Easy Huevos Rancheros image

Cook everything separately and then assemble for a tasty vegetarian breakfast, brunch or even dinner! From Hatch Chile Company.

15 ounces hash brown potatoes, cooked (or substitute pan fried)
1 (14 ounce) can pinto beans, drained and heated
6 eggs, cooked your favorite way
1 (14 ounce) can green enchilada sauce, heated (Hatch Huevos Rancheros Sauce)
1 (4 ounce) can chopped green chilies (for a thicker sauce) (optional)
3 tortillas, heated (I crisped them in the panini maker)
grated cheese (optional)
black olives, chopped (optional)
cooked bacon, chopped (optional)
cooked ham, chopped (optional)
ground pork, cooked and chopped (optional)

Steps:

  • Lay one tortilla on each plate.
  • Spoon on cooked potatoes, then pinto beans. Top with eggs, and then the rancheros sauce.
  • Serve!

6 corn tortillas
3 eggs
1 (15 ounce) can Hatch Green Chile Enchilada Sauce
1 (4 ounce) can Hatch Diced Green Chile
1.5 cups Mexican Blend shredded cheese
1.5 cups Iceberg lettuce, shredded
1 Roma tomato, diced

Steps:

  • In a small sauce pan heat enchilada sauce and diced green chiles over medium high heat for about 3 minutes or until bubbling.
  • Plate one corn tortilla in center of plate and add enchilada sauce mixture, enough to cover tortilla.
  • Sprinkle with cheese and repeat.
  • Place in over on 200 degrees to keep warm and melt cheese.
  • Meanwhile fry egg in non-stick pan, cover with lid to help egg cook evenly.
  • Once you see white over yolk, remove egg and plate.
  • Garnish with lettuce and tomato.
  • Repeat for each plate.
  • Serve immediately.
