These Pork Chops are filled with savory stuffing and topped with mushroom soup; they're perfect to feed a hungry family!

4 boneless pork chops (thick-cut, about 1")
6 oz box stuffing mix, any flavor (or 2 cups homemade stuffing)
10.5 oz cream of mushroom soup
salt & black pepper (to taste)

Steps:

  • Prepare stuffing mix according to box directions. Cool completely.
  • Preheat oven to 350°F.
  • Season pork chops with salt and pepper. Use a knife to butterfly the pork open and create a pocket for the stuffing.
  • Place 1/3 cup stuffing into each pork chop and place in a casserole dish or 9x13 pan. If you have extra stuffing, place in the pan with the pork.
  • Season each pork chop with pepper and top with condensed mushroom soup.
  • Bake for about 35* minutes or until the pork is cooked and reaches 145°F with a thermometer.

3 tablespoons unsalted butter
1 medium onion, finely chopped
1/2 cup breadcrumbs
Pinch salt
Pinch pepper
Pinch garlic powder
1 large egg, lightly beaten
2 tablespoons chopped fresh parsley
4 bone-in pork chops, about 1 1/2-inch thick
1 cup all-purpose flour
1/4 cup vegetable oil

Steps:

  • Preheat the oven to 325 degrees F.
  • Melt the butter in a large skillet over medium-high heat. Add the onions and saute until translucent, about 7 minutes. Remove the pan from the heat and stir in the breadcrumbs, salt, pepper and garlic powder. Stir in the beaten egg and parsley.
  • To cut pockets into the pork chops, insert the point of a small sharp knife horizontally into the fat-covered edge. Move the knife back and forth to create a deep pocket about 1 1/2 inches wide.
  • Fill the pocket of each chop with the breadcrumb mixture. Secure the openings with toothpicks.
  • Place the flour in a shallow bowl. Dredge the stuffed chops lightly in the flour, shaking off the excess. Wipe out the skillet used previously for the stuffing and place it over medium-high heat. Add the oil and, when hot, add the chops. Sear over medium heat until lightly browned, about 3 minutes per side.
  • Place a rack in a roasting or baking pan and add water, being careful not to cover the rack with water. Place the chops on the rack and cover the roaster with the lid or aluminum foil. Bake the chops for 1 hour. Let rest, remove the toothpicks and serve.

1 1/2 cups frozen orange juice concentrate
2 tablespoons apple cider vinegar
1 teaspoon cornstarch
1 pinch ground cloves
6 slices sourdough bread, torn into 1/2-inch pieces
1 cup raisins
1/2 teaspoon garlic powder
salt and pepper
6 pork chops, 1 1/2-inch-thick

Steps:

  • Preheat an outdoor grill or grill pan to high. In a casserole dish, whisk together the orange juice concentrate, vinegar, cornstarch, cloves and 1 1/2 cups water.
  • In a medium bowl, combine the bread, raisins, garlic powder and 1/4 cup of the juice mixture; season with salt and pepper.
  • Cut a 2-inch-wide pocket through the center of each chop, cutting from the fatty side toward the bone. Spoon 3 tablespoons of stuffing into each pocket. Marinate the chops in the juice mixture for 30 minutes.
  • Lower the grill temperature to medium. Grill the chops, covered, basting once, until golden, about 4 minutes. Turn, and baste again. Cover and grill the chops until an instant-read thermometer inserted into the center registers 150 degrees, about 4 minutes.

This is an easy way to make pork chops special. Sometimes I substitute chopped pecans for the cheddar cheese in the stuffing mix. Although the recipe calls for orange juice to moisten the stuffing mix and baste the chops with, I find apple cider or dry white wine work equally well.

6 pork chops (center cut rib, 1 1/2 to 2 inches thick, about 4 pounds)
1 1/2 cups toasted bread, cubes (or cubed, dry stuffing mix)
1/2 cup chopped unpeeled tart apple
2 ounces sharp cheddar cheese, shredded (about 1/2 cup when shredded)
2 tablespoons light golden raisins
2 tablespoons butter, melted
2 tablespoons orange juice (or apple cider or dry white wine)
1/4 cup apple cider or 1/4 cup white wine, for basting (of your choice)
1/4 teaspoon salt
1/8 teaspoon ground cinnamon

Steps:

  • sometimes I omit the cheese and add 1/3 to 1/2 cup chopped pecans.
  • Cut a 2 to 3 inch pocket into each chop (to the bone), along the fat side.
  • Salt and pepper the pocket of each chop.
  • In a bowl, toss together bread cubes, apple, cheese (or pecans) and raisins.
  • Combine melted butter, orange juice, salt and cinnamon, stir to mix well.
  • Pour liquid mixture over bread mixture, tossing gently to moisten stuffing.
  • Lightly stuff the pockets in the chops.
  • If necessary secure stuffed pockets with a toothpick, to keep the pocket partially closed.
  • Brush both sides of chops with liquid (orange juice, apple cider or white wine).
  • Place chops in a shallow baking/roasting pan.
  • Bake at 350°F for 1 1/4 hours, brush chops with liquid twice during baking.
  • Cover pan lightly with foil, and bake for 15 minutes longer.

  • spray a 13x9 inch pan with cooking spray.
  • slice potatoes and lay in the bottom of the pan.
  • lay pork chops on top of potatoes.
  • pour soup over potatoes and chops.
  • sprinkle with onion soup mix.

I make these when I really want to impress my guests. Someone actually told me this was the best dish they'd ever tasted outside of a fancy Restaurant. It takes a bit of time, but it'll all be worth it.

8 center-cut pork chops (1/2 inch thick)
1/2 lb raw shrimp
1 cup lump crabmeat
1 tablespoon olive oil
3 tablespoons unsalted butter
1/4 cup zucchini, chopped (small not fine)
1/4 cup summer squash, chopped (small not fine)
1/4 cup finely chopped red bell pepper
1/4 cup finely chopped green bell pepper
1 small onion, finely chopped
1 bunch green onion
2 large garlic cloves, minced
2 teaspoons fresh thyme
1 bunch fresh thyme leave
1 teaspoon fresh rosemary
1 teaspoon fresh oregano
4 cups day old French bread
1 1/2 teaspoons creole seasoning
1 1/2 cups chicken broth
4 tablespoons french garlic and herb goat cheese
4 slices prosciutto ham
1 1/2 cups heavy cream
1/4 cup white wine
kosher salt
fresh ground black pepper

Steps:

  • Peel your shrimp. In a small sauce pan add your chicken stock, the shrimp peels and the small bunch of thyme stems with leaves still on. Bring to a boil. Turn down heat to low and let simmer for 10 minutes. Then strain broth into bowl. Set aside.
  • In a sauté pan add your tablespoon of olive oil and turn heat to med-high. Add your zucchini, summer squash, red and green bell pepper, onion, chopped green onion tops (set bottoms aside for later), and half your minced garlic. Sauté for 2-3 minutes or until onions start to turn translucent. Add a tablespoon of the butter and remaining herbs. Let cook for another 2 minutes. Season with 1 teaspoon creole seasoning and ground black pepper to taste. Add French bread torn into small pieces. Stir in broth until it resembles a stuffing.
  • In small sauté pan add 2 tablespoons of butter. Add the shrimp and sauté until shrimp is pink on both sides. Remove shrimp from pan leaving the buttery sauce in the pan. Set pan aside for later.
  • Add half of the cooked shrimp lightly chopped with half of the lump crab meat to the stuffing. Gently fold in seafood. Set aside.
  • Heat oven to 350°F.
  • Lay out 4 pork chops in a 12x 8x baking dish. Sprinkle each chop with salt and pepper to taste. Spread a tablespoon of goat cheese on each of the four chops. Spoon about 1/2 of a cup stuffing on top of chop and then cover each chop with another chop. Sprinkle top of chop with salt and black pepper to taste. Wrap each stuffed chop with Prosciutto and bake covered in tin foil for 45 minutes.
  • Meanwhile.
  • In your buttery pan add the green onion bottoms finely chopped, and the rest of the minced garlic. Sauté for 2 minutes and then add the white wine. Simmer for 2 more minutes and then add the 1/2 teaspoon creole seasoning and the heavy cream. Reduce on med heat until sauce coats the back of a spoon. Add the other half of cooked shrimp and the other half of the lump crab meat. Add more creole seasoning and fresh black pepper to taste (optional).
  • Once the pork chops are out of the oven, let them rest for about 10 minutes before serving.
  • Pour the seafood cream sauce over each individual stuffed pork chop when plating.
  • It's great over basmati rice with some steamed green beans or asparagus. Don't forget the fresh baked french bread.
  • I always have left over stuffing. I just put it in a baking dish and cover it with Romano cheese. It can store it in the fridge to bake and serve another day or bake it off then and there. Bake at 350°F just until it browns on top.

4 slices whole wheat bread, cubed
1/3 cup raisins
1/4 cup parsley, chopped
1/3 cup butter, melted
1 tablespoon water

4 boneless pork loin chops, 3/4 inches thick
brown sugar

Steps:

  • Preheat broiler with rack 4 inches from heat.
  • Line a baking sheet with aluminum foil.
  • In a bowl mix bread, raisins, parsley, butter, salt, and pepper and water.
  • Mix gently.
  • Cut a deep pocket in each pork chop and fill with stuffing.
  • Place on baking sheet and press down lightly to flatten.
  • Sprinkle with salt, pepper, and brown sugar to taste.
  • Broil on one side until slightlly browned, about 8-10 minutes.
  • *Can substitute other dried fruit like cranberries.

1 (6 ounce) box Stove Top stuffing mix (savory herb or pork are best)

Steps:

  • Preheat oven to 375 degrees Fahrenheit.
  • Prepare stuffing according to directions on box, increasing water by 1/4 cup.
  • Cut slit into the side of each pork chop, cutting it almost in half. This is easiest on a mostly frozen chop.
  • Stuff (and I mean stuff) each chop with as much stuffing as it can hold. You can also add a pat of butter, salt and pepper, or seasonings if desired.
  • Bake for 35 minutes, or until juice runs clear.
  • We enjoy having cauliflower with our meal.
  • Also-- DO NOT brown chops before hand. This causes them to be too tough, and too rigid to stuff correctly.
