LENTIL PATTIES
An easy, tasty recipe to serve with fresh salad... great for vege burgers too (especially with my Charged-Up Chilli as sauce! :) This is from the Australian Women's Weekly 'Great Vegetarian Food' cookbook. Serves four if made as patties and served with salad or veges; or makes about eight patties for burgers. Great for OAMC... This recipe has many possibilities - I usually add more spices than the recipe calls for; but it depends on your taste!

Steps:
- Combine lentils, celery, carrot, water and spices in large saucepan.
- Bring to boil; reduce heat. Simmer, covered, for about 20 minutes or until mixture thickens; cool.
- Stir in half of the breadcrumbs.
- Shape mixture into patties (makes about 8); toss in flour.
- Dip in egg, then in combined remaining breadcrumbs and parsley.
- (Can be made one day ahead at this stage and refrigerated, covered, or frozen for up to 6 months).
- Heat oil in large non-stick frypan; cook patties until well browned both sides. Drain on absorbent paper and serve as desired.

VEGAN LENTIL BURGERS
These burgers are packed with flavor, fiber and protein while still being low in fat. We love them grilled, but you can also pan-fry them: Heat 1 tablespoon grapeseed oil in a large nonstick skillet over medium-high heat and fry patties until well browned, about 2 minutes per side. (Remember: The extra oil will alter the calorie and fat totals.)

- Bring the lentils and 1 3/4 cup of the broth to a boil in a medium saucepan over high heat. Reduce heat to medium-low, partially cover and simmer until the lentils are fully softened and the liquid is absorbed, about 30 minutes. Transfer to a medium bowl with the remaining 1 tablespoon broth and mash well with a potato masher. Set aside.
- Heat the oil in a large nonstick skillet over medium heat. Add the chopped onion, lemon juice and 1/4 teaspoon salt and cook, stirring, until softened, about 6 minutes. Add the spinach, garlic, 1 1/2 teaspoons black pepper and cumin and stir until the spinach is wilted, about 3 minutes.
- Add the spinach mixture, breadcrumbs, walnuts and 3/4 teaspoon salt to the lentils and mix thoroughly. Cover and refrigerate for at least 1 hour or overnight.
- Preheat the grill to medium-high. Form the mixture into six 4-inch patties and spray with cooking spray on each side. Grill until nice grill marks form, about 3 minutes per side. Place the patties in the buns with the sliced onion and other toppings, as desired, and serve.

LENTIL CAKES (PATTIES)
These wonderful patties have undergone several transformations since I first tried them. I have used different soup mixes to season them, and added chopped nuts for texture. They are tasty with a tomato sauce topping or baked in a mushroom sauce for a fancy dinner. I like them best fixed up like a hamburger with lettuce, tomato, cheese, mayo, ketchup and alfalfa sprouts on a bun or good home-made bread!

Steps:
- Place lentils and water in a saucepan, and bring to a boil. Cover, reduce heat to low, and simmer until tender, about 30 minutes. Drain.
- In a large bowl, mix together the cooked lentils, milk, wheat and barley cereal, eggs and walnuts. Season with onion soup mix and poultry seasoning. Mix well using your hands, as the mixture will be very thick. Let stand for 30 minutes, or refrigerate overnight.
- Heat oil in a large skillet over medium heat. Use an ice cream scoop to portion out balls of the lentil mixture. Drop the scoops into bread crumbs, and coat while flattening into patties. Fry burgers in the hot skillet until nicely browned on both sides, about 5 minutes per side, depending on the thickness of the patties.

- Pulse lentils in a food processor until coarsely ground; transfer to a large mixing bowl.
- Mix onion, egg, bell pepper, and bread crumbs with the lentils; add mozzarella cheese, garlic, salt, and pepper to the lentils and mix.
- Divide the mixture into four equally sized portions, roll into balls, and flatten into patties.
- Spread cornmeal into a wide, shallow bowl. Dredge patties in cornmeal to coat.
- Heat olive oil in a wide skillet over medium-high heat. Cook patties in skillet until browned, about 5 minutes per side.

- In a small saucepan cook the lentil for 15 minutes. Drain and place in a large bowl.In a medium size pan, heat 2 tablespoons of olive oil, add chopped onion and sauté for 5 minutes, add crushed garlic and sauté for 1- minutes more.Transfer the onion and garlic to the bowl with the lentils. Add shredded carrots, salt, pepper, turmeric, cumin, chopped parsley and egg. Mix until well combined.Add flour and mix. Shape into patties and cook in one of two ways:How to cook lentil patties:Option 1: bake in pre heated 350F (180C) oven for 25-30 minutes.Option 2: in a pan heat 2 tablespoons of olive oil. When oil is hot, add the patties to the pan and fry for 2-3 minutes on each side, or until golden brown.Make the tahini sauce: in a small bowl whisk all sauce ingredients until smooth.Serve and enjoy!
LENTIL PATTIES
An old recipe that was given to me years ago. These make an ideal vegetarian substitute for hamburger patties. Nice with a salad and mashed potatoes or use for hamburger filling.

Steps:
- Boil lentils in pot of water until soft.
- Beat egg, add salt, thyme, turmeric and chopped onion.
- Add drained lentils, stir thoroughly and add sufficient breadcrumbs to make a fairly solid consistency.
- Shape into rissoles.
- Chill covered in fridge approximately 30 minutes.
- Heat oil. Fry until golden brown.
MUSHROOM AND LENTIL PATTIES
Full of flavor, protein, and fiber! I remove the stems and blend with the lentils, then add in the mushrooms. Made even better with a sauce, we used tzkitzki but may try horseradish mayonnaise next time.

Steps:
- 1. Preheat oven to 375.
- 2. Combine lentils, bay leaf, and water. Bring to a boil and simmer 15 minutes (lentils will be undercooked).
- 3. In a food processor, blend lentils and mushroom stems until coursely chopped. Add diced mushrooms.
- 4. Heat olive oil over medium-high, add garlic and cook roughly 30 seconds. Add lentil mixture and mushrooms. Cook roughly 4-5 minutes.
- 5. Add red wine and cook until evaporated. Stir in broth, soy sauce and oats and continue to cook until absorbed.
- 6. Remove from heat and add salt and pepper. Allow to cool slightly.
- 7. Line baking pan with parchment paper. Place mixture on sheet and press down to form patties (mixture may be too moist to form patties by hand). Bake for 15 minutes, flip and another 10-15 minutes.

- Rinse the red lentils in a sieve under running water to remove any debris. Transfer them to a pot or pan along with 1 cup of vegetable broth. If using water add a little salt. Bring to a boil and let the lentils simmer with a lid for about 15 minutes or until they are soft and partially falling apart. There should be no broth or water being left after cooking!If too much water evaporates during cooking, you can add a little bit more.
