A little taste of the Islands. I came up with this recipe while DH and I were discussing our favorite McDonalds breakfast, Spam, Eggs and Rice.(Available at Hawaian locations) Why not a breakfast sandwich with Spam and Pineapple? They're great anytime. Spice them up with extra hot sauce or add a chopped, seeded Jalapeno pepper to the pineapple relish.If you can get a Sweet Maui Onion that's mo bettah !!!

1 (12 ounce) can Spam (classic, lower sodium, or lite)
1 (8 ounce) can crushed pineapple, drained well
3 tablespoons chili sauce
2 tablespoons chopped sweet onions
1/8 teaspoon crushed red pepper flakes
1 dash soy sauce or 1 dash teriyaki sauce
1 dash Tabasco sauce
5 slices American cheese
5 English muffins
mayonnaise (optional)

Steps:

  • Drain Pineapple really well and mix in Chili Sauce, onion, red pepper flakes, soy sauce and Tobasco.Set aside.
  • Slice Spam into 10 slices.
  • Split and toast English Muffins.You can keep these warm in low oven.
  • In skillet fry Spam slices until lightly browned on both sides.
  • Place 2 slices of Spam on English muffin half, add cheese slice and pineapple relish.Top with muffin half.
  • If you'd like you may spread muffin halves with mayonnaise before assembling sandwich.

24 dinner rolls, such as King's Hawaiian Original Hawaiian Sweet Rolls
1/2 cup salad dressing spread, such as Miracle Whip
Hot sauce, to taste
24 thin slices deli roast beef
12 slices pepper Jack cheese
1 stick butter
1 tablespoon lemon pepper
1 tablespoon Dijon mustard
6 dashes Worcestershire sauce

Steps:

  • Preheat the oven to 350 degrees F.
  • Slice the rolls in half and place the bottoms in a single layer in a 9-by-13-inch dish.
  • Mix the salad dressing and some hot sauce together in a small bowl. Spread the mixture on the rolls in the dish. Layer on the roast beef and then the cheese over the rolls. Place the top halves of the rolls on the cheese.
  • In a small saucepan over medium-low heat, melt the butter with the lemon pepper, mustard and Worcestershire sauce. Drizzle or brush the butter mixture over the sandwiches. Cover with foil.
  • Bake until the cheese melts, 10 to 12 minutes. Uncover and cook until lightly browned, about another 2 minutes. Serve hot.

1 packet teriyaki marinade (recommended: McCormick Grill Mates)
1 tablespoon paprika
1 teaspoon fresh ground pepper
3 1/2 pounds pork shoulder
1/2 cup chicken broth
1/2 cup brown sugar
1/4 cup soy sauce
1 cup chili sauce
One 6-ounce can pineapple juice
1 medium onion, chopped
2 carrots, chopped
8 hamburger rolls
2 tablespoon canola oil
1 tablespoon ginger, chopped
2 teaspoons garlic, chopped

Steps:

  • In small bowl, combine teriyaki mix, paprika and pepper.
  • Coat the pork the with rub mixture, patting until all rub is used. Set aside.
  • In a bowl whisk together the chicken broth, brown sugar, soy sauce, chili sauce and pineapple juice. Set aside.
  • Put the chopped onions and carrots in a 5-quart slow cooker. Place the pork on top of the carrots and onions and pour half of the pineapple juice mixture over pork. Reserve remainder for Hawaiian sauce. Cover and cook on low for 7 to 8 hours. The meat should fall apart easily. Remove the roast from the slow cooker to a cutting board. Using 2 forks carefully pull the meat into shreds.
  • Hawaiian Sauce:
  • In a medium pot heat the oil over medium heat. Add garlic and ginger and saute until soft, about 2 minutes. Add the remaining pineapple juice mixture, bring to a boil, then reduce heat and simmer for 10 minutes. Remove from heat and set aside.
  • Serve the pork on rolls drizzled with the Hawaiian sauce or on the side for dipping.

1 tablespoon prepared mustard

  • Leaving the rolls attached, cut in half horizontally; remove top. Spread ranch dressing over cut side of top; spread mustard over cut side of bottom. Layer with ham, salami and turkey; replace top. Cut into four sandwiches.

24 Hawaiian bread rolls (such as King's®), split
12 thin slices of honey-cured deli ham, halved
12 slices Swiss cheese, halved
12 thin slices deli smoked turkey, halved
12 thin slices provolone cheese, halved
½ cup butter
¼ cup white sugar
¼ cup dried onion flakes
2 tablespoons poppy seeds
1 tablespoon honey mustard

Steps:

  • Place a rack into lower half of oven and preheat oven to 400 degrees F (200 degrees C).
  • Arrange bottom halves of Hawaiian rolls on a baking sheet. Place a half slice each of ham, Swiss cheese, smoked turkey, and provolone cheese onto each roll bottom. Place top halves onto each bottom to make sandwiches.
  • Melt butter in a saucepan over low heat and stir in sugar, dried onion flakes, poppy seeds, and honey mustard until mixture is smoothly combined, creamy, and the sugar has dissolved, about 2 minutes; brush over the tops of each sandwich.
  • Bake sandwiches on the preheated oven's lower rack until tops are golden brown and fillings are hot, about 15 minutes.

  • Spam Musubi. One does not mention Spam recipes without mentioning the king of them all: the Spam musubi! Spam musubis make a great snack and can be found at almost all convenience stores in Hawaii.
  • Spam Fried Rice. My favorite Spam recipe is fried rice. I love my fried rice recipe, which is based on Chinese-style fried rice and all my friends compliment it whenever I cook it for them.
  • The Hot Hawaiian Breakfast: Spam, eggs, and rice. Spam, eggs, and rice is what I like to call “The Hot Hawaiian Breakfast.” This recipe is just a local interpretation of the sausage, egg, and hash brown breakfast that is popular on the mainland.
  • Budae Jjigae, or “Army Base Stew” I worked in South Korea for 2 years and ate many great dishes there (most of which are waaaay too spicy for a guy raised in Hawaii).
  • The Spamwich. Because of it’s rectangular-size and because it’s so easy to slice, SPAM can easily be used for a sandwich. You can make whatever type of sandwich you want with SPAM, but I highly recommend that you cook your SPAM first.
