SWEET POTATO SALAD

Number Of Ingredients 10

4 large sweet potatoes
1/2 cup mayonnaise
1/2 cup plain Greek yogurt
1/2 cup diced scallions (about 6)
1 red pepper, finely diced
2 tablespoons minced fresh chives
2 teaspoons orange zest
2 teaspoons apple cider vinegar
1/2 teaspoon hot sauce, such as Tabasco
Salt and pepper

Steps:

  • Peel and cube the sweet potatoes and put them in a large pot. Cover with water, bring to a boil and boil until tender, about 5 minutes. Drain and set aside to cool.
  • While the potatoes are cooling, in a medium bowl, mix the mayonnaise, yogurt, scallions, red pepper, chives, orange zest, apple cider vinegar and hot sauce. Add the cooled potatoes to the mixture, and toss until the potatoes are fully coated. Add salt and pepper to taste. Best served chilled.

3 Tbsp. KRAFT Mayo with Olive Oil Reduced Fat Mayonnaise
2 stalks celery, chopped
1/2 cup chopped pecans, toasted
4 green onions, chopped

Steps:

  • Heat oven to 400°F.
  • Toss potatoes with 3 Tbsp. dressing; spread into foil-lined rimmed baking sheet.
  • Bake 25 to 30 min. or until potatoes are tender, stirring after 15 min. Cool completely.
  • Mix mayonnaise and remaining dressing in large bowl. Add remaining ingredients; toss lightly. Refrigerate until ready to serve.

1/3 cup KRAFT Lite Zesty Italian Dressing, divided
3 Tbsp. KRAFT Light Mayo
3 stalks celery, chopped
1 small red onion, chopped
1/2 cup chopped walnuts, toasted

Steps:

  • Heat oven to 400°F.
  • Toss potatoes with 3 Tbsp. dressing; spread onto foil-covered rimmed baking sheet.
  • Bake 25 to 30 min. or until tender, stirring after 15 min. Cool completely.
  • Mix mayo and remaining dressing until blended. Combine potatoes, celery, onions and nuts in large bowl. Add mayo mixture; mix lightly.

2 lbs sweet potatoes, peeled and cut into 1-inch cubes
vegetable oil cooking spray
3/4 teaspoon salt, divided
2 celery ribs, diced
1 jalapeno pepper, seeded and finely chopped
1/2 cup diced onion
1/3 cup diced green bell pepper
3 tablespoons brown sugar
2 tablespoons chopped fresh parsley or 1 tablespoon dried parsley flakes
5 tablespoons white vinegar
1 tablespoon vegetable oil
1 teaspoon hot sauce
1 teaspoon prepared mustard
3 slices pepper bacon (optional) or 3 slices regular bacon, cooked and crumbled (optional)
fresh flat-leaf parsley sprig

Steps:

  • Arrange potatoes in an even layer in a 15x10-inch jelly-roll pan.
  • Coat with cooking spray, and sprinkle with 1/2 teaspoon salt.
  • Bake at 400°F for 25 minutes or just until tender. Let cool slightly.
  • Stir together remaining 1/4 teaspoon salt, celery, and next 9 ingredients in a large bowl until blended.
  • Add potatoes, and toss gently to coat.
  • Sprinkle with crumbled bacon, if desired; garnish, if desired.
  • Serve warm or chilled.
