LOW CARB KETO ALFREDO SAUCE RECIPE (EASY!)
This easy keto alfredo sauce recipe needs just 4 simple ingredients and 10 minutes! Plus, homemade low carb alfredo sauce is creamy, rich, and tastes much better than the jarred ones.

Steps:
- Melt butter in a medium saucepan over medium heat. Add minced garlic and saute for about 30 seconds, until fragrant.
- Add the heavy cream. Bring to a gentle simmer, then continue to simmer for about 5 minutes, until it begins to thicken and volume is reduced by about 1/3. (Amount of time will vary depending on the size of your saucepan.)
- Reduce heat to low. Gradually whisk in the Parmesan cheese. Keep whisking over low heat, until smooth. If using nutmeg, sea salt, and/or black pepper, stir those in, to taste. (If sauce is thicker than you like, you can thin it out with more cream.)

GLUTEN FREE ALFREDO SAUCE
This is basically normal alfredo sauce but lots of the alfredo sauce that is canned in stores has modified food starch in it which is no good for a gluten free diet. So this is what my aunt came up with and is so delicious. Its good to add to rice noodles and chicken or put on gluten free pizza crust or in rice noodle alfredo lasagna. This really works with anything and is a good Gluten Free base. Buckwheat noodles are the best with this but I have only found them on sale once. Rice noodles are very cheap at the local Chinese market in all shapes and sizes. I also use this in rice alfredo casserol. If you come up with any more ideas let me know.

- I would Heat all together on med-low until smooth and creamy.
- According to my husband you do the following : Melt butter first then smash cream cheese into the butter. Add cheese and milk last.
- Add more milk to make more smooth. Start with 1/2 cup first then add to more to make desired texture.

- As soon as a little butter has melted, add the garlic. Saute for about 1-2 minutes, until the garlic is fragrant. Take care not to let the butter get too hot. If you start to see bubbles, remove it from the heat and swirl the pan a little to keep it moving. That will help cool it down while still continuing to cook the garlic evenly.
- When the garlic is nice and fragrant, add the heavy cream in a slow stream, whisking as you add. Heat the cream on low, bringing just to a simmer. Once you see steam and a few bubbles, remove from heat. The cream should be starting to thicken. If not, swirl a bit to cool and return to low heat. Repeat as necessary until you start to see a bit of thickening.
- Remove from heat and add salt, pepper and nutmeg. White pepper is not necessary but it makes a prettier sauce without flecks from black pepper. Fresh nutmeg grated with a microplane is best, but you don't need much. Less is more. A few swipes on the microplane is plenty. While nutmeg is optional, it provides a depth of flavor that really takes the alfredo to the next level. Use dried nutmeg if you don't have a whole nutmeg.
