EGG AND HASH BROWN TACOS



Egg and Hash Brown Tacos image

2 tablespoons unsalted butter
2 cups frozen shredded hash browns (about 8 ounces)
1/2 small onion, finely chopped
1/2 teaspoon ground cumin
1 15-ounce can black beans, drained and rinsed
1/2 cup prepared salsa
8 large eggs
Kosher salt and freshly ground pepper
1/3 cup shredded monterey jack cheese
8 6-inch flour tortillas, warmed
1 avocado, pitted, peeled and roughly chopped
1/4 cup chopped fresh cilantro

Steps:

  • Heat 1 1/2 tablespoons butter in a large nonstick skillet over medium heat. Add the hash browns and cook, stirring occasionally, until golden brown, about 15 minutes.
  • Meanwhile, heat the remaining 1/2 tablespoon butter in a small saucepan over medium-high heat. Add the onion and cumin and cook, stirring occasionally, until the onion is softened, about 5 minutes. Add the beans and salsa, reduce the heat to low and cook until heated through, about 2 minutes.
  • Lightly beat the eggs in a bowl with 1/2 teaspoon salt, and pepper to taste. Pour into the skillet with the hash browns and cook, stirring, until the eggs are almost set, about 2 minutes. Stir in half of the cheese and cook until the eggs are just set, about 1 more minute. Divide among the tortillas and top with the bean salsa, avocado, cilantro and remaining cheese.

2 slices bacon
1/4 cup plus 1 tablespoon frozen hash browns, thawed
2 medium eggs
1 tablespoon milk
Kosher salt and freshly ground black pepper
2 slices American cheese

Steps:

  • Line a large mug with a few sheets of paper towel. Lay the bacon in the mug, cover with another piece of paper towel and microwave on high power for 1 minute. Using the edges of the paper towel, lift the bacon from the mug and set aside.
  • Scoop the hash browns into the mug, pressing them down and up the sides to form a well. Cover with plastic wrap and microwave on high power for 1 minute.
  • Add the eggs, milk and a pinch of salt and pepper to the mug and whisk together, leaving the hash browns in place. Tear the bacon and cheese into bite-size pieces and drop them into the egg mixture. Microwave on high power for 2 minutes, pausing after 1 minute to give the mixture a quick stir.

10 cups large chunks of peeled potatoes
8 slices bacon
3 large onions, sliced
1 ½ teaspoons salt

Steps:

  • Place potatoes in large pot. Fill the pot with cold water until it is half an inch above the top of the potatoes. Add the salt to the water and stir briefly to dissolve. Bring water to a boil and cook until tender, about 15 to 20 minutes. Drain and set aside to cool.
  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Remove bacon, drain, cool and crumble. Leave bacon fat in skillet and return to stove.
  • Add potato chunks, onion and crumbled bacon to skillet. Cook over medium high heat until potatoes begin to brown and onions are translucent, about 25 minutes.

5-Ingredient Fix Contest Entry. This is a fun and easy brunch recipe. I have made it using various varieties of Simply Potatoes and they have all turned out excellent. When all our family can be together we especially enjoy sharing a brunch meal together. The combination of the oven roasted potatoes, the baked avocado and eggs with a sprinkling of pepper jack cheese adds a flavorful Mexican twist to this fun brunch meal. I always offer small bowls of salsa, sour cream and fresh cilantro as garnishes. I hope you enjoy it as much as we do.

Number Of Ingredients 5

3 tablespoons olive oil, divided
1 (20 ounce) bag Simply Potatoes® Shredded Hash Browns
3 ripe avocados, peeled, halved, pit removed
6 eggs
8 ounces monterey jack pepper cheese, grated

Steps:

  • Preheat oven to 425 degrees. Pour 1 TBSP olive oil into an 9 inch round pan.
  • Place the Simply Potatoes hash browns into the pan; drizzle the remaining 2 TBSP oil over the potatoes.
  • Bake for 20 minutes. Remove from oven, Using the back of a large spoon, make 6 wells into the potatoes. Place the avocado halves, cut side up, on top of the potatoes.
  • Break an egg into the indented area where the avocado pits were. Sprinkle with pepper jack cheese.
  • Return the pan to the oven and bake for an additional 15 minutes, or until the egg is set.
  • Remove from the oven.
  • To serve: Scoop out a portion of the roasted potatoes and avocado baked egg onto 8 serving dishes. If desired offer small bowls of salsa and sour cream to accompany the dish.

  • Spread hash browns out on prepared sheet pan. Drizzle melted butter over top and stir gently. Season with some salt and pepper (see note).
  • Transfer pan to the oven and bake until hash browns are golden brown, 35 to 40 minutes. Halfway through cooking, remove the pan from the oven and gently turn the hash browns with a spatula so that the crispy edges are rotated to the center and the center potatoes are moved to the outside of the pan. (The edges will get golden brown and crisp, so you want to give most of the potatoes a “turn” to cook on the outside of the pan.)
