2 1/2 lbs apples, peeled, quartered, cored, and sliced to yield about 6 cups (about 6 medium, Granny Smith works well)
2 -3 tablespoons sugar
1/4 teaspoon ground cinnamon
1 tablespoon all-purpose flour
1 cup all-purpose flour
5 tablespoons brown sugar
2 tablespoons sugar
1/2 cup finely chopped nuts (I like pecans)
4 ounces unsalted butter, cut into small pieces and chilled

Steps:

  • Preheat oven to 350.
  • To make the filling--In a 9-inch pie pan that's 2 inches deep (or a similar baking pan), toss the apples with the sugar to taste, cinnamon, and flour.
  • To make the topping--In a medium bowl, mix together all the topping ingredients with your fingers or a pastry cutter until small pebbly pieces of butter are distributed throughout the mixture.
  • Sprinkle the entire mixture over the apples.
  • Bake until the topping is golden and the fruit is bubbling and tender, about 1 hour and 15 minute.
  • for a large crisp and 1 hour for individual crisps.
  • Cool slightly before serving.
  • You can make individual crisps by dividing the filling and topping among six ramekins or individual gratin dishes.
  • Serve with heavy cream or a scoop of vanilla ice cream.
  • Serves six.

5 medium baking apples, such as McIntosh or Cortland, peeled, cored and sliced
2 tablespoons sugar
1 talbespoon lemon juice
2 teaspoons cinnamon
⅔ cup whole wheat flour
½ cup rolled oats
½ cup packed light brown sugar
2 tablespoons vegan butter such as Earth Balance
2 tablespoons grapeseed oil (neutral flavored)
2 tablespoons apple juice
⅓ cup coarsely chopped pecans
½ teaspoon ground cardamom
½ teaspoon ground allspice

Steps:

  • 1 Preheat oven to 375°F. Coat a large deep pie plate with cooking spray.2 Combine apples with sugar, lemon juice, and 1 teaspoon cinnamon in a large bowl. Toss to combine. Transfer to prepared baking dish, cover with foil and bake for 30 minutes.3 In a large bowl, combine whole wheat flour, oats, brown sugar and 1 teaspoon cinnamon. Mix to blend using fingertips to crumble the butter into the flour evenly.4 Stir in oil, apple juice, nuts, cardamom and allspice. Mix until moist and clumpy.5 Remove the foil from the baking dish and cover with topping spreading evenly. Bake in oven for about 30 minutes or until browned. Serve with whipped topping if desired.

6 Red Delicious apples
6 granny smith apples
1 cup dried cherries (or 1 1/2 cups fresh)
1 cup orange juice
1 cinnamon stick
1/2 cup raspberry liqueur
1/4 cup brown sugar
5 cups all-purpose flour
1 1/2 cups brown sugar
1 1/2 cups sugar
1 teaspoon salt
1 1/2 lbs butter
1 1/2 cups pecans

Steps:

  • Peel and core apples. Cut into 1/8-inch pieces. Simmer all filling ingredients until apples become soft.
  • Put first 4 ingredients in mixer bowl with paddle attachment.
  • Cut butter into small cubes and chill. Add to above ingredients and mix until mealy. Add pecans to above and pulse to mix.
  • Place apple mixture in a large 2-inch deep baking dish. Top with crisp topping. Bake at 350°F for 45 minutes until top is browned.

4 large granny smith apples, cored, peeled and sliced thin
1/2 cup dark plump raisins
1/4 cup firmly packed dark brown sugar, plus
3 tablespoons firmly packed dark brown sugar
1 teaspoon ground cinnamon, divided
1 teaspoon ground nutmeg, divided
salt, pinch
1/4 cup all-purpose flour
2 tablespoons butter, cold
2 1/2 cups Post Selects maple pecan crunch cereal

Steps:

  • Preheat oven to 375 degrees F.
  • In a large mixing bowl, toss the apples and raisins with 3 tablesppons of brown sugar, 1/2 teaspoon cinnamon, 1/2 teaspoon nutmeg and salt. Spoon into a buttered 9-inch pie plate.
  • In another mixing bowl, combine the remaining brown sugar and spices, and the flour; give a couple good stirs with a wooden spoon.
  • Cut in the butter with two knives until mixture resembles coarse crumbs; stir in cereal. Sprinkle over the apple mixture.
  • Bake for 30 minutes or until topping starts to brown and apples are tender.
  • Serve warm with a dollop of whipped cream or a scoop of vanilla ice cream.
  • Cook's Tip: For a special treat, sprinkle some shredded cheddar cheese on top of the crumble topping the last 10 minutes of baking. Yummm!

6 large firm baking apples, peeled cored. quartered and sliced 1/2-inch thick. (McIntosh, Granny Smith or Fujis)
1/2 lemon, juice of
1/2 cup all-purpose flour
1/4 cup brown sugar
1 tablespoon granulated sugar
1/4 teaspoon ground cinnamon
1 dash ground nutmeg
1 cup pecans, toasted & coarsely chopped
1/2 cup unsalted butter, cut into pieces
whipped cream
vanilla ice cream (optional)

Steps:

  • Preheatoven to 350°F.
  • Butter a deep 2-quart or 9x13" baking dish.
  • Place the sliced apples in large mixing bowl.
  • Stir in lemon juice.
  • Toss well.
  • Blend flour, both sugars, cinnamon and a dash of nutmeg in a food processor until well combined.
  • Add butter and blend until mixture forms large clumps.
  • Transfer to a bowl and work in pecans with your fingertips.
  • Pour sliced apples into prepared baking dish.
  • Spread the topping mixture over apples.
  • Bake for 30 minutes or until apples are tender and the topping is browned.
  • Serve warm with whipped cream or ice cream.

5 granny smith apples, peeled and cut into 1/4-inch-thick slices
2 tablespoons lemon juice
3/4 cup flour
3/4 cup dark brown sugar, firmly packed
1 teaspoon cinnamon
1/8 teaspoon salt
1/2 cup butter, cold
3/4 cup pecans, toasted and chopped
vanilla ice cream

Steps:

  • Place apples in a lightly greased 6-quart slow cooker; drizzle with lemon juice, and toss to coat. (the apples can be cut ahead of time and covered in water).
  • Combine flour and next 3 ingredients in a medium bowl. Cut butter into flour mixture with a pastry blender or two forks until mixture resembles coarse meal. (this can be made ahead of time and chilled).
  • Sprinkle half of the mixture over apples, making sure that each slice is coated, then top with the remaining topping.
  • Cover and cook on HIGH 1-1/2 - 2 hours or until apples are tender. Let sit for 15 - 30 minutes to cool slightly. Sprinkle with pecans.
  • Serve warm with ice cream.
  • Note: I cooked the toasted pecans with the apples and I quite enjoyed them that way.
