HEALTHY GRANOLA
This delicious healthy granola recipe is naturally sweetened with maple syrup (or honey). It's made with oats, coconut oil and your favorite nuts and fruit. Make it your own! Recipe yields about 8 cups granola, enough for about 16 half-cup servings.

- Preheat oven to 350 degrees Fahrenheit and line a large, rimmed baking sheet with parchment paper.
- In a large mixing bowl, combine the oats, nuts and/or seeds, salt and cinnamon. Stir to blend.
- Pour in the oil, maple syrup and/or honey and vanilla. Mix well, until every oat and nut is lightly coated. Pour the granola onto your prepared pan and use a large spoon to spread it in an even layer.
- Bake until lightly golden, about 21 to 24 minutes, stirring halfway (for extra-clumpy granola, press the stirred granola down with your spatula to create a more even layer). The granola will further crisp up as it cools.
- Let the granola cool completely, undisturbed (at least 45 minutes). Top with the dried fruit (and optional chocolate chips, if using). Break the granola into pieces with your hands if you want to retain big chunks, or stir it around with a spoon if you don't want extra-clumpy granola.
- Store the granola in an airtight container at room temperature for 1 to 2 weeks, or in a sealed freezer bag in the freezer for up to 3 months. The dried fruit can freeze solid, so let it warm to room temperature for 5 to 10 minutes before serving.

HEALTHY GRANOLA
We decided to give granola a makeover, and not just by cutting calories and sweeteners. Yes, we trimmed the sugar-but we also added healthy fats, like olive oil, and increased the fiber by including with almonds, sesame seeds and puffed millet. One 1/2-cup serving delivers 4 grams of fiber and only 8 grams of sugar! Add some milk (for calcium and protein) and your favorite dried or fresh fruit and you've got a complete breakfast or snack.

- Adjust an oven rack to the middle position and preheat the oven to 325 degrees F.
- Toss together the oats, millet, almonds, coconut flakes, pumpkin seeds, sunflower seeds and sesame seeds in a large bowl.
- Whisk together the olive oil, brown sugar, maple syrup, vanilla and 3/4 teaspoon salt together in a small bowl.
- Pour the olive oil mixture into the oat mixture and toss until evenly coated. Spread out on a rimmed baking sheet and bake until golden and toasted, tossing the mixture around about halfway through, 30 to 40 minutes. Let cool completely on the baking sheet, then store at room temperature in an airtight container for up to 1 week.

HEALTHY GRANOLA
This recipe has been in the making for several months. I have tried a number of combinations and this works best. The sugar and fat have been reduced. I can only get two pans in my oven at a time so the cooking time reflects cooking two at a time.

Steps:
- Preheat oven to 300 degrees.
- In a large bowl combine oats, wheat germ, flax seed, coconut, sesame seeds and nuts, mixing well.
- In a large saucepan, combine the brown sugar substitute or brown sugar, water, oil, honey, sorghum, salt, cinnamon and vanilla.
- Heat until thoroughly mixed; do not boil.
- Pour the syrup over dry ingredients and stir until coated well.
- Spread into five 13 x 9 inch jelly roll pans.
- Bake 20 to 30 minutes, stirring occasionally.
- For a crunchier texture, bake an additional 10 to 15 minutes.
- Cool mixture and add dried fruit.
- Store in airtight container in a cool dry place.
- Will keep up to 6 months; but it doens't make it that long in our house.

HEALTHY GRANOLA MIX
Honey-coated nuts, seeds and oats, combined with sweet dried fruits, make an excellent, portable, and nutritious start to the day or carry along snack, without the additives often found in pre-packaged cereals. Serve with low fat milk or low fat yogurt and fresh fruit. The original recipe was from "The Big Bean Cookbook" and has been adjusted to fit our tastes.

- Preheat the oven to 140 C / 275°F.
- Mix together the oats, seeds and nuts in a bowl.
- Heat the oil and honey in a large pan until warm and well blended. Remove the pan from heat.
- Add the oat mixture to the pan and stir well.
- Spread out on one or two baking sheets.
- Bake for about 40-50 minutes until crispy, stirring occationally to prevent the mixture from sticking.
- Remove from the oven and mix in the raisins and cranberries.
- Leave to cool, then store in airtight containers.
- SUBSTITUTIONS: Try a variety of nuts, grains, seeds and dried fruits in this recipe, depending on your individual preferences.
- SERVING TIPS: Serve the granola layered in glass bowls with fresh fruit and yogurt.
