HONEY GRANOLA

Honey Granola image

This recipe came about from tinkering with a few granola recipes. I wanted something that tasted really good, using ingredients that I usually have in the house, that was fast to make and on the whole, somewhat healthy.

CRUNCHY FRUITY GRANOLA

Crunchy Fruity Granola image

Adapted from a recipe from Mollie Katzen's 'Salad People'. I haven't tried it yet, but it sounds like a good recipe. It's a little different from the scores of other granola recipes already here. Time doesn't include cooling time.

Time 40m

Yield 8 serving(s)

Number Of Ingredients 10

3 cups rolled oats
1 1/4 cups nuts, chopped (such as almonds, cashews, and hazelnuts)
1/2 cup sunflower seeds
1/4 cup flax seed
1/2 teaspoon salt (omit if using salted nuts) (optional)
1/3 cup brown sugar
3/4 cup canola oil
1/2 cup honey
1 tablespoon vanilla extract
1 cup assorted dried fruit (such as raisins, dried tropical fruit mix, and dried berries)

Steps:

  • Preheat the oven to 325°F Spray two rimmed baking sheets with nonstick cooking spray.
  • In a large bowl mix together the oats, seeds, nuts, salt (if desired), and brown sugar.
  • Combine the oil, honey, and vanilla extract and pour over the oat mixture. Mix thoroughly.
  • Bake for about 30 minutes, stirring several times to ensure even toasting. If both trays don't fit on one rack, switch the trays' positions after 15 minutes. Allow granola to cool in trays.
  • When the granola is cool, place it in a bowl and stir in the fruit. Store in an air-tight canister on the counter. If there is any left that won't fit, store it in a ziplock bag or jar in the freezer.

HONEY CRUNCH GRANOLA WITH ALMONDS & APRICOTS

Honey crunch granola with almonds & apricots image

Vary the flavour of your cereal by adding whatever nuts, seeds and dried fruit you like

Provided by Good Food team

Categories     Breakfast

Time 30m

Number Of Ingredients 6

200g clear honey
4 tbsp mild-flavoured oil , such as sunflower or rapeseed
300g rolled oats
100g whole unblanched almonds
1 tsp ground cinnamon
140g dried apricots , roughly chopped

Steps:

  • Heat oven to 180C/160C fan/gas 4. In a large pan, heat the honey and oil together until bubbling, then tip in the oats, almonds and cinnamon. Stir well until the oats are well coated, then tip onto 1-2 large baking sheets, spreading the mixture out. Bake for 20-25 mins, stirring halfway, until golden.
  • Remove from the oven and, while still hot, stir in the apricots. Spread out again and press down with a spatula to cool - this will help it to clump together. Once cool, serve with yogurt or milk, and fruit, if you like. Will keep in an airtight container for 3 weeks. See 'Goes well with' for recipes using your granola.

CRUNCHY GRANOLA

This stuff is addicting! I don't remember where I got the recipe, but I have been making this since I was a teenager. The measurements for the oats and coconut are just guidelines; you can adjust it to your liking or what you have on hand. Let me know how you like it.

Time 1h5m

Yield 12 serving(s)

Number Of Ingredients 11

4 -8 cups oats
2 cups wheat germ
1 1/2 cups unsalted nuts (sunflower, almonds, cashews)
1 -1 1/2 cup flaked coconut
1/4 cup sesame seeds (optional)
1 cup raisins
1 cup vegetable oil
2/3 cup water
1 teaspoon real vanilla extract
1/4 teaspoon salt
2/3 cup honey (I use clover honey)

Steps:

  • Preheat oven to 325 degrees F. In a large bowl, mix together the ingredients for Oat Mixture.
  • In a small to medium bowl, separately mix together the first 4 ingredients for Oil Mixture.
  • Add Oil Mixture (not the honey yet) to the Oat Mixture; blend well.
  • Then add in the honey. Mix well.
  • Spread thinly and evenly on cookie sheets (for ease of preparation, use rimmed cookie sheets).
  • Bake at 325 d F for 30 minutes, stirring occasionally until golden (stir @ every 12-15 minutes).
  • After baking, remove from oven and let granola cool on cookie sheets.
  • Remove granola from cooled pans and it's ready to eat, or store covered for about 2 weeks.
  • Makes a nice food gift.
  • Yield is approximate & depends on amounts used.
