We're transporting you to the old-fashioned diner for a plate of fluffy buttermilk pancakes. Our recipe has both baking powder for an airy and light interior and baking soda for that even golden-brown exterior. We love the tang of buttermilk and the richness of butter for an even cakier stack. This recipe is easy enough for a fast breakfast with the kids or doubled for a weekend brunch with friends.

3 cups all-purpose flour (see Cook's Note)
1/3 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon kosher salt
2 large eggs
2 1/2 cups buttermilk
1 teaspoon pure vanilla extract
1 stick unsalted butter, melted and cooled, plus more for brushing
Butter and maple syrup, for serving

Steps:

  • Whisk the flour, sugar, baking powder, baking soda and salt in a large bowl. Whisk the eggs, buttermilk, vanilla and melted butter in a medium bowl until incorporated. Whisk the egg mixture into the flour mixture until just combined (it's OK if there are a few lumps).
  • Heat a griddle or large nonstick skillet over medium heat; lightly brush with butter. Pour 1/2 cup batter onto the griddle for each pancake and cook until bubbles form on top and the bottom is lightly browned, about 3 minutes. (If the pancakes are browning too quickly, reduce the heat to medium-low.) Flip and continue cooking until golden on the other side, about 1 more minute. Transfer to a plate. Repeat with the remaining batter, brushing the pan with more butter as necessary. Serve with butter and syrup.

These light & fluffy pancakes are the best I've ever had! They have a slight tang from the iconic buttermilk and lots of rich butter flavor. Serve them warm with real maple syrup, a bit of butter, fresh fruit, or anything your heart desires!

Yield 16 silver dollar sized pancakes

Number Of Ingredients 10

1 cup + 2 tbsp (135g) whole wheat pastry flour, all-purpose flour, or gluten-free* flour (measured like this)
1 tsp (3g) baking soda
½ tsp (2g) baking powder
¼ tsp (2g) salt
½ tbsp (7g) unsalted butter, melted
1 large egg
1 ½ tsp (8mL) vanilla extract
½ cup (120mL) low-fat buttermilk, room temperature (see Notes!)
1 tsp (5mL) pure maple syrup
¼ cup (60g) plain nonfat Greek yogurt

Steps:

  • Whisk together the flour, baking soda, baking powder, and salt in a medium bowl. In a separate bowl, whisk together the butter, egg, and vanilla. Whisk in the buttermilk and maple syrup. Stir in the yogurt until no large lumps remain. Add in the flour mixture, and stir until just incorporated.
  • Lightly coat a large pan or griddle with nonstick cooking spray, and preheat over low heat.
  • Using 2 tablespoons of batter for each pancake, dollop onto the hot pan, and spread into a circular shape if desired. Let the pancakes cook for 2-3 minutes, or until a slight skin starts to form around the edges and the bottom is light golden brown. Slide a spatula underneath, and flip. Continue to cook for another 1-2 minutes or until light golden brown on both sides. Serve hot.

2 cups whole wheat flour
1/2 cup oat bran
1 teaspoon baking powder
1 teaspoon baking soda
1 tablespoon sugar
1 1/2 cups 1% low-fat milk
1 cup skim milk
2 1/2 tablespoons lemon juice
2 eggs
1 teaspoon orange zest (optional)
1 1/2 teaspoons cinnamon (to taste)
1 tablespoon additional lemon juice

Steps:

  • Combine the 2 milks and the 2 1/2 tablespoons lemon juice and let sit for about 10 minutes.
  • Sift together the flour, bran, baking powder, baking soda, cinnamon, orange zest, and sugar into a large bowl.
  • In a separate bowl, whisk together the eggs, milk and lemon juice, and additional 1 tablespoon lemon juice.
  • Pour the wet ingredients into the dry ingredients and whisk together until there are no more lumps.
  • Spray a preheated (to proper pancake temperature) griddle with Pam.
  • Cook pancakes on griddle.

1 tablespoon Splenda sugar substitute
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 cup egg substitute
1 cup low-fat buttermilk
2 tablespoons prune puree

Steps:

  • Mix together dry ingredients.
  • In a separate bowl lightly beat together egg, buttermilk, and apple butter (prune puree may be substituted for any pureed fruit or fat replacement product).
  • Mix dry and wet together.
  • Let stand a few minutes for oat bran to absorb the liquid. Preheat griddle to medium high.

3 cups all-purpose flour
3 tablespoons white sugar
3 teaspoons baking powder
1 ½ teaspoons baking soda
¾ teaspoon salt
3 cups buttermilk
½ cup milk
3 eggs
⅓ cup butter, melted

Steps:

  • In a large bowl, combine flour, sugar, baking powder, baking soda, and salt. In a separate bowl, beat together buttermilk, milk, eggs and melted butter. Keep the two mixtures separate until you are ready to cook.
  • Heat a lightly oiled griddle or frying pan over medium high heat. You can flick water across the surface and if it beads up and sizzles, it's ready!
  • Pour the wet mixture into the dry mixture, using a wooden spoon or fork to blend. Stir until it's just blended together. Do not over stir! Pour or scoop the batter onto the griddle, using approximately 1/2 cup for each pancake. Brown on both sides and serve hot.

1 -2 tablespoon vegetable oil or 1 -2 tablespoon cooking spray

Steps:

  • In a bowl, using an electric mixer, beat the eggs on medium speed until frothy.
  • Add the buttermilk, melted butter and vanilla and mix well.
  • Add the flour, sugar, baking powder, baking soda and salt, and beat on medium speed just until blended. (You may have a few lumps, but don't worry about it).
  • You can also mix this together using a wooden spoon or whatever you have.
  • Heat lightly greased griddle at 350 degrees.
  • Pour about 1/3 cup of the batter onto griddle for each pancake.
  • Cook until the tops of the pancakes are covered with tiny bubbles and the batter is set, about 4-6 minutes. Flip pancakes and cook until the undersides are golden brown, about 4 minutes more.
  • Repeat with remaining batter.
