Sticky, sweet, smoky, and tangy, these chicken wings get their flavor from an easy-to-make Hawaiian marinade. They're grilled until tender and brushed with glaze, and they're as great for a barbecue as they are for game day.

3 pounds (1.4kg) chicken wings
1 cup (240ml) unsweetened pineapple juice
1/2 cup (120ml) soy sauce
1/2 cup (60g) light brown sugar, lightly packed
1/4 cup (2 ounces) homemade chicken stock or low-sodium store-bought broth
1-inch piece ginger root (1/4 ounce; 7g), peeled and finely grated
2 medium cloves garlic, minced
1 teaspoon (5ml) sriracha chili sauce
Thinly sliced scallions (white and light green parts only), for garnish
Grilled pineapple wedges, for serving (optional)

Steps:

  • Place chicken wings in a large zipper-lock freezer bag. Set aside.
  • In a medium bowl, whisk together pineapple juice, soy sauce, light brown sugar, chicken stock, ginger, garlic, and sriracha. Pour half of sauce into bag of chicken, seal bag, and toss to coat. Cover remaining sauce in bowl with plastic wrap and refrigerate. Place bag of chicken in refrigerator and let marinate for at least 1 hour and up to 8 hours.
  • Light 1 chimney full of charcoal. When all charcoal is lit and covered with gray ash, pour out and spread coals evenly over half of coal grate. Alternatively, set half the burners of a gas grill to high heat. Set cooking grate in place, cover grill, and allow to preheat for 5 minutes. Clean and oil grilling grate.
  • Remove wings from marinade, allowing excess to drip off; discard marinade. Place wings on cooler side of grill, cover with vents partially open, and cook, occasionally brushing with reserved sauce and turning wings, until wings are well browned and cooked through, about 30 minutes. Move wings to hot side of grill and cook until browned all over, about 3 minutes per side, brushing often with sauce to build up a nice glaze.
  • Serve chicken wings with thinly sliced scallions and grilled pineapple, if desired.

1 cup Hellmann's mayonnaise
2 teaspoons finely chopped onions
1/4 cup chopped fresh parsley
1/2 cup sour cream
1 teaspoon lemon juice
1 teaspoon white vinegar (red is fine too)
1/2 cup mild blue cheese, crumbled
1 teaspoon minced garlic
25 chicken wings, tips removed, separated at joint (will have 50 pieces)
8 teaspoons melted butter
2 teaspoons vinegar
2/3 cup hot pepper sauce (Like Louisianna Hot Sauce)
cayenne pepper

Steps:

  • Mix all dip ingredients and chill overnight if possible.
  • Spread wings out on a lightly oiled cookie sheet.
  • Mix melted butter, vinegar, and hot pepper sauce.
  • Brush butter mixture onto wings.
  • (Can do this ahead and hold for 2 hours maximum if at room temp).
  • Bake at 400° for 20- 30 minutes, or until wings are cooked through.
  • Baste one time during cooking.
  • Sprinkle cayenne during last 5 minutes of cooking for more heat.
  • Serve hot with dip and celery sticks.

4 cups canola oil for deep frying
3 pounds chicken wings, tips removed and wings cut in half at joint
1 tablespoon garlic salt
1 cup cornstarch
2 eggs, beaten
½ cup cider vinegar
¼ cup pineapple juice
¼ cup ketchup
1 cup honey
1 tablespoon soy sauce
2 tablespoons toasted sesame seeds
2 green onions, thinly sliced

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Heat oil in deep-fryer to 375 degrees F (190 degrees C). Line a baking sheet with aluminum foil, and spray with nonstick cooking spray.
  • Toss chicken wings with garlic salt, and set aside for 10 minutes. Place cornstarch in a large plastic bag; toss the wings, a few at a time until coated. Shake off excess cornstarch, then dip into beaten egg. Shake wings in cornstarch again, then fry until golden brown in deep fryer. Drain on a paper towel-lined plate.
  • Stir together vinegar, pineapple juice, ketchup, honey, and soy sauce in a saucepan over medium-high heat. Once the sauce comes to a simmer, place the chicken wings in a bowl, pour all but 1/2 cup of the sauce overtop, and toss to coat. Reserve remaining sauce to for basting.
  • Place chicken wings on prepared baking sheet. Bake in preheated oven for 30 minutes, then baste with remaining sauce, turn, and bake for an additional 20 minutes.
  • To serve, place wings on serving platter, and sprinkle with sesame seeds and green onions.

⅓ cup white sugar
4 green onions, chopped
3 cloves garlic, minced
2 tablespoons toasted sesame seeds
2 tablespoons rice wine vinegar
1 tablespoon sesame oil

½ lemon, juiced
2 pounds small chicken wings
1 cup all-purpose flour
2 cups coconut oil

Steps:

  • Combine soy sauce, sugar, green onions, garlic, toasted sesame seeds, rice vinegar, sesame oil, red pepper flakes, and lemon juice in a small saucepan. Bring to a boil and continue to boil briefly, 2 to 3 minutes. Reduce heat to low and keep warm.
  • Pat chicken dry. Place flour in a shallow dish; dip chicken wings into flour, coating thoroughly. Shake off excess and set aside on a plate.
  • Heat coconut oil over medium heat in a wok or Dutch oven to 350 degrees F (175 degrees C). Lower 5 to 6 wings one at a time into the hot oil using tongs or a slotted spoon, making sure not to overcrowd or splash hot oil. Cook the wings until browned, crispy, and no longer pink in the centers, 7 to 8 minutes per side.
  • Transfer cooked wings to the saucepan using tongs; coat wings in sauce and let soak for 3 to 4 minutes. Continue working in batches until all chicken is fried and soaked in sauce. Transfer sauced wings to a plate to drain excess. Serve hot or at room temperature.

4 tbsp butter
5 tbsp hot sauce such as Tabasco sauce or Crystal
1 tbsp white wine vinegar
900g/2lb - 1kg/2lb 4oz chicken wings
¼ tsp celery salt (optional)
flour , for dusting
sunflower oil , for frying
celery sticks, to serve
150ml buttermilk
150ml soured cream
85g blue cheese , crumbled
1 garlic clove , crushed
¼ tsp sweet paprika

Steps:

  • Slowly melt the butter, hot sauce and vinegar in a medium saucepan, then pour into a large bowl. Mix all the ingredients for the blue cheese dip together with a pinch of salt. Cover and chill until needed.
  • Trim the end off each chicken wing, then cut each in half through the joint. Tip the wings into a bowl. Add the celery salt (if using), seasoning and enough flour so they're all evenly coated.
  • Heat 4 tbsp oil in a large, deep frying pan and add the wings (do this in 2 batches if your pan isn't big enough). Fry them, stirring frequently, until they are cooked through and browned all over, about 10 mins for each batch. As soon as they are cooked, transfer them to the bowl of butter sauce and stir well. Repeat with the second batch. Serve the wings on a platter with any extra buttery sauce poured over and the blue cheese dip and celery sticks on the side
