- Heat oven to 160C/140C fan/gas 3. Grease and line a 2lb loaf tin with baking parchment (allow it to come 2cm above top of tin). Mix the sugar, flour, bicarb, cocoa and chocolate in a large bowl.
- Mash the bananas in a bowl and stir in the whole egg plus 2 yolks, followed by the oil and milk. Beat the egg whites until stiff. Quickly stir the wet banana mixture into the dry ingredients, stir in a quarter of the egg whites to loosen the mixture, then gently fold in the rest. Gently scrape into the tin and bake for 1 hr 10-15 mins, or until a skewer inserted comes out clean.
- Cool in the tin on a wire rack. To make the icing, melt the chocolate and soured cream together in a heatproof bowl over a pan of barely simmering water. Chill in the fridge until spreadable. Remove cake from tin, roughly swirl icing over and scatter with the banana chips.

- Heat oven to 160C/140C fan/gas 3. Butter and line the base of an 18cm Bundt mould or round cake tin with baking parchment. Put the flour, cinnamon, butter, sugar, eggs and honey in a large mixing bowl and beat with a wooden spoon or hand-held electric mixer until light and fluffy.
- Mash the bananas and chop the dates. Stir into the cake mix with the walnuts. Spoon into the prepared tin and smooth the top. Bake for 40-50 mins until firm to the touch and a skewer inserted into the centre comes out clean (a round tin may take 10-20 mins more). Cool in the tin for 15 mins, then turn out and cool on a wire rack.
- To make the glaze, put the honey and butter in a small pan and bring to the boil, stirring until the butter has melted. Boil briefly, about 1 min, until slightly thickened. Remove from the heat and stir in the walnuts. Leave to cool until thickened and opaque. Spoon over the top of the cake and leave to set.

- Preheat oven to 300 degrees. In a large bowl, combine the flour, baking powder, baking soda, salt, and sugar. Blend in the melted butter, mixing together until moist. Add 1/4 cup of the buttermilk and combine.
- In a separate bowl, combine the other 1/4 cup of buttermilk with the eggs and blend into the flour mixture. Add the vanilla and mashed bananas. Beat for 1 minute. Place the batter in a greased 9-by-13-by-2-inch pan.

- Preheat oven to 400°. In a microwave, melt chocolate and butter; stir until smooth. Cool. Beat eggs, sugar, vanilla and salt on high speed until thick and pale, about 5 minutes. - Preheat oven to 350ºF.
- Grease 6-4 oz ramekins with butter and dust with flour.
- Sift together flour, baking soda, baking powder and salt together and set aside.
- Mix vegetable oil and sugar in mixing bowl, using electric mixer at medium speed until smooth.
- Beat in eggs and mashed bananas, using low speed.
- While continuing to beat at low speed, add sifted dry ingredients, slowly.
- Continue beating until mixture is thoroughly blended.
- Divide batter among prepared ramekins.
- Arrange ramekins on baking sheet and bake for 18-20 minutes until cakes are firm to touch and toothpick inserted into center comes out clean.
- Place on wire rack and cool for at least 5 minutes.
- Cakes should be served warm.
- MAKE THE SAUCE:.
- Place chocolate in bowl.
- Heat milk and cream in saucepan to simmer over medium heat.
- Pour over chocolate and let stand to soften chocolate.
- Whisk until blended.
- Whisk in vanilla extract.
- Set aside keeping sauce warm.
- MAKE CARAMELIZED BANANAS:.
- Place butter and sugar in skillet over high heat.
- Cook until sugar turns amber and caramelizes.
- Add sliced banana and continue cooking until completely coated.
- Remove from heat immediately.
- Remove cakes from ramekins and place onto individual plates.
- Pour hot chocolate sauce around cake, place scoop of vanilla ice cream onto plate.
- Arrange 3 of caramelized bananas around cake cake and garnish with walnuts.
- Serve immediately.
- Enjoy!
BANANA CHOCOLATE CHIP CAKE
Steps:
- Spray the bottom of a 1 1/2-quart souffle dish with cooking spray. Line the bottom of the souffle dish with parchment paper and give a quick spray with cooking spray; set aside.
- Make a foil ring 1-inch thick for the souffle dish to sit on inside a 5-quart slow cooker.
- In a medium bowl, combine the bananas with the hazelnut liqueur. Add the muffin mix, evaporated milk, oil, vanilla extract, cinnamon, chocolate chips and egg. Stir together until just blended.
- Transfer to the prepared souffle dish. Place the dish on top of the foil ring in the slow cooker. Lay 8 paper towels over top of the slow cooker bowl and secure with the lid. (This helps to trap steam.) Cook on LOW setting for 4 to 5 hours.
- Remove the cake and allow to cool completely.
- Cut the cake in half horizontally. Stir the rum extract into the cream cheese frosting and frost in between the layers and outside of the cake with the mixture. Garnish the sides of cake with chopped walnuts. Slice and serve.

- Mix instant coffee with water set aside for later. Sift flour, cocoa powder, baking soda and baking powder together taking care that all the components are well combined and evenly distributed. In the bowl of a stand mixer, mix the butter and shortening with paddle attachment on 2nd speed until combined. Add sugar, sour cream, vanilla extract, coffee mixture, and salt starting on 1st seed and gradually moving to 2nd speed until light and fluffy (approximately 8 minutes). BROWN BUTTER BANANA CHOCOLATE CHIP SHEET CAKE

- Preheat the oven to 350ºF. Line a 9 x 13 " sheet pan with parchment paper or grease and flour it. Set aside.
- In a medium sauce pan brown the butter over medium heat, whisking constantly until the butter begins to foam and brown. Keep a close eye on it and don't let it boil! You'll know it's done when it starts to smell toasted and nutty and takes on a golden hue.
