too hot and make sure you keep stirring!
  • Also taste it before you add any salt and pepper as the Balsamic gives it such a nice flavour you don't want to overpower the sauce with too much salt and pepper. If it doesn't have enough flavour, add another dash of Balsamic Vinegar. It really is that simple!
  • Pour it over steak and chips or any meat that takes your fancy! Or you can cook up some cubed chicken breast and add them to the sauce and serve with mashed potatoes and greens for a healthy delicious meal! This recipe can easily be doubled.
  • One tip to give it your sauce more flavour is after you have cooked your steaks use the same pan and leave the juice. It saves on washing and adds that richness. Get saucy!

1 ½ Cups Fresh cream
1 tsp Wholegrain mustard
Sea Salt
Black Pepper

Steps:

  • Heat up a pan on the stove
  • Add butter and mushrooms
  • Fry until mushroom juices have evaporated and mushrooms begin to brown
  • Add cream, mustard and salt and pepper
  • Allow to simmer for 5 minutes until cream has reduced and sauce thickens, then remove from heat and serve
  • OPTIONAL: We add chilli flakes for a little hot kick.

2 ounces shiitake mushrooms, sliced

1/4 cup brandy
1 cup heavy cream
1/2 teaspoon nutmeg
Salt and pepper
1/2 cup grated Parmesan

Steps:

  • Prepare ravioli according to package directions. Heat olive oil in a skillet, Cook mushrooms until tender and stir in garlic. Add brandy and cook for 2 minutes. Stir in heavy cream and bring to a simmer. Season with nutmeg, salt and pepper. When cream has thickened stir in 1/4 cup of cheese. Stir in cooked ravioli and gently simmer for 1-2 minutes.   • In a medium saute pan, melt 1/4 cup butter over medium heat. Add sliced mushrooms; cook and stir until soft. Remove mushrooms from pan, and set aside.
  • Add 1 tablespoon butter to pan, and melt . Add shallots; cook and stir until translucent. Add mushrooms, and cook until soft. Add thyme, bay leaf, and red wine. Reduce.
  • In a small bowl, dissolve arrowroot in 1/4 cup cold beef broth. Stir remaining broth into sauce, and bring to a boil. Whisk in arrowroot mixture, and stir until thick. Add reserved mushrooms. Season to taste with freshly ground black pepper and salt.

  • Melt 1 tablespoon of the butter in a saucepan and add the shallots, mushrooms, salt and pepper. Cook, stirring, for about 5 minutes. Add the wine and broth and reduce by half over high heat.

This comes from an original Italian cookbook. It is very creamy and full of flavour. Great served with homemade pasta.

5 tablespoons olive oil
1 garlic clove
1 onion
400 g mixed mushrooms
100 ml white wine
4 -5 tablespoons cream (light is fine, too)
salt and pepper
herbs, to taste
50 g parmesan cheese (optional)

Steps:

  • Clean the mushrooms and cut them into thin slices. Chop onion and garlic.
  • Heat the olive oil in a large skillet. Saute the onion and the garlic for 1-2 minutes and then add the mushrooms. On fairly high heat saute them until nearly all of their liquid has evaporated. Add the white wine and continue cooking on high heat for some minutes.
  • Reduce the heat and simmer gently until sauce has thickened. Now add the cream and season with salt and pepper to taste (you might also like to add some Italian herbs).
  • If you like add the parmesan cheese to get an even creamier sauce.
  • Serve with pasta and enjoy! :).

1 tsp butter
2 shallots, finely diced
200g chestnut mushrooms, sliced
200g crème fraîche

Steps:

  • Pour 100ml of boiling water over the dried porcini and leave to stand for 5 mins. In a saucepan, heat the butter and add the shallots, frying gently until they are soft and translucent. Add the chestnut mushrooms and cook for 5 mins more. When they are cooked, pour in 1 tbsp of the liquor from the porcini and discard the rest. Chop the porcini and add them to the pan.
