CRUNCHY CATFISH SANDWICH



Crunchy Catfish Sandwich image

1 cup mayonnaise 1 lemon, juiced
3 teaspoons prepared horseradish
2 teaspoons hot sauce
2 tablespoons dill relish
Pinch kosher salt
Pinch freshly ground black pepper
Oil, for frying
2 eggs
2 to 3 dashes hot sauce
2 teaspoons seafood seasoning (recommended: Old Bay)
Kosher salt
1 cup cornmeal (medium ground for more texture)
1/2 cup all-purpose flour
1/2 cup cornstarch Freshly ground black pepper
4 catfish fillets, cut in 1/2, about 2 pounds
4 sourdough sandwich rolls
4 tablespoons butter, softened
4 romaine or red lettuce leaves

Steps:

  • Preheat the oven to 350 degrees F.
  • To make the Spicy Tartar Sauce: Mix all the sauce ingredients in a small bowl until well combined. Cover and refrigerate until ready to serve.
  • In a deep 12-inch pan set over medium-high heat, add enough oil so it comes 1/3 of the way up the sides. Heat the oil to 375 degrees F.
  • In a wide-mouth bowl, whisk the eggs with the hot sauce, seafood seasoning and a pinch of salt. In a small paper bag, mix together the cornmeal, flour, cornstarch, and salt and pepper, to taste. Dredge the catfish in egg mixture, then in the flour mixture. Gently shake off excess flour. Set aside and repeat with remaining flounder. Fry the fish in batches until golden, about 2 to 3 minutes each side, being careful to keep the temperature at 375 degrees F. Remove catfish to a paper towel to drain and immediately season with salt.
  • Slice the sandwich rolls in half, slather the cut sides with butter and season with salt. Arrange, cut side up, on a baking sheet and toast in the oven until lightly golden, about 8 minutes. An alternate is to put them, buttered side down, on a griddle or under a broiler, and toast until golden. Set aside.
  • To assemble sandwiches, slather the rolls with the Spicy Tartar Sauce, top with lettuce and catfish, and serve.

4 (6 ounce) fillets catfish
¼ cup lime juice
½ cup cheap beer
¼ cup yellow cornmeal
1 cup finely crushed tortilla chips
½ teaspoon salt
¼ teaspoon cayenne pepper
2 tablespoons lime juice
2 tablespoons canola oil
4 ounces processed cheese, cubed
1 teaspoon chili powder
1 teaspoon ground cumin
½ chipotle pepper, minced
2 tablespoons chopped fresh cilantro

Steps:

  • In a shallow dish, stir together 1/4 cup of lime juice and beer. Place fish in the dish, and turn to coat. Marinate for 30 minutes.
  • Preheat the oven to 400 degrees F (200 degrees C). Coat a roasting rack with cooking spray, and place over a baking sheet.
  • Rinse fish with cold water, and pat dry. Discard the marinade. In one dish, stir together the cornmeal, tortilla chip crumbs, salt and pepper. In another dish, stir together 2 tablespoons of lime juice and canola oil. Dip fillets into the lime and oil, then into the cornmeal mixture to coat. Place the fish onto the roasting rack.
  • Bake fish for 8 to 10 minutes, or until it flakes easily with a fork. While the fish is baking, combine the processed cheese, chili powder, cumin, and chipotle pepper in a small saucepan over medium-low heat. Cook and stir until melted and smooth.
  • Place fish onto serving plates, and spoon the cheese sauce over them. Top with a sprinkling of cilantro leaves, if desired.

3 tablespoons grated Parmesan cheese
2 tablespoons chopped fresh parsley
1/2 teaspoon salt

6 fresh or frozen catfish fillets (3 to 5 ounces each)
1/2 cup butter, melted
Optional: Tartar sauce and lemon wedges

Steps:

  • In a shallow bowl, combine the bread crumbs, Parmesan cheese, parsley and seasonings. Dip catfish in butter, then in crumb mixture. 1/4 cup all-purpose flour
salt
pepper
1 teaspoon paprika
1 egg, lightly beaten
1 tablespoon milk

1/4 cup sliced almonds (optional)

Steps:

  • Preheat oven to 350°F.
  • Wipe fish dry.
  • Combine cheese, flour, salt, pepper and paprika in a shallow dish.
  • Combine egg and milk in a shallow dish.

2 teaspoons salt
1/2 cup ketchup
1/2 cup mayonnaise
1 tablespoon yellow mustard
1 tablespoon Worcestershire sauce
1/4 cup brown sugar
2 teaspoons apple cider vinegar
1/2 cup unsalted butter, room temperature
1/2 cup chopped sweet onion
1 lemon, sliced

Steps:

  • Preheat the oven to 300 degrees F. Line a 9 by 13 by 2-inch casserole dish with aluminum foil. Sprinkle the bass with salt and arrange the fillets in the casserole dish.
  • Make the basting sauce by mixing the ketchup, mayonnaise, mustard, Worcestershire sauce, brown sugar, vinegar, butter, and onion. Pour the sauce over the catfish and bake until the fish flakes easily with a fork, about 20 to 25 minutes. Baste the fish, with the sauce in the pan, every 10 minutes as it bakes. Remove the fish from the oven and using pancake turners, carefully transfer the fish to a serving platter. Garnish with lemon slices and serve.

1 tablespoon lemon juice
2 egg whites
2 tablespoons sour cream
1 tablespoon onion, Grated
1 clove garlic
1/4 teaspoon dry mustard
1/4 teaspoon white pepper
2 tablespoons butter or 2 tablespoons margarine
2 tablespoons flour
1 cup milk
4 teaspoons prepared horseradish

Steps:

  • Arrange fish on baking pan sprayed with nonstick cooking spray.
  • Sprinkle with lemon juice.
  • In small bowl beat egg whites until soft peaks form.
  • Fold in sour cream, onion, garlic, mustard and 1/8 teaspoon white pepper.
  • Spoon some of mixture on top of each fillet.
  • Bake at 375F for 20 minutes or until fish is opaque or skewer glides easily through flesh.
  • Meanwhile in small saucepan melt butter.
  • Blend in flour until smooth.
  • Stir in milk, hourseradish and remaining 1/8 teaspoon white pepper.
  • Cook and stir over medium heat until mixture is bubbly and slightly thickened.
  • Serve over fish.
