These cranberry-orange muffins are not overly sweet, and big on flavor. Lots of tart cranberries and sweet orange juice/zest kick the flavor up. Best when made with fresh cranberries, fresh orange juice, and lots of pulp! My family loves them without the glaze, but some of my sweet-toothed friends prefer it with, as the muffins are only slightly sweet on their own.

2 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1 ⅓ cups fresh cranberries
¾ cup orange juice
½ cup white sugar
⅓ cup butter, melted, cooled
1 egg
1 orange, zested
1 cup powdered sugar
1 tablespoon orange juice, or more as needed
1 pinch grated orange zest

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line a 12-cup muffin tin with paper liners.
  • Mix together flour, baking powder, baking soda, and salt in a large bowl. Mix in cranberries.
  • Whisk together orange juice, sugar, melted butter, egg, and orange zest in a separate bowl. Add orange juice mixture to flour mixture, stirring just until moistened; do not overmix. Spoon into the prepared muffin cups.
  • Bake in the preheated oven until lightly browned and firm to the touch, 15 to 20 minutes. Cool in the tin for 5 minutes. Transfer to a wire rack and let cool, about 20 minutes.
  • Meanwhile, mix together powdered sugar, 1 tablespoon orange juice, and orange zest for glaze. Add more orange juice, if necessary, to reach desired consistency. Drizzle glaze over cooled muffins.

1 large egg
1 cup plain yogurt
1/4 cup avocado, melted coconut, light olive oil or melted butter
1 cup maple syrup, honey or agave
1 large orange, zest of (1 tbsp)
1 tbsp pure vanilla extract
1 tbsp baking powder
1/4 tsp baking soda
1/4 tsp salt
3 cups whole wheat or spelt flour + 1 tbsp, for dusting berries
2 cups cranberries (fresh or frozen)
1 tbsp sugar (for sprinkling on top)

Steps:

  • Preheat oven to 425 degrees F and spray non-stick 12 muffin tin with cooking spray. Set aside.
  • In a large mixing bowl, whisk the egg for 10 seconds.
  • Add yogurt, oil, maple syrup, orange zest, vanilla extract and whisk. Add baking powder, baking soda and salt; whisk very well until no lumps. Add flour and gently stir until well incorporated. Do not over mix otherwise muffins will be tough.
  • In a medium bowl, add cranberries and 1 tbsp flour, stir to coat with a spoon. Add to the bowl with batter and give a few more gentle stirs to incorporate.
  • Using an ice cream scoop, divide batter between 12 openings of previously prepared muffin tin and sprinkle with sugar.
  • Bake for 10 minutes in preheated to 425 degrees F oven. Reduce heat to 375 degrees F (no need to wait for oven to cool off) and bake for another 13 minutes or until a toothpick inserted in the centre comes out clean.
  • Remove from the oven, let muffins cool for about 5 minutes and transfer to a cooling rack to cool off a bit more.

They're also full of sweet orange flavor, which pairs wonderfully with the tart fresh cranberries. These muffins will keep for at least one week if stored in an airtight container in the refrigerator.

Number Of Ingredients 14

¾ cup (75g) instant oats (gluten-free if necessary and measured like this)
½ cup (120g) plain nonfat Greek yogurt
¾ cup (210mL) nonfat milk, divided
2 tsp vanilla extract
2 cups (240g) white whole wheat flour or gluten-free* flour (measured like this)
1 ½ tsp baking powder
¾ tsp baking soda
½ tsp salt
2 ½ tbsp (17g) freshly grated orange zest (about 2 extra large)
½ tbsp (7g) unsalted butter or coconut oil, melted and cooled slightly
2 large egg whites, room temperature
1 ½ tsp liquid stevia
½ cup (120mL) freshly squeezed orange juice (about 1 extra large)
1 ½ cups (150g) whole fresh cranberries, diced

Steps:

  • Preheat the oven to 350°F, and coat 13 muffin cups with nonstick cooking spray. (If using liners, then line 13 muffins cups with liners and coat them with cooking spray.)
  • In a medium bowl, stir together the oats, Greek yogurt, ¼ cup of milk, and vanilla extract. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Whisk in the orange zest. In a third bowl, whisk together the butter, egg whites, and liquid stevia. Stir in the orange juice. Stir in the oat mixture, mixing until no large lumps remain. Alternate between adding the flour mixture and remaining ½ cup of milk, beginning and ending with the flour mixture, and stirring just until incorporated. 1 cup buttermilk
1/3 cup shortening

1/2 teaspoon baking soda
1 teaspoon salt

Steps:

  • Combine the chopped cranberries and white sugar.
  • Set aside.
  • In a second bowl, combine the oats and buttermilk.
  • Allow the mixture to stand for 45 min-1 hour.
  • In a large bowl, mix the shortening, brown sugar, and egg.
  • Stir the baking powder, baking soda, salt and flour together.
  • Then add the dry mixture into the wet, alternating with additions of the oat-buttermilk mixture.
  • Combine everything until just moistened.
  • Fill greased muffin tins 3/4 full.
  • Bake in a 400 degree oven for 25 minutes, or until a tester comes out clean.

I've eaten 2 just now and had to make myself stop. Original version of this I was inspired from is recipe #75662 on this site.

1/4 cup sugar
1/4 cup brown sugar
1/4 cup unsweetened flaked coconut

1/4 cup oat bran
3 teaspoons baking powder
1/2 teaspoon kosher salt
1/3 cup coconut butter, melted
3/4 cup orange juice
2 large eggs
1/2 cup pepitas (raw hulled pumpkin seeds)
turbinado sugar, for sprinkling on top before baking

Steps:

  • NOTE: If not using coconut flour then you can probably use ½ cup of OJ. Coconut flour requires more liquid.
  • Preheat oven to 400 degrees F.
  • Line muffin tins with paper cups. - I love the new parchment ones they have in grocery stores now.
  • In a bowl, stir together cranberries & regular sugar.
  • In a large bowl sift together flours, oat bran, coconut flakes, baking powder, salt and brown sugar.
  • Whisk eggs, OJ, and melted butter and then add to dry ingredients all at once and stir until moistened.
  • Fold in sugared cranberries.
  • Scoop into prepared muffins liners evenly .
