HAWAIIAN WEDDING CAKE
Hawaiian Wedding Cake is the mandarin orange-studded, fluffy-pineapple-frosting-slathered, perfectly pillowy yellow cake of your dreams. It tastes like a tropical getaway, and making it is an absolute breeze.

Steps:
- Preheat oven to 325 degrees. Coat a 9-inch by 13-inch cake pan with nonstick spray.
- In a large bowl, whisk the eggs and oil together until well blended. Whisk in the cake mix until smooth. Carefully fold in the mandarin oranges and their juice.
- Pour the batter into the prepared pan and bake 25 to 35 minutes (check at 25 minutes). Cool completely, at least 30 minutes.
- When the cake is cool, blend whipped topping and dry vanilla pudding mix in a large bowl (do not prepare the pudding mix into pudding). Carefully fold in pineapple and juice. Spread the frosting in a thick, even layer on the cake.
- Cover and refrigerate at least 30 minutes before serving. Garnish individual slices with maraschino cherries if desired. Refrigerate any leftovers.

- In a large bowl, combine the first six ingredients; beat on low speed for 30 seconds. Beat on medium for 2 minutes., Pour into three greased and floured 9-in. round baking pans. This is a cake that I grew up eating and one of the first that my mom let me make on my on. Its so easy. All ovens are different so be sure to check on its doneness. Also to make sure its moist I spoon the juice from the drained can of pineapple over the cake to make sure it is moist.

- In a bowl combine melted butter, sugar, eggs then add Graham Crackers and baking powder, milk, nuts coconut and vanilla. (No mixer needed).
- Bake in a tube or bunt pan on 300 degrees for approximately 1 hour.
- Cake is done when a toothpick is inserted and comes out clean.
- Let cool completely before icing.
- ICING.
- In a pot, melt butter on low heat on stove. In the same pot add drained pineapple. Slowly add powdered sugar until you have added all of the sugar.
- Pour over completely cooled cake.

- For cake: Preheat oven to 350°F.
- Using a slotted spoon, set aside 1/4 cup pineapple for frosting.
- In mixing bowl, combine remaining pineapple and juice with flour, sugar, eggs, baking soda, vegetable oil and coconut flavoring.
- Beat at medium speed 2 minutes.
- Pour into greased and floured 10-1/2 x 15-1/2 x 1 inch baking pan.
- Bake 20 to 25 minutes or until toothpick inserted into center comes out clean.

COCONUT PINEAPPLE CAKE - JASEYSCRAZYDAISY
I found this on Jasey's Crazy Daisy Blog....glad I did. This is a terrific cake that is super moist and doesn't call for vegetable oil but, coconut milk. This stored in the fridge and frosted with the whipped cream frosting lasted a whole week without the frosting separating or becoming soggy. At no point was this a soggy cake. Definately give this one a try!!

- Prepare pans. If using two 9 inch cicle pans grease them, add a layer of traced parchment paper, then grease and flour. If using a 9x13 inch pan, spray the bottom with cooking spray.
- In a large bowl, beat cake mix, eggs, and coconut milk with mixer on low speed for 30 seconds. Beat on medium speed for 2 minutes, scraping occasionally. Stir in coconut and pineapple. Pour into pans.
- Bake as directed per pan size on box. Don't overbake.
- Cool 15 minutes.
- While cake is cooling add enough milk to reserved pineapple juice to make 1 1/2 cups.
- Combine pineapple milk mixture, sugar, and 1/2 cup coconut in a saucepan. Bring to a boil, reduce heat, and simmer for 1 minute.
- Poke holes into cake using a fork, straw, or even a kabob stick.
- Carefully spoon evenly over warm cake allowing liquid to soak into holes.
- Put cake into the fridge to cool completely.
- Frosting:.
- Beat heavy whipping cream, 1/3 cup sugar, and 1/2 teaspoon vanilla until soft peaks form. (If making a layer cake, you may want to beat it just a little extra so that it sticks to the sides of the cake. You can also spread a little of this prepared cream between layers.
- Frost cake with prepared whipped cream. Cover cake with remining coconut.
- Keep and store in refrigerator until ready to serve.
