½ cup shortening
¾ cup white sugar
2 eggs
1 cup mashed bananas
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
½ teaspoon baking soda
½ teaspoon salt
½ cup quick cooking oats
½ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
  • In a large bowl, cream together the shortening and sugar until light and fluffy. Stir in the eggs one at a time, beating well with each addition, then stir in the banana and vanilla.
  • In a separate bowl, sift together flour, baking soda and salt. Beat into creamed mixture. Stir in oats and nuts. Pour into prepared pan.
  • Bake in preheated oven for 50 to 55 minutes, or until a toothpick inserted into the center of the loaf comes out clean.

1/2 cup butter, softened
1 cup plus 2 tablespoons sugar, divided
2 eggs
1/2 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2 tablespoons buttermilk
1 cup grated peeled apple
1 cup chopped nuts
3/4 teaspoon ground cinnamon

Steps:

  • In a large bowl, cream the butter and 1 cup sugar. Add eggs, one at a time, beating well after each addition. Stir in vanilla. Combine the flour, baking soda and salt; add to creamed mixture alternately with buttermilk. Stir in apple and nuts. , Pour into a greased and floured 9x5-in. loaf pan. Combine cinnamon and remaining sugar; sprinkle over batter. Bake at 350° for 60-65 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes; remove from pan to wire rack to cool completely.

1 cup old fashioned oats
1 1/4 cups all purpose flour
1/2 cup light brown sugar, packed
1/2 tsp. kosher salt
1/2 tsp. baking soda
1/4 tsp. baking powder
1/2 tsp. ground cinnamon
3 large, ripe bananas, cut into chunks
2 large eggs
1 tsp. pure vanilla extract
3 TBSP cooking oil (corn, canola, etc)
1/3 cup chopped walnuts (optional)

Steps:

  • Preheat oven to 350 degrees F. Spray 9" nonstick loaf pan with cooking spray. Set aside.
  • In a food processor or blender, add the 1 cup of old fashioned oats. Process until the oats are half their size or less. Add in brown sugar, flour, salt, baking soda, baking powder, and cinnamon. Pulse to combine. Dump dry mixture into a large bowl.
  • In a food processor or blender, add the bananas. Process until smooth. Add eggs, vanilla, and oil. Pulse to combine. Pour the wet mixture into the dry mixture. Fold in until just combined. Fold in the walnuts, if using.
  • Pour into prepared pan and bake for 45 - 50 minutes, or until a tester comes out clean. Cool in pan, on rack, for 10 minutes, then cool on rack. Wrap tightly with foil or plastic wrap and store in cool, dry place or in refrigerator. The flavor tends to get better the next day.

If you don't have ripe bananas, roast them skin on in a 300°F oven for 40 minutes until blackened and soft. As for the oats, don't even think about using the instant kind.   • preheat oven to 180c. grease and line bottom of a large loaf tin.
  • mash 1 banana.
  • using an electric mixer, lightly mix the mashed banana, eggs, milk and oil.
  • beat in the sugar.
  • add in the flour, oats and baking powder, beating until well combined.
  • slice the 2 remaining bananas and peel, core and chop the apple.
  • place half the batter into the tin and top with the sliced banana and apple. sprinkle with the cinnamon then top with the rest of the batter.
  • cook for 50 - 60 minutes or until a skewer comes out clean. if browning too fast, cover with some foil.
  • cool in the tin for 30 minutes then remove to a wire rack to cool completely.
  • serve toasted.
