CHICKEN WITH HAVARTI DILL CHEESE SAUCE RECIPE

A Havarti cheese sauce adds flavor to these delicious thin chicken breasts. The chicken is quickly cooked with a crunchy seasoned coating.

4 to 6 chicken breast halves (4 to 6 ounces each or thinly sliced cutlets)
1/2 cup plus 2 tablespoons all-purpose flour
1 large egg
1 tablespoon water
1 cup bread crumbs (garlic seasoned fine)
salt to taste
black pepper to taste
4 tablespoons butter ( divided )
1 dash garlic powder
Optional: dill weed
1 to 1 1/4 cups milk
1 cup Havarti cheese (shredded or diced; with dill; 4 ounces)
2 tablespoon olive oil

Steps:

  • If you are using small chicken breasts, pound them between sheets of plastic wrap to a uniform thickness of about 1/4 to 1/2 inch. If the chicken breasts are large, slice them horizontally to produce 2 thin cutlets, then pound to thin as needed. Alternatively, you may buy thin sliced chicken breasts.
  • Put 1/2 cup of flour in a wide bowl or plate.
  • In another bowl, whisk the egg with water.
  • Put the breadcrumbs in a third bowl.
  • Lightly sprinkle the chicken with salt and freshly ground black pepper. Dredge the chicken in the flour, then dip in the egg mixture, then coat with the breadcrumbs. Place the chicken pieces on a baking sheet and refrigerate to chill for about 30 minutes.
  • Meanwhile, in a saucepan over medium heat, melt 2 tablespoons of butter. Stir in the remaining 2 tablespoons of flour and continue cooking, stirring constantly, for 1 minute. Add the garlic powder and dill weed, if using. Gradually add 1 cup of milk. Cook, stirring, until thickened. Add the cheese and cook, stirring, until the cheese has melted. Thin the sauce with more milk to your desired consistency, if you like. Taste and add salt and pepper, as needed.
  • Heat the remaining 2 tablespoons of butter in a large skillet with the olive oil. Cook the chicken until browned and cooked through, turning to brown both sides. The time depends on the thickness of the chicken. My cutlets were very thin, so they only took about 6 to 8 minutes.
  • Check with an instant-read thermometer if you are unsure. The chicken should register at least 165 F (73.9 C) when done.
  • Arrange the chicken on a serving platter with the sauce or serve the sauce separately.

"How do I make chicken interesting?" is a question people often ask me. Here's your answer. I love making a double batch of this sauce and keeping it in the door of the fridge for a day when I need something tasty in a pinch. Don't like spice? Simply omit the hot sauce and the red pepper flakes. You can also sub thinly sliced lean beef for the chicken or just make it a stir-fry with all vegetables...

1/2 cup smooth peanut butter
1/4 cup low-sodium soy sauce
1/4 cup apple cider vinegar
1 tablespoon honey
1 tablespoon hot sauce
1 tablespoon sesame oil
1 knob ginger, grated (to equal about 1 tablespoon)
5 large cloves garlic, grated
1 pound boneless, skinless chicken breasts, cut into 1/4-inch-thick strips
Kosher salt
1/4 teaspoon red pepper flakes
3 tablespoons canola oil
12 to 15 small red radishes, quartered, plus 1 loose cup radish greens, coarsely chopped
1 large red bell pepper, cored, seeded and cut into 1/2-inch-thick strips
1 cup frozen peas
Zest and juice from 1 small lime

Steps:

  • In a large bowl, whisk the peanut butter with the soy sauce, vinegar, honey, hot sauce, sesame oil, ginger, two-thirds of the garlic and 2 tablespoons warm water until smooth. (If the sauce is too thick, thin with a little more warm water.) Set aside.
  • Arrange the pieces of chicken on a baking sheet in a single layer. Sprinkle on one side with salt and the red pepper flakes. Turn the pieces on their other side and sprinkle again with salt.
  • Heat a large heavy-bottomed skillet over high heat. Add half of the oil and heat until it begins to smoke. Remove the skillet from the heat and quickly add half of the chicken pieces in a single layer. Return the pan to high heat and cook, stirring from time to time, until the chicken is fully cooked, 3 to 5 minutes. Drain and repeat with the remaining oil and chicken.
  • In the same skillet, stir in the remaining garlic, radishes, radish greens and peppers and season with salt. Mix so the radish greens wilt. Stir in the peanut sauce and simmer for an additional minute. Taste for seasoning. Stir in the peas and the chicken. Turn off the heat and let rest a couple of minutes on the stove. Top with a few grates of lime zest and the juice.

Steps:

  • salt & pepper chicken cutlets, lightly drench in flour, then the eggs
  • mix the cheese with the breadcrumbs, cover chicken on both sides..pressing gently to make sure sticks well
  • add half the butter and half the olive oil...med heat fry the cutlets in batches about 3 mins each side, until fully cooked and brown. I served this with potatoes o gratin...but you can serve with anything...sooo delicious

2 boneless skinless chicken breasts
4 oz dill Havarti cheese, sliced
1 tablespoon butter, melted
1/4 teaspoon Italian seasoning
Salt and freshly ground pepper to taste
1 medium tomato, sliced
1/2 cup sliced English (seedless) cucumbers
2 teaspoons olive oil
Salt and freshly ground pepper to taste

Steps:

  • Heat oven to 400°F. Lightly spray small shallow baking dish with cooking spray.
  • Cut a pocket in each chicken breast by making a horizontal slit along thin long edge, being careful to not cut through to opposite side. Place sliced cheese in pockets. Brush chicken with melted butter; sprinkle with Italian seasoning, salt and pepper. Place in baking dish.
  • Bake uncovered 20 minutes or until juice of chicken is clear when center of thickest part is cut (at least 165°F).
  • On each of 2 plates, arrange tomato and cucumber slices. Drizzle with oil; sprinkle with salt and pepper. Place 1 chicken breast on each plate.

Down the road from my hometown, there is a man who makes the most WONDERFUL organic cheese. His prices are reasonable and of all the varieties he makes, Havarti is my favorite. Now, this is coming from someone who grew up eating nothing but Kraft singles and Velveeta. I am not a big Cheddar person when eating it by itself, but I could eat my weight in Havarti. I love this stuff and could possibly drink it. Oh, and this recipe is my first try at fondue. I'm pretty proud of it!

1/4 cup butter
1/4 cup flour
1 1/2 cups chicken broth
6 cups havarti cheese, shredded

Steps:

  • In heavy 3-quart saucepan, melt butter over low heat. Stir in flour. Cook 3 minutes, stirring constantly.
  • Stir in broth; heat to boiling. Boil 2 to 3 minutes, stirring constantly, until mixture is thick and smooth.
  • Reduce heat to low. Add cheese, 1 cup at a time, stirring over low heat until cheese is melted and mixture is smooth.
  • Pour cheese mixture into a fondue pot or a little crockpot; keep warm over low heat.
  • Serve with various dippers - French bread cubes, crackers, or vegetables.

4 boneless, skinless chicken breast halves
1 (8 ounce) package sliced fresh mushrooms
2 (4 ounce) cans whole green chili peppers, drained, and sliced lengthwise
4 ounces sliced Havarti cheese with dill
Italian dressing
Greek seasoning (optional)
1 tablespoon butter
1 tablespoon white cooking wine
1 tablespoon Worcestershire sauce
1/2 teaspoon garlic salt
salt

Steps:

  • 1. Preheat oven to 400 degrees F (200 degrees C). 2. Marinate chicken in Italian dressing and Greek seasoning, if using, for a minimum of 30 minutes. 3. Place chicken in a 9x13 baking dish. Sprinkle top with additional Greek seasoning, if desired, and bake in preheated oven for approximately 25 minutes, or until juices run clear. 4. Shortly before chicken is done, melt butter in a skillet over medium-high heat until bubbling. Pour in wine, Worcestershire sauce, and garlic salt; bring to a boil. Stir in mushrooms then reduce heat and simmer covered until mushrooms are tender, about 3 to 5 minutes. Adjust seasoning with salt as needed. 5. Remove chicken from the oven. Lay green chili slices on top of each breast then top each chili with a slice of cheese. Return to the oven until cheese has melted. 6. Remove chicken from the oven, top with mushrooms and their pan juices, and serve.
