"HARVEST" - BUTTERNUT SQUASH BREAD
I fell in love with this recipe a number of years ago. Its quite verstatile and you can also use "Sweet Potato, Acorn Squash, and Pumpkin." Enjoy! :)

Steps:
- 1. In a small bowl, dissolve yeast in water. Microwave Butternut Squash until cooked and soft inside. Cut it in 1/2, take out seeds, and squash flesh. In a mixing bowl, combine butternut squash, milk, butter, 1 egg, brown sugar, and salt. Mix well.
- 2. Add yeast mixture and 1-1/2 C Flour. Mix well. Add remaining flour to make a soft dough, if dough is sticky can up to another 1/2 C flour.
- 3. Turn dough onto floured surface, knead until smooth and elastic, about 6 to 8 minutes. Placed in grease bowl, turning once to grease top. Cover and let rise for about 1 hour in warm place, until double.
- 4. Punch dough down. Place on geased sheet or baking stone or bread pan. Let bread rise one more time to almost double, about 30 minutes. I like to either bake in round ball or as a "Braid." *See Baker's Tip. for details.
- 5. Combine "Glaze" ingredients - Egg & water, brush over bread or braid. Bake at 350 F for 20 to 25 minutes or until golden brown. Remove from pan and cool on a wire rack. Makes 1 Loaf.
- 6. BAKER'S TIP: To make a "Braid", divide the dough into 1/3 each, roll each 1/3 into a 18-inch rope. Braid 3 ropes together, pinch ends.
- 7. BAKER'S TIP: If you don't want to all the mixing by hand, I have used my dough hook on my mixer or a bread machine too! :) Bon Appetite!

- Preheat oven to 350°F (175°C). Grease and flour one 8.5 x 4.5 x 2.5 inch loaf pan.
- In a large bowl, mix together the butternut squash puree, eggs, oil, water and sugars until thoroughly combined. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg and cardamom.
- Stir the dry ingredients into the butternut squash mixture. Combine just until incorporated; do not over mix. Pour into the prepared pan.
- Bake for 55-65 minutes or until a wooden skewer inserted into the center of the loaf comes out clean.

GOLDEN HARVEST BREAD (BREAD MACHINE)
This lovely golden Savory bread is made using Pumpkin but butternut, sweet potato, or any hard cooked squash can be used. Canned or fresh cooked. It's very lightly flavored with cinnamon and ginger. Receiving it's beautiful golden color from the squash, the saffron and turmeric. You can use saffron and or turmeric.

Steps:
- Place the water and squash into the bread machine bowl following with the rest of the ingredients being sure to keep the salt sugar and yeast in separate corners.
- Set bread machine to dough cycle. Press start. At the dried fruit cycle, the machine will beep you can add optional seeds.
- When cycle is done remove to floured surface punch down and shape into a round mound then gently press the center in . Cover with oiled plastic wrap and let rise 45 minutes. Preheat oven to 350 degrees.
- Mix egg and turmeric together.
- Remove wrap. Slash along sides of bread up and down to form the look of a pumpkin. Brush with glaze. Place in preheat oven for 35-40 minutes.

BUTTERNUT AND APPLE HARVEST SOUP
My friend Diana generously shared her wonderful Fall themed soup recipe. The medley of Autumn vegetables combine to make a wonderfully warm and comforting soup. Pair this with crusty bread and a salad, and dinner is served!

Steps:
- Melt butter in a large pot over medium heat. Stir in leeks and onions, and cook until the onion softens and turns translucent, about 5 minutes. Add potato, squash, carrots, apple, and chicken stock. Bring to a boil, then reduce heat to medium-low, cover, and simmer until the vegetables are soft, about 20 minutes.
- Carefully puree the soup in batches in a blender, or use a stick blender to puree the soup right in the pot. Once the soup has been pureed, return it to the pot and stir in wine and cream. Season with nutmeg, salt, and pepper; simmer gently for 5 minutes. Ladle into bowls and garnish with chopped chives.

FALL HARVEST BUTTERNUT SQUASH/PUMPKIN BARS-NO FAT, SUGAR-FREE
This is adaption that I came up with from Recipe #232072 that is no fat and sugar free for dietary reasons. It is chock full of flavor, moist and very healthy!! You can also add to it to suit you. It is lower also in calories!! My six year old even loves it and have requested it already!! I have added to the baseline of this recipe and she did not even know she was eating Squash nor how healthy it was-she thought it was the real deal!! In my version, vanilla extract was added and pumpkin pie spice. For a real kick, I added two handfuls of coconut, 1/2 cup of macadamia nuts, coconut extract and Da'Vinci Sugar Free Caramel Syrup with Fat Free Cream Cheese frosting with Sugar Free Caramel Syrup!! You can also use any Squash or Pumpkin..be creative..but if you add more ingredients, remember it adds more calories!! Prep time not included for pureed squash although you can use baby food squash-its the something but fresher is better! Enjoy-we do..very delish and Yummy too! Update: If you are going to use just Squash, because of higher water content, OMIT the APPLESAUCE and INCREASE FLOUR TO 3 Cups.. I found this out the hard way. Also, don't use metal pan if you can help it..don't worry squash does turn color the next day. Must be refrigerated as well after you are done with it..

- Preheat oven to 350°F.
- Grease or spray baking non-stick spray 15x10x1 pan and set aside.
- In a small bowl, combine dry ingredients and set aside.
- In a medium bowl, whisk or mix with electric mixer on low sugar, applesauce, egg whites, squash and extract until throughly blended.
- Add a at a time flour mixture to the squash mixture until fully blended with whisk or low on electric mixture until it is cake batter.

HARVEST BUTTERNUT SQUASH SOUP
Easy, low-fat, low-carb delicious comfort food. Modified version of a recipe from the Knoxville News-Sentinel.

Steps:
- Preheat oven to 350 degrees.
- Cut squash in half lengthwise and scoop out seeds and pulp.
- Pour 2 cups water into baking dish, and place squash halves into water, cut side down.
- Bake for 1 hour or until tender.
- Set aside to cool.
- When squash is cool, cook diced onions in butter over medium heat in large saucepan until onions are softened.
- Add chicken broth and simmer for 10 minutes.
- Scoop out squash flesh from the skin, and add to onion/broth mixture.
- Puree in batches in food processor or blender till smooth.
- Return soup to saucepan; cook over medium heat until hot.
- Add milk, salt and pepper to taste.
