Kalbi marinade is the perfect complement to Korean style short ribs (flanken style cut). But once you master this Korean sauce, you'll realize it's also versatile - try it with chicken, pork, other cuts of steak and even tofu!

3/4 cup soy sauce, low-sodium recommended but not a must
¼ cup rice wine (sake)
2 teaspoons sesame oil
4 cloves garlic, minced
4 stalks green onion, finely chopped
2 teaspoon roasted sesame seeds, slightly crushed
2 tablespoons sugar
½ teaspoon pepper
½ Asian pear grated on fine grater or in blender or ½ kiwi, optional
1/2 teaspoon gochugaru (Korean spicy pepper powder), optional

Steps:

  • Place all ingredients in a medium sized bowl or at least 2 cup measuring cup.
  • Whisk together well.
  • Pour over ribs and let marinate 6 - 8 hours or overnight.

Original recipe given to me by Hawaiians. Best for grilling pork or beef ribs and even chicken, just stick to 4-5 pounds. Can be halved for smaller amounts of meat or doubled for feeding a crowd. Better than the old red barbecue sauce!

4 -5 lbs pork ribs
2/3 cup soy sauce (I use Aloha or Kikkoman regular or low salt)
3 tablespoons water
2 tablespoons honey (the secret ingredient!)
3 tablespoons sugar (white or brown)
4 tablespoons sesame seeds, toasted
2 tablespoons sesame oil
2 -3 garlic cloves, finely chopped
1 -2 green onion, finely sliced

Steps:

  • Blend all ingredients in a large bowl until sugar is completely dissolved.
  • Dump over meat placed in a long dish covered tightly with plastic wrap or place into ziplock bag(s).
  • Marinate overnight (or for two days).
  • Turn meat 3-4 times each day.
  • Remove from marinade when ready to cook.
  • Discard marinade.
  • Grill over low to medium coals or bake in the oven at 325F until cooked through.
  • Cooking times will vary based on grill/oven heat and type of meat.

1/2 cup soy sauce
1 Korean pear or Asian pear, grated with juices
2 tablespoons finely chopped garlic
1/2 small white onion, grated or sliced
1 tablespoon grated fresh ginger
2 tablespoons light brown sugar
1 tablespoon honey
2 tablespoons sesame seeds, toasted
2 tablespoons toasted sesame oil
1 tablespoon ground red pepper
1/4 teaspoon ground black pepper
2 green onions, thinly sliced
1 (20-ounce) bottle lemon-lime soda, optional (recommended: Sprite or 7-Up)
4 pounds short ribs
Cooked white rice
Prepared kimchee (available at Korean grocers)

Steps:

  • For the marinade: Whisk together all the marinade ingredients in a large baking dish. Add the ribs and turn to coat. Cover and refrigerate for at least 1 hour or overnight; it is best if marinated overnight.
  • For serving: Heat grill to high. Remove short ribs from marinade and grill short ribs until slightly charred and tender and cooked to desired degree of doneness. Serve short ribs with white rice and kimchee.

On my half-day off, I decided to relax by making my favorite Korean meat dish, kalbi (marinated short ribs). Serve with white rice and kimchi. If serving small children (and wanting to prevent a mess), it's best to cut the meat off the bone and slice into bite-sized pieces. The dark marinade can stain clothes, so be careful.

3 pounds beef short ribs
½ cup soy sauce
1 Asian pear, cored and diced
½ small onion
2 tablespoons finely chopped garlic

  • Combine green onions, sesame oil, brown sugar, sesame seeds, honey, and black pepper in a large bowl; mix well. Add ribs and coat thoroughly with the marinade. Cover with plastic wrap and refrigerate 8 hours to overnight.
  • Preheat an outdoor grill for high heat and lightly oil the grate.
  • Cook ribs on the grill until slightly charred and tender, about 4 minutes per side.

Traditionally, should be served sliced, rolled in romaine lettuce leaves, along with white rice, lightly browned garlic slices, and gochujang (Korean red pepper paste).

¾ cup soy sauce
¾ cup brown sugar
¾ cup water
1 garlic clove, minced
2 green onions, chopped
1 tablespoon Asian (toasted) sesame oil
2 pounds Korean-style short ribs (beef chuck flanken, cut 1/3 to 1/2 inch thick across bones)

Steps:

  • In a bowl, stir together the soy sauce, brown sugar, water, garlic, green onions, and sesame oil until the sugar has dissolved.
  • Place the ribs in a large plastic zipper bag. Pour the marinade over the ribs, squeeze out all the air, and refrigerate the bag for 3 hours to overnight.
  • Preheat an outdoor grill for medium-high heat, and lightly oil the grate. Remove the ribs from the bag, shake off the excess marinade, and discard the marinade. Grill the ribs on the preheated grill until the meat is still pink but not bloody nearest the bone, 5 to 7 minutes per side.
