Time 17m

Number Of Ingredients 14

6 servings rice
4 cloves garlic
1 Tbsp. minced ginger
5 oz. white mushrooms
4 green onions
2 Tbsp. peanut butter (creamy works best)
3 Tbsp. soy sauce
1 tsp. sriracha (or more)
1 Tbsp. honey
1 Tbsp. rice wine vinegar or lemon/lime juice
1 tsp. olive oil
16 oz. ground pork
1/4 tsp. salt
6 oz. spinach

Steps:

  • Cook rice as directed on package. Mince garlic. Peel ginger and mince. Chop mushrooms. Thinly slice green onions.
  • Make peanut sauce: whisk together peanut butter, soy sauce, sriracha (add more if you like spice!), honey, and rice wine vinegar.
  • Heat large pan over medium-high heat. Add olive oil to pan and when hot, add pork to pan. Break up with a wooden spoon for about 1 minute, then add mushrooms, garlic, and ginger to pan. Season with 1/4 tsp. salt. Cook, stirring occasionally, for about 5 minutes.
  • Add spinach to pan, toss with pork and cook for about 1 minute, until wilted.
  • Serve with peanut sauce, sliced green onions and sesame seeds.

PORK IN PEANUT SAUCE

Pork in Peanut Sauce image

A quick and easy, delicious way to serve pork! Can be served over a bed of chopped romaine for a low-carb meal, or noodles for the traditionalists. The oil you use will make all the difference: the peanuttier the better; an obscure brand from the ethnic section of the supermarket is usually a better bet than one of the cheaper, mass-market varieties.

  • Chop the red onion, garlic, ginger, red chilies, spring onion, bok choy, and coriander as indicated in the “Ingredients” section.
  • Heat a large wok over medium-high heat. Once hot, add the ground pork and start breaking up the lumps with a wooden spoon/spatula. Season with kosher salt and cook for 4-5 minutes. Once cooked through, use a slotted spoon to allow the excess grease/liquid to drip off into the wok and transfer to a clean bowl. Wipe out the excess grease in the wok with a paper towel and set it back on the stovetop. (Note: If using ground chicken, you can skip this step as ground chicken is leaner and won’t have extra fat. Add the ground chicken in step 3 and cook it through then.)
