TUNA AND MIXED BEAN WRAPS
A quick and simple alternative to chicken fajitas, this recipe is packed full of beans and tuna for a healthy lunch time treat. For a casual evening, pile the tuna filling onto a plate and surround with tortilla chips (in place of the flour tortillas) and use the mix as a dip and scoop.

Steps:
- Heat the oil in a large frying pan, add the scallions, chili and garlic.
- Cook over a low to medium heat for 3 - 4 minutes.
- Add the mixed beans and cook over the heat for 2 - 3 minutes or until piping hot.
- Stir in the tuna and cream cheese and stir gently until piping not.
- Season to taste with salt and freshly ground black pepper.
- Warm the tortillas in a frying pan, then fill and roll with the tuna and bean mixture.
- Serve with salad leaf garnish.

- In a small bowl, combine lemon juice, red onion, salt and black pepper. Whisk in olive oil; set aside.
- Place beans, tuna, tomatoes and parsley in a large bowl.
- Pour dressing over bean and tuna mixture; stir gently.
- Place 3/4 cup bean mixture on one side of 1 tortilla and tightly roll the wrap. Cut in half on the diagonal.
- Repeat with remaining ingredients; Serve with carrot and cucumber.
