HAWAIIAN SHOYU CHICKEN
This is a Hawaiian dish that uses a Chinese cooking method with Japanese ingredients. You can literally find 100s of Shoyu chicken recipes in Hawaii and every household has it's own twist. The key if you want to be "authentic" is to use Hawaiian Shoyu, it's a bit sweeter than normal soy sauce (Shoyu means soy sauce in Japanese) which you can find in any Asian market. The basics of Shoyu chicken is poaching the chicken in soy sauce and other ingredients. If you like teriyaki chicken the flavor profile is very similar. I have friends that use Teriyaki sauce in their Shoyu chicken recipes.

Steps:
- Combine all the ingredients (except cornstarch slurry, green onions and sesame seeds) in a large pot and bring to a boil over high heat.
- Reduce to low and cook very slowly, covered, until chicken is tender, about 30 to 35 minutes more. Continue to skim the broth for fat and impurities.
- Remove chicken to a serving platter. Strain the sauce and bring to a boil. Thicken with the cornstarch slurry, adding it very slowly to avoid any clumps to desired thickness.
- Glaze over the chicken. Garnish with slices of green onion.
- Suggestion: Save some of the sauce, it goes wonderfully over rice, the dish tastes better the second day -- ;-)
- Serve with rice, and what the heck, mac salad! Onolicious!

- Cook the Spam. In a skillet over medium heat, lay the Spam slices in a single layer. Pan fry each side for a minute. Pour the soy sauce-sugar mixture over all the Spam. Let the Spam soak up the sauce. The sauce will get thicker and caramelize a bit. Pan fry an additional 2 minutes. Turn off heat and remove the Spam to a plate. You want the Spam to be both a bit crispy and saucy.
- Assemble the musubi. There are two popular methods. Method #1 is Spam on top. Method #2 is Spam in the middle. You can stick with one method try both and see which you prefer.

- In a small saucepan, cover the rice with 1 cup plus 2 tablespoons of water. Bring to a boil, cover and simmer over low heat for 10 minutes. Remove from the heat and let stand covered for 20 minutes.
- In a small microwavable bowl, combine the vinegar with the granulated sugar; microwave until warm, about 20 seconds. Stir to dissolve the sugar. Pour the vinegar mixture over the rice and toss to combine.
- In another small bowl, stir the soy sauce with the brown sugar and ¼ cup of water. In a large nonstick skillet, heat the oil. Add the Spam slices and cook over high heat, turning once, until browned, about 4 minutes. Add the soy sauce mixture to the skillet and cook over moderate heat, turning the slices once, until the Spam is glazed, about 3 minutes.
- On a work surface, arrange a half sheet of nori with the longer side facing you. Set the cleaned Spam can upright in the center of the nori sheet. Spoon 3 tablespoons of the warm sushi rice into the bottom of the can. Using the back of a spoon that’s been dipped in cold water, pack the rice in an even layer. Top with 1 slice of Spam and sprinkle with ¼ teaspoon of the furikake. Spoon another 3 tablespoons of the rice over the Spam and pack in an even layer. Carefully hold down the musubi and remove the Spam can, leaving the musubi on the nori. Fold one end of the nori up over the rice. Using your fingertips, wet the other end of the nori and fold it up over the other side of the rice, pressing to adhere. Flip the musubi so it is seam side down. Repeat with the remaining nori sheets, rice, Spam and furikake.
