This cozy fall salad combines baby kale, roasted kabocha squash, dried cranberries, pumpkin seeds and feta all tossed in a tangy apple cider vinegar dressing.

4 cups baby kale ()
½ medium kabocha squash
1 teaspoon olive oil
2 Tablespoons dried cranberries
¼ cup pumpkin spiced pepitas
¼ cup crumbled feta
2 Tablespoons apple cider vinegar
1 Tablespoon fresh orange juice
¼ cup olive oil
1 teaspoon Dijon mustard
1 tablespoon garlic (minced)
¼ teaspoon cinnamon
½ teaspoon sea salt (more if needed)
¼ teaspoon freshly ground black pepper (more if needed)

Steps:

  • Preheat oven to 375°. Wash the outside of the kabocha squash with warm water. Cut the squash in half and scoop out all the seeds. Cut the squash into 1-inch semicircles. Toss the squash pieces with oil, sprinkle with sea salt and spread on a roasting pan.
  • Roast the squash for 15 minutes, remove from oven to toss, then roast for another 10-15 minutes, or until tender and golden.
  • While squash is roasting, prepare the dressing by placing all ingredients except the olive oil in a small bowl. Whisk until combined, then slowly whisk in the olive oil. Set aside.
  • To prepare the salads, place a portion of the kale on a plate, top with a portion of cranberries, pepitas and feta. Add the roasted kabocha slices, drizzle with desired amount of dressing and serve.

1 tablespoon Dijon mustard
2 tablespoons white wine vinegar
1/4 teaspoon kosher salt
1/4 teaspoon fresh ground black pepper
6 tablespoons olive oil
1 lb mixed greens
1/2 cup crumbled blue cheese
1/3 cup walnut pieces
1/2 cup dried cranberries
1 cup peeled and diced pear

Steps:

  • Whisk all dressing ingredient together in a nonreactive mixing bowl.
  • Evenly divide mixed greens in bowls and top with bleu cheese, walnuts, dried cranberries, and pears.
  • Top with whisked dressing.

1 cup sweetened dried cranberries (such as Craisins®)

1 teaspoon ground cinnamon
½ teaspoon ground nutmeg

Steps:

  • Coat pears and apples in lemon juice.
  • Mix dried cranberries, walnuts, granola, brown sugar, cinnamon, and nutmeg together in a large bowl. Toss pears and apples into the mixture.

1 avocado - peeled, pitted and diced

2 tablespoons red raspberry jam (with seeds)
2 tablespoons red wine vinegar
⅓ cup walnut oil

1 acorn squash
2 tablespoons extra virgin olive oil
½ teaspoon kosher salt
¼ teaspoon ground black pepper
½ teaspoon freshly grated nutmeg
2 teaspoons fresh thyme leaf
1 small head radicchio
1 bosc pear
4 cups fresh baby spinach
¼ cup dried cranberries
½ cup pecan, toasted and roughly chopped
¼ cup crumbled blue cheese
¼ cup pure maple syrup
¼ cup apple cider vinegar
1 ½ teaspoons dijon mustard
¼ cup extra virgin olive oil
1 teaspoon kosher salt
½ teaspoon ground black pepper

Steps:

  • Preheat the oven to 400°F (200°C).
  • Trim the ends off the squash, then cut in half. Scoop out the seeds, then slice into ½-inch (1 ¼ cm) cubes.
  • Spread the squash on a baking sheet, then add the olive oil, salt, pepper, nutmeg, and thyme and toss to coat.
  • Roast for 20 minutes, until tender and lightly browned. Remove from the oven and let cool completely.
  • Meanwhile, prepare the rest of the salad: Cut the head of radicchio in half, remove the core, then thinly slice.
  • Cut the pear in half, scoop out the core, then thinly slice.
  • Make the dressing: In a small bowl, whisk together the maple syrup, apple cider vinegar, and mustard. While whisking, slowly drizzle in the olive oil and continue whisking until emulsified. Whisk in the salt and pepper, then set aside.
  • In a large bowl, combine the radicchio, spinach, pear, dried cranberries, and cooled roasted squash. Drizzle some of the dressing over the salad and toss well to coat.
  • Divide the salad between serving plates, then top with the chopped toasted pecans and crumbled blue cheese. Serve immediately with the remaining dressing alongside.

1 cup pecan halves
1 tablespoon sugar

Steps:

  • In a bowl, combine the vinegar, oil, chives, sugar, salt and cayenne; whisk in cream until well combined. Set aside., In a small skillet, melt butter over medium heat; stir in pecans and sugar. Cook and stir until pecans are toasted and coated with sugar. Remove pecans to paper towels to drain and cool., In a large bowl, combine the pear slices, lettuce, pecans and 1/3 cup vinaigrette and toss to coat.

  • Pre-heat oven to 425 degrees F. Peel butternut squash, but it in half, scoop out all the seeds and dice into bite size pieces. On a large sheet pan, toss together butternut squash, olive oil and salt. Roast squash until fork tender, 30-40 minutes.
  • Add all dressing ingredients to a small bowl, or jar, and mix until combined. You may need to add extra water/oil depending on the consistency of your tahini. The brand I buy is pretty liquidy. Add chopped kale to a large bowl and drizzle on about 1 tablespoon of the dressing. Use your hands to massage the dressing into the kale for about 30 seconds.
  • Next, add the roasted butternut squash and remaining ingredients and mix until combined. Top with fresh parsley, if desired and drizzle on desired amount of salad dressing for your individual serving.
