1 1/2 teaspoons Dijon mustard
1 large garlic clove

  • Place all ingredients in a blender or food processor.
  • Puree until smooth and emulsified.

3 tbsp (45 mL) lemon juice
1 1/2 tbsp (22 mL) red wine vinegar
1 1/2 tbsp (22 mL) Worcestershire sauce
2 tsp (10 mL) anchovy paste
2 tsp (10 mL) Dijon mustard
1/2 tsp (2 mL) black pepper
2 garlic cloves, pressed
2 tbsp (30 mL) olive oil or canola oil

2 Tbsp. olive oil
1 Tbsp. Dijon mustard
1 Tbsp. anchovie paste
2 tsp. Worcestershire sauce
1 tsp. minced garlic (2 cloves)
1/2 tsp. garlic salt
1/4 tsp. fresh ground pepper

Steps:

  • In a mixing bowl, add the yogurt, Parmesan cheese, lemon juice, olive oil, mustard, anchovie paste, Worcestershire sauce, garlic, garlic salt and pepper. Whisk well until all ingredients are combined.
  • Add to your salad right away.
  • Refrigerate any leftover dressing in an airtight container or mason jar with a tight-fitting lid for up to 5 days.

Steps:

Add more or less red wine vinegar and lemon juice depending on your preference of acidity and consistency of the dressing. If you prefer the dressing to be looser but less acidic, use water instead of vinegar.

I created this Caesar Dressing several years ago when I was catering. People loved it and I just give it out. I tried to make it with low fat mayo but it was not the same. This recipe makes about one quart. I have yet to find a any Caesar Dressing in any restaurant that can beat this one. I have also added artichoke hearts or grilled chicken breasts. I will add my Chicken Adobe recipe that is great with this salad.

8 garlic cloves
4 teaspoons Worcestershire sauce
1/2 cup red wine vinegar

4 dashes Tabasco sauce
2 cups mayonnaise
1 cup olive oil
1 cup canola oil

¼ cup egg substitute
¼ cup freshly grated Parmesan cheese
2 tablespoons water
3 cloves garlic, finely chopped
1 ½ tablespoons lemon juice
1 tablespoon anchovy paste
2 teaspoons white sugar
½ teaspoon dried parsley
salt and ground black pepper to taste

Steps:

2 tablespoons fresh lemon juice (one small lemon)
1 teaspoon Worcestershire sauce
3 dashes hot sauce (like Tabasco)
1 1/2 tablespoons Dijon mustard
2 large egg yolks
1/3-1/2 cup extra virgin olive oil or 1/3-1/2 cup canola oil
2 heads romaine lettuce, outer leaves discarded, inner leaves washed and dried (ten-ounce heads)
1 cup freshly grated parmesan cheese or 1 cup romano cheese
crouton (to garnish)

Steps:

  • In a large wooden bowl, using a wooden spoon, mash chopped garlic cloves to a fine paste with salt.
  • Stir in egg yolks and Dijon mustard.
  • Add anchovies, and grind to a paste.
  • Add lemon juice, Worcestershire, hot sauce and season with pepper.
  • Slowly whisk in olive/canola oil until dressing is creamy.
  • Add lettuce to bowl, and toss to coat leaves thoroughly with dressing and grated Parmesan.
  • Sprinkle croutons over salad.
