This was on the table at a potluck cast party/Christmas party, and I hunted down the chef and begged her for the recipe. I'm not usually a nuts-in-nondesserts kind of person, but this stuff is amazing! Trust me, try it...

1 pound bacon
1 cup mayonnaise
2 teaspoons cider vinegar
½ cup white sugar
2 pounds fresh broccoli, broken into florets
½ cup raisins
1 cup roasted cashews
¼ red onion, finely chopped

Steps:

  • Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned and crisp, about 10 minutes. Drain the bacon slices on a paper towel-lined plate. Cool bacon and crumble into pieces.
  • Whisk together the mayonnaise, cider vinegar, and sugar in a mixing bowl until the sugar has dissolved. Add the broccoli, raisins, cashews, onion, and crumbled bacon. Stir until evenly coated. Cover and refrigerate the salad for at least 2 hours. Let stand at room temperature 15 to 20 minutes before serving.

6 cups fresh broccoli florets
2 medium tomatoes, cut into 1/2-inch chunks
3 tablespoons chopped red onion
1 can (2-1/4 ounces) sliced ripe olives, drained
1 cup mayonnaise
1 tablespoon soy sauce
2 teaspoons lemon juice
1-1/2 teaspoons seasoned salt
1/8 teaspoon pepper
1/2 cup salted cashews
Lettuce leaves

Steps:

  • Place the broccoli in a saucepan with a small amount of water. Cover and cook for 5-8 minutes or until crisp-tender. Rinse in cold water; drain and place in a large bowl. Add the tomatoes, onion and olives; toss. , In a small bowl, combine the mayonnaise, soy sauce, lemon juice, seasoned salt and pepper. Add to broccoli mixture; toss to coat. Stir in cashews. Serve on lettuce.

1 head broccoli, florets separated
1/2 red onion, sliced thinly
1 granny smith apple, diced
1/2 cup shredded cheddar cheese (could use any cheese you like -- blue, feta, swiss)
1/2 cup cashews
5 slices bacon, cooked and crumbled
6 tablespoons cider vinegar
1 tablespoon vegetable oil
2 tablespoons Dijon mustard
1 tablespoon sugar (can use less or up to 2 T)
1/2 teaspoon cracked black pepper
1/4 teaspoon salt (or to taste)

Steps:

  • In a large bowl, combine broccoli, onion, apples and cheese.
  • In a small bowl, wisk together vinegar, oil, mustard, sugar and salt and pepper to taste.
  • Toss dressing with broccoli mixture. Refrigerate until ready to serve.
  • Toss with cashews and crumbled bacon upon serving.

1 small red onion, chopped
1/2 cup raisins
1 cup cashew halves (or pieces)
1 cup mayonnaise
1/4-1/2 cup sugar
2 tablespoons apple cider vinegar

Steps:

  • Wash broccoli thoroughly, drain. Cut into bite-size flowerets.
  • Combine mayonnaise, sugar and vinegar, stirring until well blended.
  • Combine broccoli, bacon bits, onion and raisins in large bowl. Toss with mayonnaise dressing. Chill for several hours or overnight. Stir in cashews before serving. Enjoy! 6 to 8 servings.

2 medium head fresh broccoli, washed and trimmed (do not use frozen)
1/2 cup red onion, finely chopped
1/2 lb bacon, cooked and crumbled
1 cup roasted cashews (or roasted sunflower seeds)
1/2 cup canned mandarin orange segments, chopped and drained (or raisins)
1 1/4 cups grated mozzarella cheese (optional)
3 tablespoons cider vinegar
2 tablespoons vegetable oil
3/4 cup good quality mayonnaise (such as Hellman's or Best Foods)
1/3 cup sugar
1/4 teaspoon salt
1/2 teaspoon fresh ground black pepper

Steps:

  • Chop the broccoli into bite-sized florets.
  • Mix together broccoli, red onion, bacon, cashews, mandarin oranges, and mozzarella (if using) in a large bowl.
  • In a separate bowl combine vinegar, sugar, oil, and mayo. Whisk in the salt and pepper.
  • Pour over broccoli mixture and toss to coat.

This is a cold salad with a lightly sweetened dressing. I created it after sampling a similar salad at a party. I made it "kid friendly"- no onion, nothing really strong in it. As a result, my kids love it- want it in their lunchboxes, etc... It is easily modified by using optional raisins, real sugar instead of artificial sweetener, using peanuts instead of cashews.

1 lb fresh broccoli florets
6 slices bacon, cooked crisp and chopped coarse
1/3 cup cashews, cut coarse
1/2 cup mayonnaise, Best Foods, Hellmanns Mayonnaise
1/4 cup heavy cream
3 (1 g) packets Splenda sugar substitute
1/2 cup raisins (optional)
salt and black pepper

Steps:

  • In a good size pot (6 quart or larger) of boiling water, place the florets of broccoli and cook until water just reaches a boil again. This will result in tender-crisp broccoli.
  • Once water reaches a boil, remove broccoli from heat and dump into a colander.
  • Douse with cold water to stop the cooking.
  • In a bowl, mix the mayo, cream and Splenda.
  • Stir in the nuts and bacon (and optional raisins).
  • Lightly toss in the broccoli.
  • Taste and adjust seasonings, adding salt and pepper, a little extra mayo, Splenda or cream if needed.
  • Refrigerate.

1/2 cup raisins
1 cup mayonnaise

Steps:

  • Cook pasta according to the package directions. In a large bowl, combine the broccoli, onion and raisins. Set aside. In a small bowl, combine the mayonnaise, sugar and vinegar. Toss the sauce with the broccoli mixture and add the cashews. Toss with the pasta. I'm guessing on the amount of time as I usually forget to do this.
