3 cloves garlic, minced
2 tablespoons olive oil
¼ cup tomato sauce
2 tablespoons red wine vinegar
2 tablespoons chopped fresh basil
½ teaspoon salt
¼ teaspoon cayenne pepper
2 pounds fresh shrimp, peeled and deveined
skewers

Steps:

  • Stir garlic, olive oil, tomato sauce, and red wine vinegar in a large bowl. Season with basil, salt, and cayenne pepper. Add shrimp to the bowl and stir until evenly coated. Cover and refrigerate for 30 minutes to 1 hour, stirring once or twice.
  • Preheat grill for medium heat and lightly oil the grate.
  • Thread shrimp onto skewers, piercing once near tail and once near head. Discard marinade.
  • Cook shrimp on preheated grill until opaque, 2 to 3 minutes per side.

1/4 cup LEA & PERRINS Worcestershire Sauce
3 Tbsp. HEINZ Balsamic Vinegar
1 Tbsp. olive oil
2 cloves garlic, minced
1 lb. uncooked large shrimp, peeled with tails left on, deveined
6 cups tightly packed baby salad greens

Steps:

  • Whisk lemon juice, Worcestershire sauce, vinegar, oil and garlic until blended. Reserve 1/2 cup lemon juice mixture for later use.
  • Pour remaining lemon juice mixture over shrimp in shallow dish; toss to evenly coat shrimp. Refrigerate 30 min. to marinate.
  • Heat grill to medium heat. Remove shrimp from marinade; discard marinade. Grill shrimp 4 to 5 min. or until they turn pink, turning after 3 min.
  • Cover large plate with salad greens; top with shrimp. Drizzle with reserved lemon juice mixture; sprinkle with lemon zest.

To say this marinade is fantastic is an under statement --- the amounts listed enough for up to 4 pounds of shrimp and this also works well with lobster tails too --- if you are threading the shrimp on wooden skewers make certain to soak them for a minimum of 30 minutes in cold water before using, do not marinade the shrimp for more than 1 hour or the vinegar will start "cook" the shrimp, the hot sauce is only optional add in for extra heat.

3/4 cup olive oil
1/2 cup tomato sauce
4 tablespoons red wine vinegar
1/2 teaspoon black pepper (can use more)
1 -2 teaspoon seasoning salt (or to taste)
1/4 teaspoon cayenne pepper (or to taste)
3 tablespoons chopped fresh cilantro (or use fresh basil)
4 -5 large fresh garlic cloves (cut into large pieces, do not mince or use as much as desired!)
hot sauce (optional)
4 lbs uncooked shrimp

Steps:

  • In a large bowl whisk together all ingredients (except garlic) until well blended, adjusting the seasoned salt, cayenne and hot sauce to taste.
  • Add in the garlic pieces.
  • Add in the uncooked shrimp to the bowl and toss to coat with the marinade.
  • Cover and refrigerate NO MORE than 1 hour.
  • Remove the shrimp and discard marinade.
  • Grill over medium heat until no longer pink (cooking time will vary depending on the size of the shrimp).
