HARLEY-DAVIDSON CAFE HOMESTYLE MEATLOAF
This comes from the Harley-Davidson Cafe in New York, which apparently is no longer in business. However, the Las Vegas Harley-Davidson Cafe may still serve it. The portions in the recipe would have to be adjusted unless you are freezing some or serving for a good size dinner party.

Steps:
- Preheat oven to 450 degrees.
- Cook bacon in frying pan, remove, drain and chop.
- Leave drippings in pan and saute (but do not brown) onion and celery.
- Add pepper, onion powder, thyme, salt, mustard, paprika and garlic powder.
- Cook for 10 minutes.
- Remove pan from heat and add tomato juice and evaporated milk.
- Mix bread crumbs with eggs and add to meat.
- Add spice mixture and bacon to meat mixture and mix gently.
- Place mixture in two or three 8 x 4 inch individual loaf pans.
- Cook until done, about 40 to 50 minutes, or until internal temperature reaches 160 degrees on a meat thermometer.

- Combine kosher salt, black pepper and paprika. Coat pork butt evenly with mixture, shaking off any excess. Soak 2 cups hickory wood chips and
- 1 cup apple wood chips in water 30 minutes.
- Place pork butt in smoker on rack at 220 degrees F for 8 hours, with smoke going for 2 hours. Let cool slightly. Break meat apart with hands.
- Saute onions in oil in heavy saucepan until translucent. Add spices and cook until fragrant. Add remaining ingredients and cook until mixture is thick and coats back of spoon. Puree sauce and let cool. (Sauce can be made 2 to 3 days in advance and refrigerated.).
- Combine pork and sauce (to taste) in heavy saucepan. Cook until heated through. Pile pork on roll.

HOMESTYLE MEATLOAF
I got this recipe out of the Fannie Farmer Boston Cooking School cookbook. It is now my only meatloaf recipe and my family is constantly requesting it. I did change slightly and you can change the ketchup and water to just water or just milk. The Parmesan cheese can be omitted as well. If you prefer you can use any other type of ground beef. And the original recipe called for bacon placed on top.

- Preheat oven to 350.
- Mix all ingredients together using hands or potato masher.
- If you prefer more seasoning you can add whatever you prefer.
- Pat into a greased loaf pan.
- Bake one hour at 350.
