HEALTHY, EASY RAMEN FOR ONE
I created this recipe as a combo of some of my favorite soups: Pho, Miso Soup, Ramen, and PF Chang's Spicy Chicken Noodle Soup. It is simple, easy, healthy, and delicious. Plus, the ingredients don't cost very much. Enjoy!

Steps:
- Pour broth in pot and turn on heat to medium high.
- Thinly slice mushrooms and place in broth as it heats up.
- Add the sriracha and hoisin to the broth and cook for 4 minutes.
- Thinly slice bok choy and stir in with mushrooms, cook for 4 minutes.
- Dice one green onion and add to pot.
- Dice tofu and add to pot, cook for 4 minutes.
- Dice tomatoes and add to pot.
- Add broken up noodles to pot, cook for 3 minutes (or as per package on noodles).
- Squeeze half a lime (about 1tsp of juice) and add chopped cilantro.
- Stir in a handful of loose spinach leaves.
- Turn off heat and place in bowl.

EASY HOMEMADE RAMEN
The easiest ramen you will ever make in less than 30 min. And it's so much tastier (and healthier) than the store-bought version!

Steps:
- Place eggs in a large saucepan and cover with cold water by 1 inch. Bring to a boil and cook for 1 minute. Cover eggs with a tight-fitting lid and remove from heat; set aside for 8-10 minutes. Drain well and let cool before peeling and halving. Heat olive oil in a large stockpot or Dutch oven over medium heat. Add garlic and ginger, and cook, stirring frequently, until fragrant, about 1-2 minutes. Whisk in chicken broth, mushrooms, soy sauce and 3 cups water. Bring to a boil; reduce heat and simmer until mushrooms have softened, about 10 minutes. Stir in Yaki-Soba until loosened and cooked through, about 2-3 minutes. Stir in spinach, Narutomaki, carrot and green onions until the spinach begins to wilt, about 2 minutes. Serve immediately, garnished with eggs.
CHEAT'S CHICKEN RAMEN
This speedy version of the classic Japanese noodle soup makes a delicious everyday dinner or warming lunch - and it's low in fat and calories too

- Set a large saucepan over a medium heat and pour in the stock. Finely chop the coriander stalks and add to the stock with most of the chilli. Bring to the boil and add 200ml water. Once boiled, reduce the heat and simmer for 5-10 mins to infuse the coriander and chilli.
- Add the soy sauce and a grinding of black pepper, then the mushrooms, pak choi, chicken and noodles. Simmer for 2 mins until the noodles soften, before adding the bamboo shoots.
- Serve in deep bowls topped with coriander leaves and the remaining chilli slices.
