"Waffles are my husband's favorite Sunday brunch," shares Lori Daniels from Beverly, West Virginia. "We like them with fresh fruit on the side."

1 cup all-purpose flour
2 tablespoons sugar
1 teaspoon baking powder
1/4 teaspoon salt
1 large egg yolk
1/4 cup fat-free milk
1/4 cup orange juice
1 tablespoon butter, melted
1 teaspoon grated orange zest
1/8 teaspoon orange extract
4 large egg whites
1 cup fresh blueberries
1 tablespoon confectioners' sugar

Steps:

  • In a large bowl, combine the flour, sugar, baking powder and salt. In another bowl, whisk the egg yolk, milk, orange juice, butter, orange zest and extract; stir into dry ingredients just until combined. In a small bowl, beat egg whites until stiff peaks form; fold into batter. Fold in blueberries. , Bake in a preheated waffle iron according to manufacturer's directions until golden brown. Sprinkle with confectioners' sugar.

Number Of Ingredients 13

1 cup white flour
1 cup whole wheat white flour or 1 cup white flour
1 tablespoon baking powder
1/2 teaspoon sea salt
2 tablespoons sugar
1/3 cup ground flax seeds (optional)
2 eggs
1 1/2 cups buttermilk
3 tablespoons melted butter, plus extra to top waffles
1/2 teaspoon vanilla
1 cup fresh blueberries or 1 cup frozen blueberries, plus extra for topping cooked waffles
1/2 cup maple syrup and powdered sugar to top cooked waffle
2 -3 tablespoons cooking oil, to brush waffle iron

Steps:

  • Mix together in large bowl flours, baking powder, salt sugar and flax.
  • Add eggs and buttermilk, and mix in with flour mixture.
  • Add melted butter and vanilla and mix altogether into a smooth texture.
  • Add fresh blueberries. If you use frozen blueberries, dust with a couple tablespoons of flour to prevent berries from bleeding blue color into the batter.
  • Heat up waffle iron and brush with cooking oil, add blueberry waffle batter and cook per directions of your waffle iron. I like to cook them until they are golden brown and slightly crispy.
  • Top finished waffles with maple syrup, a dusting of powdered sugar and more blueberries.

I am fortunate to have four blueberry bushes in my back yard, and they supply me with fresh blueberries all summer long. This is one of the recipes that I use to help use up the massive amount of berries that I pick each summer.

Number Of Ingredients 12

3 egg yolks, beaten
1 ⅔ cups milk
2 cups all-purpose flour
2 ¼ teaspoons baking powder
½ teaspoon salt
¼ cup melted butter
3 egg whites, stiffly beaten
⅔ cup blueberries
1 ½ cups blueberries
3 tablespoons honey
½ cup orange juice
1 tablespoon cornstarch

Steps:

  • In a medium bowl, whisk together egg yolks and milk. Stir in flour, baking powder and salt. Stir in butter, and set mixture aside for about 30 minutes.
  • Preheat a lightly greased waffle iron.
  • Fold egg whites and 2/3 cup blueberries into the mixture. Scoop portions of the mixture into the prepared waffle iron, and cook until golden brown.
  • To prepare the sauce, in a medium saucepan over medium heat, mix 1 1/2 cups blueberries, honey and 1/4 cup orange juice. Bring to a boil. Mix remaining orange juice and cornstarch in a small bowl, and stir into the blueberry mixture. Stir constantly until thickened. Serve warm over waffles.

2 cups all purpose flour, spooned and leveled, plus 1 teaspoon for dusting berries
2 tablespoons sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 cups low-fat buttermilk
1/2 cup (1 stick) unsalted butter, melted and cooled
2 large eggs
1 cup fresh blueberries (6 ounces), plus more for serving
Nonstick cooking spray
Sweetened creme fraiche and confectioners' sugar, for serving

Steps:

  • Preheat oven to 275 degrees; set a rack on a baking sheet and place in oven. Preheat waffle iron according to manufacturers instructions.
  • In a medium bowl, whisk together flour, sugar, baking powder, baking soda, and salt; set aside. In a large bowl whisk together buttermilk, butter, and eggs. Add flour mixture to buttermilk mixture and stir just until batter is combined. Toss berries in 1 teaspoon flour; fold into batter.
  • Lightly coat waffle iron with cooking spray. Pour 1 cup batter (this may vary depending on size of waffle iron) in the center of iron, spreading evenly with a spatula. Close iron; cook until waffles are golden brown and crisp, 7 to 8 minutes. Remove from iron and quickly toss back and forth from hand to hand to cool slightly and allow waffles to crisp up. Transfer to rack in oven; repeat with remaining batter. Serve with blueberries, creme fraiche, and a sprinkle of confectioners' sugar.

Bring to a boil. Combine cornstarch and remaining orange juice until smooth; gradually stir into berry mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve warm with waffles.

These are my 2 blueberry lovin' guys most favorite waffle. They will even eat them with blueberry syrup! I always double this and if there are any left they go in the freezer. DBF Rick will eat these like a cookie and likes them hot and crispy with a scoop of ice cream on top!

3 teaspoons baking powder
2 eggs, separated
1 tablespoon sugar
2 cups sifted flour
1 1/2 cups milk
1/2 teaspoon salt
1/4 cup melted butter

Steps:

  • Preheat the waffle iron.
  • Beat egg whites til stiff and set aside.
  • Sift together dry ingredients.
  • Slowly stir in milk, beaten egg yolks and melted butter.
  • Fold in blueberries.
  • Fold in egg whites which were stiffly beaten.
  • Bake in hot waffle iron.
