Low Carb Instant Pot Zuppa Toscana Soup image

This Copycat Zuppa Toscana Soup recipe is loaded with sausage, bacon, cauliflower and kale. Made in the Instant Pot and full of flavor, this low carb recipe is paleo and keto friendly. Guaranteed to be a hit!

1 lb. mild sausage, removed from casing
4 strips bacon, diced
1 yellow onion, diced
2 garlic cloves, minced
3 carrots, sliced into coins
1 red pepper, diced
1 head of cauliflower, cut into florets
5 cups chicken stock
1/2 teaspoon thyme
1 teaspoon basil
1/2 teaspoon red pepper flakes
3 cups chopped up kale
1 can coconut milk

Steps:

  • Turn your instant pot onto the sauté setting.
  • Add sausage to the pan and brown for 3-4 minutes. Breaking up with a wooden spoon so the sausage is in smaller chunks.
  • Remove sausage from the pan using a slotted spoon and place on a paper towel lined plate.
  • Next add bacon to the pan and saute for 3-4 minutes, until browned.
  • Once browned add onion and garlic to the pan. Saute until translucent. Then add sausage back to the pan along with the carrots, red pepper, cauliflower, chicken stock, thyme, basil and red pepper flakes. Give it a stir.
  • Cancel the Saute Mode.
  • Put the cover on and turn to Pressure Cooker Mode. Set for 10 minutes. The pot will take several minutes to come to pressure.
  • After the cooking cycle ends do a quick pressure release for the steam. When the pin in the lid drops, open the lid.
  • Cancel the Pressure Cooking mode. And turn on Saute mode.
  • Add coconut milk and kale to the pot. Stir everything together and saute for 5 minutes uncovered.
  • Serve.

4 slices Whole30-compliant bacon (cut into about 1/2" pieces)
1 pound Italian sausage (made from below recipe or storebought)
½ teaspoons crushed red pepper flakes
4 medium yellow potatoes (about 1 pound 3 ounces, diced into bite-sized pieces)
1 medium white or yellow onion (diced)
2 tablespoons garlic (minced, about 4 cloves)
4 cups chicken stock
½ bunch kale (stems removed and leaves chopped, 4 cups)
1 can coconut milk
Salt and pepper (to taste)
1 pound ground pork
1 tablespoon red wine vinegar
1 teaspoon salt
1 teaspoon black pepper
1 tablespoon fresh chopped parsley (or 2 teaspoons dried)
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried basil
1 teaspoon paprika
1 teaspoon red pepper flakes
¼ teaspoon ground fennel seed (optional)
pinch dried oregano
pinch dried thyme

Steps:

  • If making Italian sausage: combine all ingredients in a bowl and mix well. Alternately, combine all ingredients in the saucepan and stir well when browning.
  • In a Dutch oven or heavy-bottomed medium pot over medium heat, add Italian sausage and sprinkle crushed red pepper flakes over. Use a spoon to break up the pieces. When browned and cooked through, drain and set aside.
  • Cook the bacon pieces in the same Dutch oven over medium heat until crisp, about 5-10 minutes. Remove the crisp bacon and set aside - don't get rid of the bacon fat! Stir in the onions and garlic; cook until onions are soft and translucent, about 5 minutes.
  • Pour the chicken broth into the Dutch oven with the onions and garlic, and bring to a boil over high heat. Add the potatoes, and boil until fork tender, about 10-20 minutes. Reduce the heat to medium and stir in the coconut milk and the cooked sausage; heat through. Add the bacon and the kale into the soup just before serving and cook 'til the kale is bright green and softened. Add salt and pepper to taste.

Dairy-free, Paleo, and made with only real-food ingredients, this hearty soup is full of flavor and so simple to make. It's perfect for a quick dinner and reheats well for an even easier lunch. This creamy and cozy Whole30 Zuppa Toscana Soup is sure to be your new favorite!

4 strips Whole30 compliant bacon, diced
1 pound Whole30 compliant Italian sausage
1 onion, diced
6 cloves garlic, minced
1/2 - 1 tsp red pepper flakes
2 tsp Italian seasoning
1 1/2 tsp salt (plus more to taste)
1/8 tsp cracked black pepper (plus more to taste)
3 tbsp arrowroot starch
4 cups diced russet potatoes
32 oz Whole30 compliant chicken broth
1 cup full-fat coconut milk
4 cups curly kale

Steps:

  • Heat a large stockpot over medium heat. Once hot, add the diced bacon to a large stock pot and cook until crispy. Stirring occasionally.
  • When the bacon is crispy, remove it from the pot. Drain the bacon on paper towels and then set aside.
  • Remove all but two tablespoons of the bacon grease from the pot. Next add the Italian sausage to the pot. Brown the sausage and break it up as it cooks.
  • When the sausage is brown, add the diced onion, minced garlic, red pepper flakes, Italian seasoning, salt, and black pepper to the pot. Let everything cook for a few minutes until the onions start to become tender, roughly five minutes.
  • Next sprinkle the arrowroot starch over the meat mixture and stir until well combined. Then, add the diced potatoes and chicken broth and bring the soup to a boil. Reduce the heat and let the soup simmer for around 30 minutes, until the potatoes are tender.
  • When the potatoes are tender, add the coconut milk and kale to the pot. Simmer until the kale is wilted. Lastly, stir in the crisped bacon and then serve immediately. Enjoy!

1 pound Italian sausage (such as Jimmy Dean®), casings removed
6 slices bacon, cut into 1/2-inch pieces
1 onion, diced
3 cloves garlic, pressed
2 (32 ounce) cartons chicken broth
½ cup water
1 cube chicken bouillon (such as Knorr®)
1 teaspoon ground black pepper
5 cups chopped cauliflower florets
3 cups stemmed and chopped kale
½ cup half-and-half
¼ cup grated Parmesan cheese

Steps:

  • Cook the Italian sausage in a large pot over medium-high heat until browned and crumbly, 5 to 7 minutes. Drain off grease and transfer sausage to a plate.
  • Cook bacon to the same pot until crisp, 3 to 5 minutes. Remove and drain, leaving about 2 teaspoons of bacon grease in the pot. Add onion and garlic and cook until soft and translucent, about 5 minutes.
  • Return sausage and bacon back into the pot; stir in chicken broth, water, and bouillon cube. Season with pepper and simmer over low heat for 20 minutes. Stir in cauliflower and simmer until almost tender, about 5 minutes. Add kale and half-and-half; simmer until kale is wilted, about 5 minutes. Sprinkle with Parmesan cheese to serve.

1/2 lb bacon (sugar free)
1 lb sausage (Jimmy Dean spicy works nice)
2 quarts water
3 -4 minced garlic cloves
2 chicken bouillon cubes
4 cups kale
3 -4 cups cauliflower (cut up in small pieces)
1 1/2 cups heavy cream

Steps:

  • Fry bacon in a medium/large size skillet; drain fat, put on plate and let cool.
  • In the same skillet cook the sausage and set aside ( I put it on the back burner).
  • In a large soup/stew pan put cook onions until tender and clear.
  • Add in garlic and cook for a minute.
  • Add water and chicken boullion cubes.
  • Start to tear the bacon into bite size pieces and add to the pot.
  • Add sausage.
  • Add cauliflower.
  • Cook for 15 minutes (until cauliflower is soft).
  • Add heavy cream.
  • Add kale (I tear mine into bite size pieces).
  • Simmer for 5-10 minutes.

3 pieces bacon, chopped
1 large onion white, diced fine
6 large russet potatoes, peeled and diced
1 lb sweet Italian turkey sausage
3 garlic cloves, minced
2 tablespoons olive oil
1 bunch spinach or 1 bunch kale, cut into bite size pieces
1 cup half-and-half cream, fat-free
1/4 teaspoon ground aniseed
1/2-1 teaspoon salt, depending on taste
1 dash red pepper flakes
black pepper

Steps:

  • In a large stock pot, cook the bacon until somewhat done.
  • Add the onion and saute until almost caramelized (golden color).
  • Add chicken stock and water, then bring to a light boil and add potatoes.
  • Cook Italian sausage (with casings removed) separately in a skillet.
  • When nearly done add garlic to the pan and cook until sausage is done and the consistency of ground beef.
  • Add mixture to the stock.
  • When the potatoes have softened, gently press some of them to the side of the pan to thicken the soup; leaving some whole.
  • Add fat free half and half, spinach, salt, aniseed, and peppers.
