This healthy baked ziti recipe is the ultimate classic Italian comfort food! Pasta baked with a delicious red sauce, ricotta cheese, and mozzarella melted on top. But don't worry, this lightened-up version does not skimp on the bold Italian flavors that you look forward to with a cheesy baked ziti. It can be assembled ahead of time for an easy dinner or to feed a crowd at your next party.

1 lb dry ziti or penne pasta (whole grain or organic)
1 15- ounce container of part-skim ricotta cheese (drain excess liquid)
1 large egg
½ cup grated parmesan cheese (can also use grated romano cheese)
1 teaspoon granulated garlic
1 teaspoon onion powder
1 teaspoon Italian seasoning
½ teaspoon salt
½ teaspoon pepper
pinch of crushed red pepper
3 - 4 cups spaghetti sauce (homemade or high-quality jarred sauce)
2 cups shredded low-fat mozzarella cheese

Steps:

  • Preheat the oven to 375 degrees.
  • Bring a 5-6 quart pot of salted water to a boil. Add the pasta and cook for 5 minutes. The pasta should still have a bite to it after it cooks. This helps keep the pasta from getting mushy.
  • Drain the pasta and rinse. Place the pasta into a 9 x13 baking dish.
  • Mix ricotta cheese, egg, romano or parmesan cheese, garlic powder, onion powder, Italian seasoning, salt, and pepper in a medium bowl. Stir in the crushed red pepper if you're using it.
  • Mix the ricotta cheese mixture and spaghetti sauce in with the pasta. Start with 3-cups of sauce and add more if you need to. The pasta should be covered with sauce and cheese mixture.
  • Sprinkle mozzarella over the top of the pasta mixture.
  • Cover with foil and bake for 55 minutes. Uncover and bake for another 5 minutes or until cheese is melted and the baked ziti is bubbling on the sides.

1 bunch fresh spinach, or more to taste
¾ cup reduced-fat sour cream
1 pound Italian turkey sausage
1 onion, chopped
2 carrots, chopped
3 cloves garlic, minced
2 (26 ounce) jars spaghetti sauce
1 head broccoli, cut into florets
6 ounces smoked fresh mozzarella cheese, diced
½ cup shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of lightly salted water to a boil. Cook ziti in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes. Drain and transfer pasta to a bowl and toss with spinach and sour cream.
  • Heat a large skillet over medium heat; cook and stir sausage, onion, carrots, and garlic until onion is translucent and sausage is no longer pink, about 7 minutes. Add spaghetti sauce and broccoli to sausage mixture and simmer until sauce mixture is heated through, about 15 minutes.
  • Layer 1/2 of the ziti mixture into a 9x13-inch baking dish. Spread 1/2 of the fresh mozzarella cheese, 1/2 of the sauce mixture, the remaining ziti mixture, and fresh mozzarella cheese, respectively, into the baking dish. Sprinkle shredded mozzarella cheese over the dish. Cover dish with aluminum foil.
  • Bake in the preheated oven until cheeses have melted, about 20 minutes. Remove the aluminum foil and cook until top is lightly browned, about 10 minutes more.

1 pound ziti
Kosher salt
3 1/2 cups Quick Tomato Sauce, recipe follows
1 pound fresh mozzarella, half cut into 1/2-inch cubes and half thinly sliced
3/4 cup freshly grated Parmesan
1/2 teaspoon freshly ground black pepper
Pinch crushed red pepper
2 tablespoons extra-virgin olive oil
1 pound sweet and/or spicy Italian sausages, casing removed and sausage crumbled
1/4 medium onion, diced (about 3 tablespoons)
3 cloves garlic, chopped
One 28-ounce can whole peeled tomatoes in puree, roughly chopped
Sprig thyme
Sprig basil
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F.
  • Bring a large pot of water to a boil, salt generously and boil the pasta until al dente (tender but still slightly firm). Drain.
  • Toss the cooked pasta with the quick tomato sauce, cubed mozzarella, half the Parmesan, all of the black pepper and crushed red pepper in a large bowl. Transfer the pasta to the prepared baking dish. Cover the top of the pasta with the sliced mozzarella and sprinkle with the remaining Parmesan. Bake until lightly browned and hot, about 30 minutes. Serve immediately.
  • Heat the oil in a medium saucepan over medium-high heat. Cook the sausage until beginning to brown, about 3 minutes. Add the onion and garlic, stirring, until lightly browned, about 3 minutes more. Add the tomatoes and the herb sprigs and bring to a boil. Lower the heat and simmer, covered, for 10 minutes.
  • Remove and discard the herb sprigs. Stir in 2 teaspoons salt and season with pepper. Use now or store covered in the refrigerator for up to 3 days or freeze for up to 2 months.

16 ounces ricotta cheese
3 cups mozzarella cheese, grated
3 cups spaghetti sauce

Steps:

  • Preheat oven to 350.
  • Boil ziti, following package directions, drain and place in a large bowl.
  • Mix all the ricotta cheese and half of the mozzarella with the ziti.
  • Spray a 13x9 pan with Pam.
  • Cover the bottom half of the pan with about half the sauce.
  • Put the ziti mixture on top of sauce.
  • Pour remaining sauce on top of ziti.
  • Sprinkle with the parmesan cheese.

16 ounces ziti pasta or 16 ounces other pastas
6 tablespoons butter or 6 tablespoons margarine
6 tablespoons parmesan cheese, plus
1/4 cup parmesan cheese, separated
1 (8 ounce) can evaporated milk
1 cup mozzarella cheese, plus
3 cups mozzarella cheese, separated (uses all of 1 (16oz?)
30 ounces spaghetti sauce (Ragu, Prego, etc.)
1 lb ground beef (optional)

Steps:

  • Preheat oven to 400*F.
  • Boil pasta as directed on box.
  • When cooked, drain, return to pot and cover. In a medium saucepan, melt 6 tablespoons butter.
  • When melted, add 6 tablespoons parmesan cheese, 1 can of evaporated milk, and 1 cup mozzarella cheese.
  • Mix until cheese is melted.
  • Pour mixture onto pasta and stir.
  • Pour the pasta mixture into a greased 9x13 pan.
  • Sprinkle 3 cups mozzarella on top of pasta.
  • Bake for 10 minutes or until cheese is melted.
  • Remove from oven.
  • Pour 1 (30oz) jar of spaghetti sauce over the pasta.
  • (***Can add 1 lb. browned ground beef to the sauce before pouring over pasta. Sprinkle 1/4 cup parmesan cheese over the sauce.***).
  • Bake for 5-10 minutes, until sauce is warm.
